Discovery of a novel Lactiplantibacillus phage enhancing flavor compound production in high-temperature Daqu.

Bacteriophages (phages) are an understudied yet pivotal component of fermentation ecosystems, with potential implications for product quality through phage-host interplay. However, the functional roles of phage communities or individual phages in Daqu (saccharifying and fermenting agent for Baijiu) remain largely unexplored. This study utilized virome analysis to investigate the composition and functional dynamics of the phage community during high-temperature Daqu (HTD) incubation. We identified Inoviridae as the dominant phage family, with most phages belonging to the Caudoviricetes class. T

Prevalence and Genomic Insight of Extended-Spectrum β-Lactamase-Producing Enterobacteriaceae (ESBL-E) Isolated from Food Sources in Saudi Arabia.

Enterobacteriaceae are a diverse family of Gram-negative, rod-shaped, facultatively anaerobic bacteria that serve as important indicators of food safety. Many species within this family, including common foodborne pathogens, are major contributors to both community- and hospital-acquired infections. The widespread use of antibiotics in agriculture has facilitated the emergence and dissemination of antimicrobial-resistant bacteria in food products, livestock, and the environment. This study investigated the prevalence and genomic characteristics of extended-spectrum β-lactamase (ESBL)-producing

A recombinant lysogenic bacteriophage inhibits Salmonella virulence.

The gut environment includes an abundance of chemicals emanating from the host and the microbiota. To colonize animals, Salmonella uses gut chemicals as locational cues to ensure expression of energy-intensive virulence factors only when their production is necessary. cis-2-hexadecenoic acid (c2HDA), a member of the diffusible signal factor family of quorum-sensing signals, potently represses virulence-gene expression by Salmonella. Here, we report the construction and use of a recombinant bacteriophage that can establish lysogeny within Salmonella and induce it to produce c2HDA, thus repressi

Characterization of IncI1 sequence type 71 epidemic plasmid lineage responsible for the recent dissemination of CTX-M-65 extended-spectrum β-lactamase in the Bolivian Chaco region.

During the last decade, a significant diffusion of CTX-M-type extended-spectrum β-lactamases (ESBLs) was observed in commensal Escherichia coli from healthy children in the Bolivian Chaco region, with initial dissemination of CTX-M-2, which was then replaced by CTX-M-15 and CTX-M-65. In this work, we demonstrate that the widespread dissemination of CTX-M-65 observed in this context was related to the polyclonal spreading of an IncI1 sequence type 71 (ST71) epidemic plasmid lineage. The structure of the epidemic plasmid population was characterized by complete sequencing of four representatives

Analysis of major band of Enterobacter sakazakii by ERIC-PCR and development of a species-specific PCR for detection of Ent. sakazakii in dry food samples.

ERIC (Enterobacterial Repetitive Intergenic Consensus)-PCR was employed to generate stable and reproductive ERIC-PCR fingerprints of Ent. sakazakii ATCC51329. Moreover, this study also cloned and sequenced a major band of Ent. sakazakii (ATCC51329) ERIC-PCR fingerprints. The major band was amplified with primer ERIC2 and sequences extending primer ERIC 2 showed poor similarity with ERIC elements. A comparison of the nucleotide acid with other sequences available in the GenBank revealed 90% of identity with Ent. sakazakii ATCC BAA-894, and 73%-74% of identity with oligopeptiase gene or protease

Diversity and antibiograms of bacteria isolated from cutaneous leishmaniasis wounds in the Nkwanta South District of Ghana.

Leishmaniasis is a vector-borne disease caused by an intracellular protozoan parasite. The presence of secondary bacterial infections in cutaneous leishmaniasis wounds exacerbate lesion development and could lead to delay in the healing process. This study sought to determine the resistance patterns of bacteria co-infecting cutaneous leishmaniasis wounds from selected communities in the Nkwanta district. Various bacteria were isolated and characterized from exudates obtained from wound swabs collected with sterile cotton tipped applicators. Confirmation of bacterial identity was done using the
