Changes in the intestinal microbiota of healthy adults induced by brown yogurt and relationships of bacterial taxa with specific components.

Yogurt consumption shows a wide range of effects on the gut microbial composition, and correlation of components in yogurt with the changes of gut microbia remains largely uncharacterized. We aimed to determine the effect of brown yogurt (SSN) on the composition of the gut microbiota and to explore the effects of the major components. We performed a randomized study of 70 healthy adults to compare the effects of SSN and standard probiotic-containing yogurt (YJD) during a 28-day intervention and a 10-day follow-up period. The results showed that the SSN group showed significant increases in the

Analysis of a food-borne fungal pathogen outbreak: virulence and genome of a Mucor circinelloides isolate from yogurt.

Food-borne pathogens are ongoing problems, and new pathogens are emerging. The impact of fungi, however, is largely underestimated. Recently, commercial yogurts contaminated with Mucor circinelloides were sold, and >200 consumers became ill with nausea, vomiting, and diarrhea. Mucoralean fungi cause the fatal fungal infection mucormycosis, whose incidence has been continuously increasing. In this study, we isolated an M. circinelloides strain from a yogurt container, and multilocus sequence typing identified the strain as Mucor circinelloides f. circinelloides. M. circinelloides f. circinelloi

Lactose digestion from flavored and frozen yogurts, ice milk, and ice cream by lactase-deficient persons.

Lactose digestion from and tolerance to flavored and frozen yogurts, ice cream, and ice milk were evaluated (20 g lactose/meal) in lactase-deficient subjects by use of breath hydrogen techniques. Unflavored yogurt caused significantly less hydrogen production than milk (37 vs 185 delta ppm X h, n = 9). Flavored yogurt was intermediate (77 delta ppm X h). Subjects were free of symptoms after consuming flavored and unflavored yogurts. Of seven commercial yogurts tested, all contained significant levels of microbial beta-galactosidase (beta-gal). In addition, eight subjects were fed meals of milk

High-Resolution Impedance Manometry (HRIM) Using Yogurt (Viscosity Matched to Barium) for Bolus Clearance After Therapy in Achalasia.

OBJECTIVE: Timed-barium esophagogram (TBE) is established test for assessing bolus clearance in achalasia post-treatment. However, radiation exposure is an important disadvantage. Esophageal bolus transit can be evaluated by HRIM. Previous studies comparing Impedance bolus height (IBH) using saline and TBE showed fair correlation. We compared bolus clearance by TBE versus HRIM using yogurt (viscosity matched to barium-calculated using Ostwald viscometer) in patients treated for achalasia. METHODS: HRIM was performed using solid-state system (MMS, Netherlands). Twenty patients (age 45.1 years;

Post-exercise consumption of milk or Greek yogurt may support the anti-inflammatory environment following high-intensity exercise.

INTRODUCTION: Following exercise, there is a transient increase in circulating inflammatory mediators (e.g., cytokines). This acute inflammatory response may be modulated by post-exercise nutrition. Dairy products contain many anti-inflammatory constituents that may favourably modulate exercise-induced inflammation. This study aimed to investigate how different post-exercise nutrition strategies [milk, Greek yogurt [GY], carbohydrate [CHO], or water [no nutrition]] modulate the exercise-induced inflammatory response. METHODS: Twenty healthy recreationally active adults (12/8 F/M; age=23 ± 4.0

Yogurt consumption during pregnancy and preterm delivery in Mexican women: A prospective analysis of interaction with maternal overweight status.

Preterm delivery is an important cause of perinatal morbidity and mortality, often precipitated by maternal infection or inflammation. Probiotic-containing foods, such as yogurt, may reduce systemic inflammatory responses. We sought to evaluate whether yogurt consumption during pregnancy is associated with decreased preterm delivery. We studied 965 women enrolled at midpregnancy into a clinical trial of prenatal docosahexaenoic acid supplementation in Mexico. Yogurt consumption during the previous 3 months was categorized as ≥5, 2-4, or <2 cups per week. Preterm delivery was defined as deliver

Mechanisms of Bifidobacterium animalis J12 in reshaping yogurt flavor homeostasis and alleviating constipation via the "metabolite-nerve-endocrine" framework.

The application of bifidobacteria in fermented dairy products is often limited by insufficient storage stability and unclear mechanistic links between microbial metabolism and host benefits. Here, we investigated the technological performance, aroma homeostasis, and constipation-alleviating mechanism of Bifidobacterium animalis J12 co-fermented yogurt (J12-Y). J12 co-fermentation maintained excellent physicochemical stability during 28 days of refrigeration, with viable counts remaining above 7.0 log CFU/mL and preserving the classical buttery-creamy aroma backbone, as evidenced by stable 2,3-
