Revealing the flavor changes of spiced beef under different thermal treatment temperatures: A complementary approach with GC-IMS and GC-O-MS.

The flavor profiles of spiced beef (SB) and the impact of thermal treatment temperature were analyzed using complementary GC-IMS and GC-O-MS techniques. The results indicated that spice, roasted-meaty, and caramel flavors significantly contributed to the SB profile. Thermal treatment degraded α-phellandrene, citral, γ-terpinene, and other terpenoids, reducing spice flavor intensity. However, milder thermal treatments at 80°C and 95°C lessened this degradation. Increasing temperatures promoted fat oxidation and degradation, Maillard reactions, and Strecker degradation of amino acids. Thus, appr

A two-stage Maillard temperature control strategy in the cooling direction improves the emulsifying properties of sunflower seed protein.

For the Maillard process, this study developed a two-stage temperature-path control (TPC) technique (90 °C-4 h to 50/70 °C-1/2 h). It thoroughly examined how various TPCs control the interfacial behavior and structural development of sunflower seed protein-glucose Maillard conjugates. While maintaining a high degree of reaction, the 70-2 TPC method significantly improved the emulsifying activity index (EAI, 27.12 ± 0.04 m2/g) and emulsifying stability index (ESI, 35.50 ± 0.31 min). This method preserved molecular flexibility and amphiphilic balance by preventing excessive disulfide bond cross-

Precision assembly of ethyl cellulose-zein Janus nanoparticles with lock-and-key structures for controlled release of quercetin and curcumin.

Janus nanoparticles have attracted widespread attention in co-delivery and controlled release of nutraceuticals due to their anisotropic composition and properties. This study reported a novel method for preparing ethyl cellulose-zein Janus nanoparticles loaded with quercetin and curcumin. Morphological observations indicated that the Maillard reaction-mediated nanoprecipitation method successfully prepared Janus nanoparticles with lock-and-key structures. Multispectral technology and three-phase interfacial tension principle further confirmed the formation of Janus nanoparticles. Notably, the

Lipid glycation and protein glycation in diabetes and atherosclerosis.

Recent instrumental analyses using a hybrid quadrupole/linear ion trap spectrometer in LC-MS/MS have demonstrated that the Maillard reaction progresses not only on proteins but also on amino residues of membrane lipids such as phosphatidylethanolamine (PE), thus forming Amadori-PE (deoxy-D: -fructosyl PE) as the principal products. The plasma Amadori-PE level is 0.08 mol% of the total PE in healthy subjects and 0.15-0.29 mol% in diabetic patients. Pyridoxal 5'-phosphate and pyridoxal are the most effective lipid glycation inhibitors, and the PE-pyridoxal 5'-phosphate adduct is detectable in hu

Glyceraldehyde-derived advanced glycation end-products having pyrrolopyridinium-based crosslinks.

Reducing sugars and reactive aldehydes, such as glyceraldehyde, non-enzymatically react with amino or guanidino groups of proteins to form advanced glycation end-products (AGEs) by the Maillard reaction that involves Schiff base formation followed by Amadori rearrangement. AGEs are found relatively in abundance in the human eye and to accumulate at a higher rate in diseases that impair vision such as cataract, diabetic retinopathy or age-related macular degeneration. We identified two novel AGEs of pyrrolopyridinium lysine dimer derived from glyceraldehyde, PPG1 and PPG2, in the Maillard react

Determination of acrylamide formed in asparagine/D-glucose maillard model systems by using gas chromatography with headspace solid-phase microextraction.

A gas chromatographic method, along with a headspace solid-phase microextraction (HS-SPME), was developed for the determination of acrylamide formed in Maillard reaction model systems. The developed method was validated by liquid chromatography/mass spectrometry. A headspace sample was collected from an aqueous acrylamide solution (100 microg/mL) by SPME and directly injected into a gas chromatograph equipped with a nitrogen-phosphorus detector. The recovery of acrylamide from an aqueous solution was satisfactory, i.e, >93% under the conditions used. Acrylamide formed in an asparagine/D-glucos

Divergent effects of phosphate salts on advanced glycation end-product formation in minced pork during commercial sterilization.

This research investigated the impacts of phosphate salts (sodium tripolyphosphate and tetrasodium pyrophosphate) and pre-heating storage (0 °C, 1-7 d) on Nε-carboxymethyllysine (CML) and Nε-carboxyethyllysine (CEL) formation in minced pork during commercial sterilization (121 °C). While significant (p < 0.05) increases in fructosamine and browning intensity indicated that phosphates accelerated the Maillard reaction, this effect was presumably outweighed by their antioxidative inhibition of lipid oxidation and the oxidative degradation of sugars and their Maillard-derived intermediates, leadi

Formation of Volatile Heterocyclic Compounds and Open-Chain Amides of Theanine in Model Systems with Glucose, Tea Leaves, and Tea Extract under Tea-Roasting Conditions.

Theanine is a non-proteinogenic amino acid found in the tea plant Camellia sinensis. At an elevated temperature (>90 °C), it released two major volatile compounds 1-ethyl-1,5-dihydro-2H-pyrrol-2-one and N-ethylsuccinimide. Other products were identified, including 10 pyrroles and 12 amides/imides. The formation of the two major compounds was proposed to be initiated by the deamination of theanine and through the intermediate α-keto acid. In the presence of glucose, the two major products and many other volatiles from theanine thermal degradation were accelerated and further Maillard reactions

Dietary glycation compounds - implications for human health.

