Co-decoding dynamics in volatiles and sensory profiles of Zhaiji millet vinegar during aging by integrating multiple flavor characterization techniques and chemometrics.

Zhaiji millet vinegar (ZJMV) is a signature acidic condiment. To investigate the effect of aging on the flavor of ZJMV, here gas chromatography-mass spectrometry (GC-MS), gas chromatography-ion mobility spectrometry (GC-IMS), electronic nose, electronic tongue, and quantitative descriptive analysis were used to characterize the flavor profiles of ZJMV for five aging years (2 to 10 years). GS-MS and GC-IMS identified 84 and 44 volatile organic compounds (VOCs), with the most abundant alcohols and esters (p < 0.05). Notably, the number of VOCs in the ZJMV gradually decreased with increasing agin

Alcoholic-alkaline modification of millet starch as an emerging resource to develop granular cold water swelling properties: physicochemical, morphological and rheological insights.

In this study, granular cold water swelling (GCWS) millet starch was developed using alcoholic-alkaline treatment (AAT), applied at different temperatures, amounts and concentrations of sodium hydroxide and ethanol contents. Compared to the native starch, a significant enhancement in cold-water absorption (up to 10.40 g/g) and solubility (up to 14.11 %) was observed in GCWS starches. Morphological studies revealed smooth, polygonal and spherical granules in native starch, whereas GCWS starch granules exhibited wrinkled and indented surfaces. X-ray diffraction (XRD) analysis indicated the trans

Uncovering the Differences in Flavour Volatiles from Hybrid and Conventional Foxtail Millet Varieties Based on Gas Chromatography-Ion Migration Spectrometry and Chemometrics.

The flavour of foxtail millet (Setaria italica (L.) P. Beauv.) is an important indicator for evaluating the quality of the millet. The volatile components in steamed millet porridge samples were analysed using electronic nose (E-Nose) and gas chromatography-ion mobility spectrometry (GC-IMS) techniques, and characteristic volatile fingerprints were constructed to clarify the differences in the main flavour substances in different foxtail millet varieties (two hybrids and two conventional foxtail millets). After sensory evaluation by judges, Jingu 21 (JG) scored significantly higher than the ot

Genome-wide identification and expression analysis of NPR1-like genes in pearl millet under diverse biotic and abiotic stresses and phytohormone treatments.

Nonexpressor of pathogenesis-related genes 1 (NPR1) is a master regulator of salicylic acid (SA)- facilitated plant hormone signaling and plays a crucial role in plant defense through the activation of systemic acquired resistance (SAR). Although NPR1-like genes are associated with stress responses in a variety of plant species, no thorough genome-wide investigation of these genes has been undertaken in pearl millet (Pennisetum glaucum). This study discovered seven PgNPR1-like genes on four pearl millet chromosomes (Chr1, Chr2, Chr4, and Chr6), which exhibit close affinity to NPRs from other p

The pearl millet mitogen-activated protein kinase PgMPK4 is involved in responses to downy mildew infection and in jasmonic- and salicylic acid-mediated defense.

Plant mitogen-activated protein kinases (MPKs) transduce signals required for the induction of immunity triggered by host recognition of pathogen-associated molecular patterns. We isolated a full-length cDNA of a group B MPK (PgMPK4) from pearl millet. Autophosphorylation assay of recombinant PgMPK4 produced in Escherichia coli confirmed it as a kinase. Differential accumulation of PgMPK4 mRNA and kinase activity was observed between pearl millet cultivars 852B and IP18292 in response to inoculation with the downy mildew oomycete pathogen Sclerospora graminicola. This increased accumulation of

Effects of dietary protein of Korean foxtail millet on plasma adiponectin, HDL-cholesterol, and insulin levels in genetically type 2 diabetic mice.

We examined the effects of intake of Korean foxtail millet protein (FMP) on plasma levels of lipid, glucose, insulin, and adiponectin in genetically type 2 diabetic KK-Ay mice. When mice were fed a normal FMP diet or a high-fat-high-sucrose diet containing FMP for 3 weeks, in both experiments plasma concentrations of high-density lipoprotein cholesterol (HDL-cholesterol) and adiponectin increased remarkably in comparison with a casein diet group, whereas concentrations of insulin decreased greatly and that of plasma glucose was comparable to that in the casein diet group. Considering the role

Millet-based rice analogues for sustainable food systems: a comprehensive review on advancements, characterization, challenges, and future prospects for enhancing food security and health.

Rice is a crucial dietary staple for over half of the global population. Yet, its commonly consumed polished form contains high carbohydrate levels and has a high glycemic index (GI), contributing to metabolic disorders such as diabetes and iron deficiency anemia. With growing consumer interest in health-oriented foods, there is a need to develop nutritionally enhanced rice alternatives that align with existing dietary habits. Millets, naturally rich in protein, dietary fiber, and micronutrients and characterized by a low GI, offer a promising strategy for improving food and nutritional proper
