Monitoring and Maintaining the Freshness of Royal Jelly: A Review of Analytical Approaches and Preservation Technologies.

Royal jelly, a high-value natural product rich in bioactive compounds, is highly susceptible to quality deterioration during storage and processing. However, current quality standards rely predominantly on basic physicochemical parameters and measuring the content of 10-hydroxy-2-decenoic acid (10-HDA), which fail to capture the comprehensive and dynamic nature of its freshness. This significant knowledge gap hinders the accurate assessment, prediction, and control of royal jelly quality throughout its supply chain. To address this limitation, this review systematically elucidates the molecula

The Chemistry behind Chocolate Production.

Chocolate production is a complex process during which numerous chemical reactions occur. The most important processes, involving most of the reactions important for development of the proper chocolate flavor, are fermentation, drying and roasting of cocoa bean, and chocolate conching. During fermentation, formation of important precursors occurs, which are essential for further chemical reactions in the following processes of chocolate production. Roasting is one of the most important processes due to the occurrence of Maillard's reactions, during which aroma compounds are formed. In this pap

Effects of steaming and storage on microbial quality and nutrient losses of hay.

BACKGROUND: Steaming reduces microbial content of hay but the effect of steaming on nutrient quality and the effects of storage after steaming on microbial content are incompletely known. AIMS/OBJECTIVES: It was hypothesized that steamed hay can be stored for up to 24 h without an increase in microbial content and that steaming of hay favors the increase in measurable Maillard reaction products. METHODS: Spoiled hay was steamed and then stored in hay nets, buckets or the hay steamer itself under summer and winter climate conditions. Microbial content was assessed by bacterial and fungal cult

Comprehensive Characterization of Volatile Flavor Compounds in Thamnaconus modestus Under Different Thermal Processing Methods: A Multi-Instrumental Flavoromics Approach.

Thamnaconus modestus (black scraper) is an economically important fish species in Chinese coastal fisheries, yet its pronounced fishy off-odor, primarily attributed to sulfur-containing compounds and trimethylamine (TMA), severely limits consumer acceptance and product diversification. However, a systematic investigation into how different thermal processing methods affect its volatile flavor profile is lacking. This study employed an integrated multi-instrumental flavoromics platform combining sensory evaluation, electronic nose (E-nose), electronic tongue (E-tongue), gas chromatography-ion m

Non-enzymatic browning kinetics and browning factor path analysis of navel orange peel fillings under different sterilization and storage conditions.

BACKGROUND: Navel orange peel fillings are prone to non-enzymatic browning during processing and storage, yet the regulatory mechanism of exogenous conditions on this process remains unclear. This study established kinetic models and adopted path analysis to explore the effects of external factors on browning and its intrinsic drivers, aiming to provide theoretical and technical basis for scientific quality control of the fillings. RESULTS: Key quality indexes (color difference, browning degree A 420, total phenols, carotenoids, 5-hydroxymethylfurfural (5-HMF), ascorbic acid content) were mon

Machine Learning-Driven Optimization of a Functional Seafood-Based Blended Liquor With Enhanced Sensory and Bioactive Properties.

Perinereis aibuhitensis possess favorable nutritional and function properties that support its potential as a raw material for seafood-based liquor. However, the systematic application of P. aibuhitensis and its Maillard reaction products in liquor formulation has not been reported. Therefore, we aimed to (1) optimize the formulation of P. aibuhitensis-blended liquor (PBL) using a hybrid response surface methodology (RSM)-back-propagation (BP)-genetic algorithm (GA) model; (2) evaluate its in vitro antioxidant capacity after simulated human gastrointestinal digestion; and (3) assess its anti-i

Comparison of ovalbumin glycation induced by high-temperature steaming and high-temperature baking: A study combining conventional spectroscopy with high-resolution mass spectrometry.

