Phospholipid packing defects and oxysterols in atherosclerosis: Dietary prevention and the French paradox.

The research literature on atherosclerosis includes findings investigating the atherosclerotic effect of oxysterols, which are the oxidation products of cholesterol; and the literature on oxysterols refers to mechanisms by which oxysterols cause phospholipid packing defects in cell membranes. This review synthesizes these two bodies of research findings to describe how oxysterols cause phospholipid packing defects within the membranes of vascular endothelial cells, potentially increasing cell permeability of low-density lipoprotein cholesterol which may lead to atheroma formation. Exogenous so

Two rare cases of Diphyllobothrium latum parvum type infection in Korea.

Two rare cases of human infection with parvum (dwarf) type of Diphyllobothrium latum [syn. D. parvum (Stephens, 1908)], were discovered in Korea. The first case was a 46-year old housewife, from whom a kind of pseudophyllidean tapeworm eggs was detected in the feces. She was treated with praziquantel and purged, and a complete strobila with scolex, 120 cm in total length, was recovered. She recalled that she had eaten raw trouts at a raw-fish restaurant near the Chungju Lake. Another patient was a 22-year old medical student (male), who used to eat raw sea-foods. He discovered a chain of tapew

Comparative genomics reveals avian Acinetobacter baumannii as antimicrobial resistance reservoirs and bovine strains with elevated pathogenicity.

Multidrug-resistant Acinetobacter baumannii is primarily known as an opportunistic nosocomial pathogen but is increasingly recognized as an emerging contaminant in foods of animal origin. In the present study, we characterized the A. baumannii strains from raw meat samples and undertook a comparative genomic analysis to explore the resistome, virulome, mobilome (integrons and transposons) and pathogenic potential of the A. baumannii strains from food animals and animal origin foods. Avian strains of A. baumannii were found to carry a significantly higher number of antimicrobial resistance gene

[Skin test (Skin Prick Test) in food allergy].

Skin tests, also known as prick tests, in food allergies are restricted to IgE-mediated food allergies, with results that barely indicate sensitization to a certain food and do not necessarily suggest food allergy. The clinical context of the patient is the decisive point before performing any type of food allergy skin test; Contextualizing and relating the patient's clinical picture with the immunological mechanism of IgE-mediated allergies will allow a better selection of the allergy test for each case. Positive tests should be interpreted more carefully, and consider that during early child

Hazard and control of group II (non-proteolytic) Clostridium botulinum in modern food processing.

Group II (non-proteolytic) Clostridium botulinum poses a safety hazard in modern food processing, which consists of mild pasteurization treatments, anaerobic packaging, extended shelf lives and chilled storage. The high risk is reflected in the relatively large number of botulism cases due to group II C. botulinum in commercially produced foods during the past decades. Because of the high prevalence of group II C. botulinum in the environment, food raw materials may carry spores. Although group II spores are less heat-resistant than group I (proteolytic) spores, they can tolerate the heat trea

Other food borne infections.

This article presents an update of several emerging or reemerging pathogens: Yersinia, Cryptosporidia, Cyclospora, Brucella, and Mycobacterium. All of these zoonotic pathogens show evidence of food borne transmission. Yersiniosis is presented as an emerging pathogen that has as its major route of transmission preparation and consumption of pork products. New evidence is presented that supports the transmission of brucellosis via the food chain, especially through contaminated raw milk and cheese. While TB has limited transmission via raw milk, it is highlighted as a reemerging infection due to

Dogs as a source of Salmonella spp. in apparently healthy dogs in the Valencia Region. Could it be related with intestinal lactic acid bacteria?

BACKGROUND: Although salmonellosis is considered one of the most important food-borne zoonotic diseases in Europe, close contact between dogs and their owners can also be a potential source of Salmonella spp. for humans. This study assessed the prevalence and antimicrobial resistance of Salmonella spp. in apparently healthy dogs in the Valencian Region, eastern Spain. Moreover, a macroscopic comparison of lactic acid bacteria in both Salmonella-positive and Salmonella-negative dogs was carried out. RESULTS: Of a total of 325 dogs sampled, 6 (1.85%) were positive for Salmonella spp. with 3 dif

A Case Series of Four Dogs Presenting with Neurological Deficits Due to Suspected Nutritional Secondary Hyperparathyroidism after Being Fed an Exclusive Diet of Raw Meat.

