Bee Bread Protects Small Intestinal Mucosa and Modulates Local Redox Responses in Streptozotocin-Induced Diabetic Rats.

Bee Bread (BB), a fermented bee product rich in antioxidant compounds, exerts protective effects against diabetes-associated small intestinal damage. This study investigated the effects of BB on small intestinal morphology, mucosal integrity, and antioxidant enzyme activity in streptozotocin (STZ)-induced diabetic rats. Forty Wistar albino rats were randomly divided into five groups: control, sham (50 mg/kg sodium citrate), diabetes (DM; 50 mg/kg STZ), BB (100 mg/kg), and Diabetes + Bee Bread (DM+BB). After 15 days, intestinal tissues were examined using histopathological, immunohistochemical

Sustainable Ball Milling-Assisted Synthesis of Bread Waste-Derived Highly Porous Carbons for Adsorption-Based Applications.

A facile synthesis was used for the preparation of highly porous carbons from bread waste. This synthesis relied on the fast ball milling of only two reagents, dry bread, and a mild activation agent, followed by direct thermal treatment at 800°C, afforded carbons with high specific surface areas up to 2400 m2·g-1, and a large pore volume up to 1.56 cm3·g-1. This seems to be the first attempt to employ ball milling for the synthesis of sustainable bread-derived highly porous carbons. Effective activation was achieved thanks to homogeneous distribution of the activating agent throughout the prec

White bread as the final preexamination meal improves gastric cleanliness and visualization during magnetic capsule endoscopy.

Suboptimal gastric preparation remains a critical factor limiting visualization efficacy in magnetically controlled capsule endoscopy (MCE). Notably, preliminary observations indicate that patients consuming white bread as their final pre-MCE diet showed improved gastric mucosal visibility. This study therefore seeks to evaluate the association between the final pre-procedural diet and gastric preparation quality in MCE examinations. A total of 230 patients scheduled for MCE were enrolled in this non-randomized controlled cohort study, with 115 patients received white bread as their pre-MCE di

Application of Bamboo Shoot Superfine Powder/κ-Carrageenan Composite Gel in Bread: Texture, Properties and Flavor.

Bread texture and flavor are largely governed by the development of its internal microstructure and the migration dynamics of water and volatile compounds. In this study, a bamboo shoot shell superfine powder/κ-carrageenan composite gel system (KCS) was developed, and the effects of different addition levels (0%, 5%, 10%, 15%, 20%) of KCS on bread performance, structure, and flavor were investigated. Compared with κ-carrageenan (KC), KCS formed a denser and more continuous composite network structure with higher elasticity, freeze-thaw stability, and thermal stability. Bread with KCS showed im

Elucidation of defense-related signaling responses to spot blotch infection in bread wheat (Triticum aestivum L.).

Spot blotch disease, caused by Bipolaris sorokiniana, is an important threat to wheat, causing an annual loss of ~17%. Under epidemic conditions, these losses may be 100%, yet the molecular responses of wheat to spot blotch remain almost uncharacterized. Moreover, defense-related phytohormone signaling genes have been poorly characterized in wheat. Here, we have identified 18 central components of salicylic acid (SA), jasmonic acid (JA), ethylene (ET), and enhanced disease susceptibility 1 (EDS1) signaling pathways as well as the genes of the phenylpropanoid pathway in wheat. In time-course ex

Inulin and fructooligosaccharide affect in vitro calcium uptake and absorption from calcium-enriched gluten-free bread.

Compromised intestinal calcium absorption affecting a deterioration of bone state is a sign of coeliac disease. Experimental calcium-fortified gluten-free bread (GFB) of improved calcium bioavailability could increase calcium content in the diets of coeliac disease patients, allowing them to obtain the amount of calcium they need for therapeutic use. Prebiotics, including inulin-type fructans (IFs) have a beneficial effect on calcium bioavailability. In the present study, the in vitro model composed of the intestinal-like Caco-2 cells and the human intestinal bacteria (Lactobacillus, Enterococ

Effect of retinol on iron bioavailability from Iranian bread in a Caco-2 cell culture model.

OBJECTIVE: Iron and vitamin A deficiencies are among the most prevalent nutritional problems. There are no data on iron bioavailability in Iran. In addition, interaction of vitamin A with iron bioavailability is not well documented, so we determined iron bioavailability from the most widely consumed food in Iran, lavash bread, and the effect of vitamin A on this bioavailability. METHODS: In vivo human studies for determining iron bioavailability are cumbersome, time consuming, and costly to perform, so we used an in vitro model in Caco-2 cells. Bread samples were digested with or without vita

Quantitation of pesticides in bee bread collected from honey bee colonies in an agricultural environment in Switzerland.