High-temperature steaming (HTS) and high-temperature baking (HTB)-induced ovalbumin (OVA)-glucose glycation (140 °C, 1-3 min) were compared, and the different mechanisms were evaluated by changes in protein conformation, glycation sites and average degree of substitution per peptide molecule (DSP) values as well as the antioxidant activity of glycated OVA. Conventional spectroscopic results suggested that in comparison with HTB, HTS promoted protein expansion, increased β-sheet content and made OVA structure more orderly. Liquid chromatography-high resolution mass spectrometry (LC-HRMS) analys

Determination of the alkylpyrazine composition of coffee using stable isotope dilution-gas chromatography-mass spectrometry (SIDA-GC-MS).

A stable isotope dilution analysis based on gas chromatography-mass spectrometry analysis (SIDA-GC-MS) was developed for the quantitative analysis of 12 alkylpyrazines found in commercially available coffee samples. These compounds contribute to coffee flavor. The accuracy of this method was tested by analyzing model mixtures of alkylpyrazines. Comparisons of alkylpyrazine-concentrations suggested that water as extraction solvent was superior to dichloromethane. The distribution patterns of alkylpyrazines in different roasted coffees were quite similar. The most abundant alkylpyrazine in each

Changes in composition and flavor of non-centrifugal sugar after traditional Pan and vacuum evaporation processes.

This study elucidates the thermodynamic-driven flavor transformation mechanisms in non-centrifugal sugar processed via Traditional Pan (TP) and Vacuum Evaporation (VE) systems. Dynamic analysis revealed that 73 volatiles were detected in two processing systems: VE's sealed heating process concentrates pyrazine/aldehyde compounds (such as 2-ethyl-3-methylpyrazine), imparting caramel/nutty flavors; whereas TP's shorter heating duration preserves heat-sensitive furan compounds (such as furfural), yielding fresh/fruity aromas - a conclusion validated by sensory testing. Eight characteristic biomar

Evaluation of processed cheese viscoelastic properties during sterilization observed in situ.

Sterilized processed cheese is a specific dairy product with a prolonged shelf life intended for regular retail offer but also as food provisions for armies during peacetime, as well as during crisis and emergency situations, and for storage in state material reserves. Storage requirements are usually defined as ≤25°C for at least 24 mo. One of the ways to achieve such a shelf life is sterilization. Therefore, the aim of the work was to describe, for the first time in the available scientific literature, in situ changes in the viscoelastic properties of spreadable melt (34% wt/wt DM content, 4

Antibodies against advanced glycation end-products and malondialdehyde-acetaldehyde adducts identify a new specific subgroup of hitherto patients with seronegative arthritis with a distinct clinical phenotype and an HLA class II association.

OBJECTIVE: In rheumatoid arthritis (RA) around two-thirds of patients are autoantibody positive for rheumatoid factor, anti-citrullinated protein antibodies and/or anti-carbamylated protein antibodies. The remaining seronegative subgroup of patients is clinically heterogeneous and thus far, biomarkers predicting the disease course are lacking. Therefore, we analysed the value of other autoantibodies in RA directed against malondialdehyde-acetaldehyde adducts (MAA) and advanced glycation end-products (AGE). METHODS: In sera of 648 patients with RA and 538 patients without RA from the Leiden Ea

Effect of the C-Ring Structure of Flavonoids on the Yield of Adducts Formed by the Linkage of the Active Site at the A-Ring and Amadori Rearrangement Products during the Maillard Intermediate Preparation.

Flavonoids (dihydromyricetin, dihydroquercetin, epicatechin, and epigallocatechin) were applied to indicate the critical formation condition of the Amadori rearrangement product (ARP) in Maillard reaction performed under a two-step temperature rising process in the threonine-xylose model system. Threonine-ARP (Thr-ARP) was mixed with dihydromyricetin (DM), dihydroquercetin (DQ), epicatechin (EC), and epigallocatechin (EGC) before the heat treatment; then, the mixture was tested by liquid chromatography-mass spectrometry (LC-MS). The results showed that these flavonoids trapped the ARP and gene

The health and technological implications of a better control of neoformed contaminants by the food industry.

