Effects of different drying methods on drying characteristics and quality of chili peppers (Capsicum annuum L.): Insights from changes in carotenoid and alkaloid secondary metabolites.

This study evaluated the effects of sun drying (SD), heat pump drying (HPD), far-infrared drying (FIRD), and combined FIR with HPD (FIR-HPD) on drying kinetics and quality attributes of chili peppers, using metabolomics to profile changes in carotenoids and alkaloids. Mechanical drying accelerated the drying rate by 56.8-90.3% compared to SD. Color retention was superior in peppers dried at 45 °C and 55 °C, whereas SD caused color fading. Ascorbic acid was better preserved in SD and 45 °C-dried samples, while total phenolics, antioxidant capacity, and carotenoids decreased with rising temperat

Effects of different hot-air drying methods on the dynamic changes in color, nutrient and aroma quality of three chili pepper (Capsicum annuum L.) varieties.

The effects of constant and variable temperature hot-air drying methods on drying time, colors, nutrients, and volatile compounds of three chili pepper varieties were investigated in this study. Overall, the variable temperature drying could facilitate the removal of water, preserve surface color, and reduce the loss of total sugar, total acid, fat and capsaicin contents. Electronic-nose (E-nose) and gas chromatography-ion mobility spectroscopy (GC-IMS) analyses found that aldehydes, ketones, alcohols and esters contributed to the aroma of chili peppers. The drying process led to an increase i

Methyl jasmonate reduces the damage caused by low temperature combined with low light: By regulating photosynthetic capacity and hormone levels of pepper seedlings (Capsicum annuum L.).

Low temperature combined with low light (LL) stress is a major issue restricting the yield and economic benefits of protected vegetables. As a typical thermophilic vegetable, the growth and yield of Peppers (Capsicum annuum L.) are easily limited by LL conditions. Methyl jasmonate (MJ), a signal molecule, plays a vital role in plant stress responses. Therefore, this study investigated the regulatory mechanisms of Methyl jasmonate-induced cold tolerance in peppers. The results indicated that the 200 μmol L-1 MJ pretreatment significantly increased the leaf area of pepper seedlings under LL stre

The participation of nitric oxide in hydrogen sulphide-mediated chromium tolerance in pepper (Capsicum annuum L) plants by modulating subcellular distribution of chromium and the ascorbate-glutathione cycle.

The promising response of chromium-stressed (Cr(VI)-S) plants to hydrogen sulphide (H2S) has been observed, but the participation of nitric oxide (NO) synthesis in H2S-induced Cr(VI)-S tolerance in plants remains to be elucidated. It was aimed to assess the participation of NO in H2S-mediated Cr(VI)-S tolerance by modulating subcellular distribution of Cr and the ascorbate-glutathione (AsA-GSH) cycle in the pepper seedlings. Two weeks following germination, plants were exposed to control (no Cr) or Cr(VI)-S (50 μM K2Cr2O7) for further two weeks. The Cr(VI)-S-plants grown in nutrient solution w

Integrative roles of nitric oxide and hydrogen sulfide in melatonin-induced tolerance of pepper (Capsicum annuum L.) plants to iron deficiency and salt stress alone or in combination.

There seems to be no report in the literature on the effect of melatonin (MT) in relieving the detrimental effects of combined application of salt stress (SS) and iron deficiency (ID). Therefore, the effect of MT on the accumulation/synthesis of endogenous nitric oxide (NO) and hydrogen sulphide (H2 S) and how far these molecules are involved in MT-improved tolerance to the combined application of ID and SS in pepper (Capsicum annuum L) were tested. Hence, two individual trials were set up. The treatments in the first experiment comprised: Control, ID (0.1 mM FeSO4 ), SS (100 mM NaCl) and ID +

The involvement of hydrogen sulphide in melatonin-induced tolerance to arsenic toxicity in pepper (Capsicum annuum L.) plants by regulating sequestration and subcellular distribution of arsenic, and antioxidant defense system.

Melatonin (MT) and hydrogen sulphide (H2S) are recognised as vital biomolecules actively taking part in plant defence systems as free radical scavengers and antioxidants against a myriad of biotic and abiotic stressors. However, it has been yet unknown in plants subjected to arsenic (As) toxicity whether or not H2S interacts with MT to regulate endogenous antioxidant defence system. Prior to beginning As stress (As-S) treatments, MT (0.10 mM) was applied externally to plants daily for three days. AsS was then started for two weeks with As(V) (0.1 mM as Na2HAsO4·7H2O). The treatment of As reduc

Capsanthin from Capsicum annum fruits exerts anti-glaucoma, antioxidant, anti-inflammatory activity, and corneal pro-inflammatory cytokine gene expression in a benzalkonium chloride-induced rat dry eye model.

Dry eye disease (DED) is a complex ocular surface inflammatory disease. Its occurrence varies widely over the world, ranging from 5% to 34%. The use of preservatives, specifically benzalkonium chloride, in the ocular drops worsens the DED conditions. Furthermore, the Covid-19 pandemic increased screen time and the use of face masks and shields. As a result, the number of people suffering from dry eye disease (DED) has increased significantly in recent years. The main objective of our study is to find a solution to manage the dry eye disease (DED) preferably from natural source without any adve

Cloning and functional analysis of three genes encoding polygalacturonase-inhibiting proteins from Capsicum annuum and transgenic CaPGIP1 in tobacco in relation to increased resistance to two fungal pathogens.

Polygalacturonase-inhibiting proteins (PGIPs) are plant cell wall glycoproteins that can inhibit fungal endopolygalacturonases (PGs). The PGIPs directly reduce the aggressive potential of PGs. Here, we isolated and functionally characterized three members of the pepper (Capsicum annuum) PGIP gene family. Each was up-regulated at a different time following stimulation of the pepper leaves by Phytophthora capcisi and abiotic stresses including salicylic acid, methyl jasmonate, abscisic acid, wounding and cold treatment. Purified recombinant proteins individually inhibited activity of PGs produce