Pesticide contamination of bee products is a widespread phenomenon. Due to its composition, bee bread is affected by both lipophilic and hydrophilic substances. As proof of concept of a monitoring campaign and to better understand the extent of contamination, we developed an analytical method based on a modified QuEChERS extraction, with subsequent separation by liquid chromatography and detection by mass spectrometry. This allowed for the quantitation of 51 agricultural- or beekeeping-associated pesticides in bee bread. The workflow was applied to 60 samples taken biweekly throughout spring t

Consumption of Yeast-Fermented Wheat and Rye Breads Increases Colitis and Mortality in a Mouse Model of Colitis.

BACKGROUND: Cereals are known to trigger for wheat allergy, celiac disease and non-celiac wheat sensitivity (NCWS). Inflammatory processes and intestinal barrier impairment are suspected to be involved in NCWS, although the molecular triggers are unclear. AIMS: We were interested if different bread types influence inflammatory processes and intestinal barrier function in a mouse model of inflammatory bowel disease. METHODS: Epithelial caspase-8 gene knockout (Casp8ΔIEC) and control (Casp8fl) mice were randomized to eight groups, respectively. The groups received different diets for 28 days (

No Difference in Tolerance between Wheat and Spelt Bread in Patients with Suspected Non-Celiac Wheat Sensitivity.

Individuals with suspected non-celiac wheat sensitivity (NCWS) often report better tolerance of spelt (Triticum aestivum ssp. spelta) compared to wheat (Triticum aestivum ssp. aestivum) bakery products. This experience has neither been validated nor explained on a molecular level. Therefore, we performed blinded wheat and spelt bread challenge in this patient group. Twenty-four adults with a history of NCWS but suspected spelt tolerance were challenged in a single-blinded crossover design over six weeks with six different study breads each at 300 g per day for 4 days followed by a washout phas

Staphylococcus aureus and staphylococcal enterotoxin A in breaded chicken products: detection and behavior during the cooking process.

In this study we examined the presence of Staphylococcus aureus and staphylococcal enterotoxin A (SEA) in 20 industrial breaded chicken products obtained from different retail butchers and supermarket stores in Italy. The levels of contamination in the products analyzed were quite low, although the pH values and water activities (a(w)) in the samples considered were in ranges favorable for S. aureus growth. As demonstrated by phenotypic and molecular characterization, in spite of the high percentage of coagulase-positive Staphylococcus strains, only three strains could be referred to the speci

The effect of consuming bread contaminated with heavy metals on cardiovascular disease and calculating its risk assessment.

Heavy metals (HMs) may cause the generation of reactive oxygen species (ROS), which results in oxidative stress and eventually leads to an increase in cardiovascular diseases (CVD). The Hoveyzeh Cohort Study Center provided clinical data for cardiovascular cases. The collection of samples was done randomly. The association between CVD and HMs has been evaluated utilizing seven machine-learning techniques. The results showed that the effect coefficient (β) of bread consumption in the incidence of heart disease is 4.6908 × 10-02. Consumption of bread contaminated with chromium (P value < 0.0217)

Exploration of the main metabolite of ethanol in Chinese HuangMi JiuNiang to regulate the dough quality of steamed bread.

Most studies on ethanol's effect on dough quality focus on preserving fresh noodles. Research on its impact on fermented dough quality is limited. We investigated how ethanol, a key metabolite of HuangMi JiuNiang, affects dough quality. Ethanol was backfilled into dough at concentrations corresponding to those in JiuNiang to evaluate its effect on rheological properties. The protein and starch characteristics of yeast dough, JiuNiang dough and yeast-ethanol dough were determined. Results showed that ethanol reduced dough development time by 13.28 % and stabilization time by 30.03 %, meanwhile

Study on quality characteristics, shelf-life prediction and frying mass transfer of breaded tilapia nuggets.

Deep-fried breaded tilapia nuggets (DFBTNs) have good market prospects as a tilapia deep-processed product. In this study, we used pre-optimized DFBTNs to simulate the mass change from storage to consumption and investigated the changes in storage shelf-life and frying mass transfer kinetics of DFBTNs. Microbial growth trend and shelf-life prediction models at different storage temperatures were developed using a modified Gompertz equation. The R2 of the fitted equations were all greater than 0.98, and the predicted shelf-life of the products was close to the actual measurement time. The abili

Evaluation of Sourdough Bread and Its Potential Use in Support of the Treatment of Chronic Non-Communicable Diseases.

Gastrointestinal disorders dysregulate the biochemical environment of the gastrointestinal tract by altering pH conditions during the gastric phase of digestion or by reducing the secretion of pancreatin during the intestinal part of the process. Ingested functional food could therefore lose some of its health-promoting potential apart from its nutritional value. In this work, we aimed to manufacture bread marked by decreased gluten content, using a commercial or laboratory sourdough, that could be appropriate for patients afflicted with wheat allergy, hypertension and pancreatic malfunctions.