The recent discovery of the presence of variable amounts of the carcinogenic compound acrylamide in a wide range of severely heat-treated food products, such as fried potatoes, biscuits, bread and coffee or malt, as a result of the heat process, has induced an important research in the area of the Maillard reaction in food. The interaction between a specific food composition and the heat process applied results in the development of complex oxidation and glycation reactions, which give rise to a mixture of flavoured compounds and possible neoformed contaminants (NFC). Recommendations by the Eu

Hot-air drying temperature regulates volatile organic compounds in Dictyophora rubrovalvata based on the correlation of dynamic enzymes and precursors, and characteristic volatile organic compounds.

BACKGROUND: The characteristics of volatile organic compounds (VOCs) in Dictyophora rubrovalvata (DR) were systematically elucidated under varying hot-air drying temperatures (40-80 °C). The dynamic evolution of key flavor-synthesizing enzymes and precursor substances, and their correlations with characteristic VOCs, were highlighted. RESULTS: Odor activity value analysis (OAV) identified 34 characteristic VOCs in DR, with aldehydes dominating the aroma profile. Orthogonal partial least squares-discriminant analysis (OPLS-DA) demonstrated that the abundance of VOCs peaked at 80 °C. Enzymatic

Balancing aroma development and chemical safety in smoked chicken breast: Effects of smoking duration on aroma compounds, hazardous compounds, and precursors.

This study investigated how smoking duration (0-12 h) shaped aroma development and hazardous-compound accumulation in smoked chicken breast. Fifty-seven volatile compounds were identified. Smoke-derived phenols dominated early, whereas several Maillard-derived pyrazines appeared mainly after 6 h and lipid oxidation-related aldehydes declined. Hazardous compounds followed different accumulation patterns. The advanced glycation end products Nε-carboxymethyllysine (CML) and Nε-carboxyethyllysine (CEL) increased markedly during late-stage smoking. Norharman showed the greatest increase among the d

Perinatal consumption of a thermally processed diet alters feeding behavior and has sex-dependent effects upon metabolism in later life in mice.

Intense thermal processing of food, industrial or domestic, alters the food matrix leading to degradation of thermolabile vitamins such as thiamine, and to the formation of color and aroma compounds via the Maillard reaction which influence palatability and consumer preference. In the literature, baked diets are used to mimic industrial food processing and to study protein glycation in animal models; however, the relationships between food matrix transformation, metabolic outcomes, and food preference remain poorly understood. We hypothesized that perinatal exposure to a thermally processed fo

Reducing acrylamide precursors in raw materials derived from wheat and potato.

A review of agronomic and genetic approaches as strategies for the mitigation of acrylamide risk in wheat and potato is presented. Acrylamide is formed through the Maillard reaction during high-temperature cooking, such as frying, roasting, or baking, and the main precursors are free asparagine and reducing sugars. In wheat flour, acrylamide formation is determined by asparagine levels and asparagine accumulation increases dramatically in response to sulfur deprivation and, to a much lesser extent, with nitrogen feeding. In potatoes, in which sugar concentrations are much lower, the relationsh

Advanced glycation end products of dietary origin and their association with inflammation in diabetes - A minireview.

Advanced glycation end products (AGEs) are a diverse group of compounds that are formed as a result of the non-enzymatic reaction between a reducing sugar such as glucose and the free NH2 groups of an amino acid in a protein or other biomolecule. The chemical reaction, by which these products are generated, is known as the Maillard reaction and occurs as a part of the body's normal metabolism. Such a reaction is enhanced during diabetes due to hyperglycemia, but it can also occur during the preparation, processing, and preservation of certain foods. Therefore, AGEs can also be obtained from th

Differential impact of glycation on apolipoprotein A-I of high-density lipoprotein: a review.

Hyperglycemia is a poorly controlled diabetic condition, affects about 70% of people all round the world. In the year 2015, about 41.5 crore people were diabetic and is expected to reach around 64.3 crore by the year 2040. Cardiovascular diseases (CVDs) are considered as one of the major risk factors that cause more than half of the death of diabetic patients and promote related comorbidities. Atherosclerosis and amyloidosis are the prime factors linked with CVDs. Apolipoprotein A-I (ApoA-I) of HDL has protective action against CVDs, participates in reverse cholesterol transport mechanism and
