Rapid qualitative identification and quantitative detection of three common spice extracts based on SERS technology.

In the quality control of braised meat products, the content of spice extract in braised soup is often used as one of the important indexes to evaluate its flavor and quality. However, the existing research methods mostly rely on chromatography-mass spectrometry for quantitative analysis, which has some problems such as complex operation, long period, high requirements for equipment and professional technology. To enable rapid detection of spice extracts while reducing analytical costs and improving efficiency, this study took the main extracts of star anise, Sichuan pepper and chili peppers,

Inhibition of the multidrug efflux pump LmrS from Staphylococcus aureus by cumin spice Cuminum cyminum.

Staphylococcus aureus is a serious causative agent of infectious disease. Multidrug-resistant strains like methicillin-resistant S. aureus compromise treatment efficacy, causing significant morbidity and mortality. Active efflux represents a major antimicrobial resistance mechanism. The proton-driven multidrug efflux pump, LmrS, actively exports structurally distinct antimicrobials. To circumvent resistance and restore clinical efficacy of antibiotics, efflux pump inhibitors are necessary, and natural edible spices like cumin are potential candidates. The mode of cumin antibacterial action and

The effect of visitor number and spice provisioning in pacing expression by jaguars evaluated through a case study.

Captive animals exhibit stereotypic pacing in response to multiple causes, including the inability to escape from human contact. Environmental enrichment techniques can minimize pacing expression. By using an individual-based approach, we addressed whether the amount of time two males and a female jaguar (Panthera onca) devote to pacing varied with the number of visitors and tested the effectiveness of cinnamon and black pepper in reducing pacing. The amount of time that all jaguars engaged in pacing increased significantly with the number of visitors. Despite the difference between the males

Hunger is the best spice: effects of starvation in the antennal responses of the blood-sucking bug Rhodnius prolixus.

Blood-sucking insects strongly rely on olfactory cues to find their vertebrate hosts. As in other insects with different lifestyles, it has been shown that endogenous and exogenous factors modulate olfactory responses. The triatomine bug Rhodnius prolixus is an important vector of Chagas disease and a classical model for studies of physiology and behavior. In this species, the behavioral response to host-derived odorants is modulated by both the time of the day and the starvation. Here I investigated the peripheral neural mechanisms underlying these modulatory effects. For this, I measured the

Mechanisms of Change Within a Short Psychological Intervention for Children With Eating Disorders (SPICE): A Qualitative Study.

OBJECTIVE: Increasing numbers of young people (YP) are seeking support for eating disorders, creating a growing unmet need for timely and accessible treatment. While guided self-help (GSH) interventions have demonstrated effectiveness for other youth mental health difficulties, options for eating disorders remain limited. SPICE (Short Psychological Intervention for Children with Eating Disorders), a transdiagnostic CBT-based GSH program, was developed to address this gap. This qualitative study explored participant perspectives on the mechanisms through which SPICE may support recovery. METHO

Unraveling the molecular mechanisms of spice-meat interactions: current trends and novel insights for flavor regulation.

Flavor is a critical determinant of consumer acceptance in spice-meat products (SMPs). As natural plant resources, spices are rich in volatile flavor compounds that can effectively impart aroma, eliminate odors, enhance umami, and contribute to the formation of complex flavor profiles. However, the molecular mechanisms by which spices modulate the flavor of meat products remain unclear, limiting the application of regulatory strategies. Therefore, elucidating SMPs mechanisms is crucial for improving sensory quality, optimizing processing methods, and meeting consumer demands. Based on the stru

Discrimination of the commercial spice "Green Pepper" (Zanthoxylum) using integrated morphological, genetic, and volatilomic approaches.

The integrity of the global spice trade is contingent upon accurate species authentication. "Green Pepper", a high-value spice derived from Zanthoxylum plants, faces severe misidentification in China due to shared vernacular names, primarily between Zanthoxylum armatum and Zanthoxylum schinifolium. This confusion jeopardizes product quality, consumer trust, and the reliability of scientific research. To address this, we employed an integrated strategy that combined field surveys (34 plantations), an audit of cultivated varieties (20 geographical indication and 17 common cultivars), a nomenclat

Spice-induced quality enhancement in rabbit meat: A study based on data mining and analytical characterization.

This study investigates the impact of seven spices-ginger, garlic, Welsh onion, prickly ash, black pepper, star anise, and chili-on rabbit meat quality, focusing on sensory attributes, oxidative stability, and nutritional value. Using advanced techniques such as HS-SPME-GC-MS, E-tongue, E-nose, and GC-FID, we found that spices significantly enhanced flavor complexity, tenderness, juiciness, and oxidative stability compared to the control group (CG) (P < 0.05). Notably, garlic, star anise, and black pepper improved aroma intensity and overall acceptability, while ginger and prickly ash reduced

Allium sativum, Rosmarinus officinalis, and Salvia officinalis Essential Oils: A Spiced Shield against Blowflies.

Blowflies are known vectors of many foodborne pathogens and unintentional human ingestion of maggots by meat consumption may lead to intestinal myiasis. In fact, the control of insect pests is an important aspect of industrial and home-made food processing and blowflies (Diptera: Calliphoridae), which are among the most important pests involved in the damage of meat products. Most spices, largely used in food preparations and industry, contain essential oils that are toxic and repellent against insects and exert antimicrobial activity. In this study, we assessed the electro-antennographic resp

Spice oil cinnamaldehyde exhibits potent anticandidal activity against fluconazole resistant clinical isolates.

Fluconazole resistance is becoming an important clinical concern. We studied the in vitro effects of cinnamaldehyde against 18 fluconazole-resistant Candida isolates. MIC(90) of cinnamaldehyde against different Candida isolates ranged 100-500 μg/ml. Growth and sensitivity of the organisms were significantly affected by cinnamaldehyde at different concentrations. The rapid irreversible action of this compound on fungal cells suggested membrane-located targets for its action. Insight studies to mechanism suggested that cinnamaldehyde exerts its antifungal activity by targeting sterol biosynthesi

Intrinsic and extrinsic factors influencing Bacillus cereus spore inactivation in spices and herbs: Thermal and non-thermal sterilization approaches.

The presence of Bacillus cereus in spices and herbs has posed a detrimental effect on food safety. The absence of thorough testing, comprehensive reporting, and vigilant surveillance of the illness has resulted in a significant underestimation of the true prevalence of foodborne illness caused by B. cereus. B. cereus spores are resistant to thermal processing (superheated steam, microwave, radiofrequency, infrared) that remains a significant challenge for the spice industry. Non-thermal techniques, such as cold plasma, gamma irradiation, and electron beam irradiation, have gained significant i