The term "glycation compounds" comprises a wide range of structurally diverse compounds that are formed endogenously and in food via the Maillard reaction, a chemical reaction between reducing sugars and amino acids. Glycation compounds produced endogenously are considered to contribute to a range of diseases. This has led to the hypothesis that glycation compounds present in food may also cause adverse effects and thus pose a nutritional risk to human health. In this work, the Senate Commission on Food Safety (SKLM) of the German Research Foundation (DFG) summarized data on formation, occurre

Organosulfurs, S-allyl cysteine and N-acetyl cysteine sequester di-carbonyls and reduces carbonyl stress in HT22 cells.

Diabetes, characterized by high blood glucose level, is a progressive metabolic disease that leads to serious health complications. One of the major pathological consequences associated with diabetes is the accumulation of highly reactive carbonyl compounds called advanced glycation end products (AGEs). Most of the AGEs are dicarbonyls and have the potential to covalently modify proteins especially at the lysine residues in a non-enzymatic fashion (a process termed as glycation) resulting in the functional impairment and/or toxic gain in function. Therefore, non-toxic small molecules that can

High-intensity ultrasound promoted the maturation of high-salt liquid-state soy sauce: A mean of enhancing quality attributes and sensory properties.

High-intensity ultrasound was used as a means to promote maturation of soy sauce. The optimal conditions for ultrasound treatment were 90℃ at an ultrasound intensity of 39.48 W/cm2 for 60 min. The total reducing sugars and soluble salt-free solids content was significantly increased after ultrasound-assisted maturation. The free amino acid content was significantly decreased, mainly due to the Maillard reaction (MR). The promoted MR produced several types of flavor compounds, including esters, pyrazines, and ketones, which imparted an attractive aroma to the maturated soy sauce. The proportion

Metabolite and Sensory Profiling of Microwave-Assisted and Ultrasonic-Assisted Alkalized Cocoa Powders.

Microwave (MA)- and ultrasonic-assisted (UA) alkalization were applied to cocoa powders for 5, 10, and 15 min to investigate their effects on metabolite composition, sensory profile, and consumer liking. Widely targeted gas chromatography-mass spectrometry (GC-MS) analysis showed alkalization altered metabolite profiles: Natural cocoa powders contained more amino acids, sugars, and flavonoids, while alkalized samples had elevated organic acids. Compared to conventionally alkalized (CA) samples, only UA15 showed a significant increase in 3,4-dihydroxybenzoic acid. UA15 also exhibited the greate

Mechanism of Carbon Skeleton Formation of 2,3,5-Trimethylpyrazine via a Conversion Reaction between Methylglyoxal and Glyoxal.

Maillard flavor compounds, such as 2,3,5-trimethylpyrazine, have been frequently identified in thermally processed food products, such as popcorn and peanuts. However, the origin of the carbon atoms in 2,3,5-trimethylpyrazine has not been clearly elucidated. Herein, a model reaction showed that precursor methylglyoxal and intermediates glyoxal and formaldehyde contributed to the formation of 2,3,5-trimethylpyrazine via a conversion reaction between methylglyoxal and glyoxal. In addition, carbon module labeling technology and model response validation experiments indicated that this transformat

Impact of harvest year on amino acids and sugars in potatoes and effect on acrylamide formation during frying.

Acrylamide is formed via the Maillard reaction between reducing sugars and asparagine in a number of carbohydrate-rich foods during heat treatment. High acrylamide levels have been found in potato products processed at high temperatures. To examine the impact of harvest year, information on weather conditions during growth, that is, temperature, precipitation, and light, was collected, together with analytical data on the concentrations of free amino acids and sugars in five potato clones and acrylamide contents in potato chips (commonly known as crisps in Europe). The study was conducted for

Effect of Different Drying Methods on Nutrient Quality of the Yellow Mealworm (Tenebrio molitor L.).

Yellow mealworm (Tenebrio molitor L.) represents a sustainable source of proteins and fatty acids for feed and food. Industrial production of mealworms necessitates optimized processing techniques, where drying as the first postharvest procedure is of utmost importance for the quality of the final product. This study examines the nutritional quality of mealworm larvae processed by rack oven drying, vacuum drying or freeze drying, respectively. Proximate composition and fatty acid profile were comparable between the dried larvae. In contrast, larvae color impressions and volatile compound profi

A climatically significant abiotic mechanism driving carbon loss and nitrogen limitation in peat bogs.

Sphagnum-dominated bogs are climatically impactful systems that exhibit two puzzling characteristics: CO2:CH4 ratios are greater than those predicted by electron balance models and C decomposition rates are enigmatically slow. We hypothesized that Maillard reactions partially explain both phenomena by increasing apparent CO2 production via eliminative decarboxylation and sequestering bioavailable nitrogen (N). We tested this hypothesis using incubations of sterilized Maillard reactants, and live and sterilized bog peat. Consistent with our hypotheses, CO2 production in the sterilized peat was

Dynamic evolution of flavor profiles and antioxidant capacities in black rice tea during continuous roasting.

In this study, the dynamic evolution of functional components and volatile flavor profiles in black rice tea across different roasting times (90 °C, 0, 5, 10, 20, and 30 min) was investigated. Physicochemical assays, electronic nose, and gas chromatography-ion mobility spectrometry (GC-IMS) were employed to characterize the quality transformation mechanisms. The results indicated that while total flavonoids decreased continuously during heating, total anthocyanins reached a maximum at 20 min. The overall antioxidant capacity remained stable and was likely maintained by the compensatory generat
