Apple (Malus domestica) polyphenols possess functional properties; however, their human body absorption is impeded. To enhance their absorption, apple polyphenols were fermented using Lacticaseibacillus rhamnosus zrx01. Gastrointestinal digestion and metabolomics analyses were conducted. This study is aimed at transforming the apple processing waste into valuable food protein. The usual substrates for Hypsizygus ulmarius mushroom like wheat and paddy straw were supplemented with apple pomace at two different concentrations i.e. 50% and 25% to evaluate the effect on the yield. BACKGROUND: Apples are among the most important horticultural crops. Therefore, maintaining their postharvest quality is essential. Storage diseases, such as Bull's Eye Rot (BER), which is caused by Neofabraea spp. (syn. Pezicula, Phlyctema), poses a significant economic challenge to apple production. Its suppression is particularly significant as compared to other postharvest pathogens due to a specific latent mode of action. This work aims to improve BER disease management and fruit microbial quality in apple production, both of which are key aspects of sustainable horticultural systems.
