A moderately low phosphate intake may provide health benefits analogous to those conferred by UV light - a further advantage of vegan diets.

Although exposure to ultraviolet light is often viewed as pathogenic owing to its role in the genesis of skin cancer and skin aging, there is growing epidemiological evidence that such exposure may decrease risk for a number of more serious cancers, may have a favorable impact on blood pressure and vascular health, and may help to prevent certain autoimmune disorders - in addition to its well-known influence on bone density. Most likely, these health benefits are reflective of improved vitamin D status. Increased synthesis or intake of vitamin D can be expected to down-regulate parathyroid hor

Upregulation of lymphocyte apoptosis as a strategy for preventing and treating autoimmune disorders: a role for whole-food vegan diets, fish oil and dopamine agonists.

Induced apoptosis of autoreactive T-lymphocyte precursors in the thymus is crucial for the prevention of autoimmune disorders. IGF-I and prolactin, which are lymphocyte growth factors, may have the potential to suppress apoptosis in thymocytes and thus encourage autoimmunity; conversely, dietary fish oil rich in omega-3 fats appears to upregulate apoptosis in lymphocytes. Since whole-food vegan diets may downregulate systemic IGF-I activity, it is proposed that such a diet, in conjunction with fish oil supplementation and treatment with dopamine agonists capable of suppressing prolactin secret

Potato Protein-Based Vegan Burgers Enriched with Different Sources of Iron and Fiber: Nutrition, Sensory Characteristics, and Antioxidants before and after In Vitro Digestion.

The aim of this research was to develop a technology for the production of plant-based burgers (PBBs) based on potato protein, also containing high content of iron and appropriately selected fats. The produced PBBs were characterized in terms of their nutritional and bioactive properties both before and after the in vitro digestion process. It was found that the produced burger was characterized by high protein content, ranging from 20.80 to 22.16 g/100 g. It was also shown to have a high dietary fiber content, ranging from 8.35 to 9.20 g/100 g. The main fraction of dietary fiber in the tested

Horizontal hostility among non-meat eaters.

The present study examined intergroup judgments made between four groups of non-meat eaters: health vegetarians; ethical vegetarians; health vegans, and ethical vegans. Consistent with hypotheses based on horizontal hostility and the need to maintain ingroup distinctiveness, ethical vegetarians gave unfavorable evaluations to health vegetarians relative to vegans, especially when the mainstream omnivore group was made salient. Contrary to expectations, vegans gave relatively more favorable evaluations to ethical vegetarians than health vegetarians when mainstream salience was low. This was esp

Oat-Based Vegan Yogurt Alternatives Enriched with Mung Bean and Black Bean Protein Isolates: Nutritional and In Silico Potential Bioactive Peptide Estimation.

Although the development of fermented plant-based milk alternatives has become quite popular, the relatively low nutritional value and functional properties of these products present significant challenges. This situation is driving the search for alternative protein sources to improve the quality of plant-based products, and legume proteins are attracting attention as promising components. Accordingly, this study aimed to enrich oat-based vegan yogurt alternatives with different legume protein isolates and evaluate their effects on product quality. In the present study, physicochemical, micro

Nutritional availability and carbon footprints of omnivorous, vegetarian and vegan diets: A cross-sectional analysis of dietary data for UK children aged 2-12.

As plant-based (PB) diets become more common among UK children, understanding their nutritional adequacy and environmental impact is vital. This study addresses that lack of understanding through assessment of the nutrient content and greenhouse gas emissions for omnivorous, vegetarian, and vegan diets. A cross-sectional analysis was conducted using three-day weighed food diaries from 39 UK children aged 2-12 years (omnivore n = 15; and PB: vegetarian n = 11; vegan n = 13). Nutrients were analysed with and without supplementation using Nutritics software. GHG emissions were calculated at the i

A Prospective, Multi-Center Study to Evaluate the Safety and Efficacy of a Vegan Nutraceutical to Improve Hair Growth and Quality in Females Following a Plant-Based Diet.

Hair thinning affects upwards of 50% of women by age 50, impacting their social-emotional wellbeing. It is a condition now thought to be driven by a multi-factorial etiology, including diet and nutrition. Women following vegan, vegetarian, or other plant-based diets have specific needs for nutrients traditionally sourced from animals, which could affect hair health. To support hair growth and quality in women following a plant-based diet, a novel vegan nutraceutical (Nutrafol Women's Vegan Capsules, Nutraceutical Wellness, Inc., New York, NY) was evaluated for its ability to support hair

Dietary Acid Load Across Vegans, Lacto-Ovo-Vegetarians, Fish-Eaters, and Meat-Eaters, and Its Association with Body Mass Index: A Secondary Analysis from an Italian Survey (The INVITA Study).

Diet represents a key determinant of the body's acid-base balance because foods are metabolized into non-volatile acids or bases. An increase in dietary acid load can elicit low-grade metabolic acidosis, which has been associated with systemic inflammation and the risk of adverse cardiometabolic conditions, including obesity. Potential renal acid load (PRAL) and Net Endogenous Acid Production (NEAP) represent the major markers of dietary acid load. The aim of this secondary analysis was to compare the acid load of four different diets and investigate its association with Body Mass Index (BMI)

Knowledge, Attitudes and Application of Critical Nutrient Supplementation in Vegan Diets among Healthcare Professionals-Survey Results from a Medical Congress on Plant-Based Nutrition.

Plant-based diets are associated with numerous health benefits but also bear risks of micronutrient deficiencies if inadequately planned. The risk of nutrient deficiencies can be reliably reduced by supplementation but requires risk-awareness. We distributed a paper-and-pencil questionnaire to n = 902 healthcare professionals attending a congress on plant-based nutrition (VegMed 2018, Berlin). On the day of the survey (21 April 2018), n = 475 questionnaires were returned and analyzed descriptively. Of the n = 213 strict vegan participants, 2% (n = 5) took no supplements at all. All supplementi

Microstructure, texture, rheology, flavor, and sensory attributes of spreadable processed cheese as affected by partial substitution with thermal-sonicated mung bean protein vegan cheese.

Hybrid processed cheeses combining dairy and plant proteins have gained increasing attention in response to sustainability and health concerns. In this study, Mozzarella-based processed cheeses were partially substituted (5%-15%) with mung bean protein (MBP)-based vegan cheese, and evaluated for their structural, physicochemical, and sensory characteristics. The MBP-based vegan cheese was produced via acid-induced curdling of a thermal-sonicated MBP-oil emulsion. This work investigated combined effects of thermal sonication during MBP preparation together with its substitution level on microst