Nutritional secondary hyperparathyroidism (NSH) in dogs is a condition that develops in response to a vitamin D deficiency or an imbalanced calcium-to-phosphorus ratio in dog food. Puppies of large-breed dogs exclusively fed a non-supplemented, boneless raw meat diet are especially susceptible to developing NSH due to their elevated calcium requirement. Reports on NSH in companion animals have been sparse in the last decades due to dog owners having easy access to commercially balanced dog foods. However, with the rising popularity of meat-based raw feeding, this condition has re-emerged. In t

Tolerance induction for food allergy using immunoglobulin/histamine complex: A case report.

Food allergy is defined as an immune-mediated adverse reaction to dietary proteins and is a major health problem with an increasing prevalence. Immunoglobulin/histamine complex (IHC) is an anti-allergy therapeutic that acts primarily by reducing histamine levels (histaminopexy). A 5-year-old male Korean patient with a food allergy was transferred for immunotherapy. Open food challenge (OFC) for wheat before treatment revealed positive reactions after challenge with 0.5g of wheat. Under a diagnosis of food allergy for wheat, allergic rhinitis, and atopic dermatitis, treatment with HistobulinTM

Analysis of the zoonotic tick-borne encephalitis virus (TBEV) in raw milk and dairy products in mountain pastures of the Lombardy region, Italy.

Over the last few decades, tick-borne encephalitis (TBE) has become a growing public health problem in Europe. The tick-borne encephalitis virus (TBEV) is a zoonotic virus that affects the central nervous system (CNS). TBEV has been detected in 27 European countries, and the rise in TBE cases is mainly due to environmental and ecological factors, and factors that increase the risk of human exposure to infected ticks. The infection via the alimentary route is the second most common means of TBEV transmission to humans. Raw milk from infected goats, sheep, or cows has been identified as a source

Toxoplasma gondii Antibodies in Raw Milk and Sera of Cows in China.

Toxoplasma gondii is a worldwide food-borne protozoa that has harmful influences on animal and human health. Raw milk containing T. gondii has been considered as one of the possible infectious sources for humans. Although China is one of the world's leading milk consumers, there is still no study to investigate the seroprevalence of T. gondii in raw cow milk in China; especially for cows in rural areas. Thus, we conducted this study to examine the specific anti-T. gondii IgG-antibody in the raw milk and sera of domestic cows in China. In total, 894 cows were randomly selected from rural areas

Mathematical model of Listeria monocytogenes cross-contamination in a fish processing plant.

Listeriosis is a foodborne disease caused by the bacterium Listeria monocytogenes. The food industry and government agencies devote considerable resources to reducing contamination of ready-to-eat foods with L. monocytogenes. Because inactivation treatments can effectively eliminate L. monocytogenes present on raw materials, postprocessing cross-contamination from the processing plant environment appears to be responsible for most L. monocytogenes food contamination events. An improved understanding of cross-contamination pathways is critical to preventing L. monocytogenes contamination. There

Identification of patatin as a novel allergen for children with positive skin prick test responses to raw potato.

BACKGROUND: Peeling of raw potatoes may cause allergic symptoms, such as sneezing, wheezing, and contact urticaria, for adults. For children, potatoes as food may cause various allergic reactions. However, the identity and molecular structure of the putative allergens in potato have remained unknown. OBJECTIVE: The aim of our study was to identify possible major allergens in potato by using sera of atopic children suspected of having food allergy and having positive skin prick test responses to raw potato. METHODS: Potato proteins were purified by standard methods of protein chemistry and ch

Recovery of Anisakid larvae by means of chloro-peptic digestion and proposal of the method for the official control.

Anisakidae larvae belonging to the genera Anisakis and Pseudoterranova, are the most responsible for zoonosis transmitted by fish products (anisakidosis). Acquired by the consumption of raw or undercooked marine fish or squid, the anisakid larvae may cause pathogenic diseases like gastric or intestinal anisakiasis and gastro-allergic disorders. In accordance with current EU legislation, the fresh fish products must be inspected visually in order to detect the possible presence of visible parasites. It is recognized that the visual method is not accurate enough to detect the larvae of parasites

Biocontrol Validation of a Strictly Lytic Phage A511 and a Commercial Phage PGL Shows Reduction of Listeria monocytogenes in Raw Scottish Salmon Fillet Postharvest.

INTRODUCTION: Listeria monocytogenes is a known food-borne risk associated with ready-to-eat (RTE) foods, including fish. An estimated 90% of cases of invasive human listeriosis result from ingestion of foods containing >2.0 × 103 CFU/g, with growth after purchase being a significant factor. This study aimed to evaluate the biological characteristics, lytic spectra, and determine the biocontrol potential of a strictly lytic L. monocytogenes bacteriophage A511 in comparison with a commercial phage PGL (P100) on raw Scottish salmon fillets. METHODOLOGY: The lytic spectra of phage A511 and the c
