Yogurt in infant nutrition: Answers to frequent questions.

Unlike pasteurized or sterile foods, fermented foods provide live microorganisms that are beneficial to health. Various dietary guidelines recommend certain fermented foods to promote a varied diet. Not all fermented foods are suitable for children, due to their palatability or alcohol content. Yogurt is made from pasteurized milk under controlled hygienic conditions and is available in versions without excess critical nutrients, so it is recommended from the start of complementary feeding. Along with fresh cheeses, it provides microorganisms that are useful for the intestinal microbiota and t

Molecular Mechanisms and Antioxidant Effects of Latilactobacillus sakei F1, Lacticaseibacillus paracasei D2, Lacticaseibacillus rhamnosus JL, and Weissella cibaria JLK Isolated from Spontaneously Fermented and Raw Food Products.

An imbalance of pro-oxidants and antioxidants causes oxidative stress, contributing to various chronic diseases. Lactic acid bacteria (LAB) have recognised antioxidant activities that can help reduce oxidative stress. This study isolated fifty LAB strains from various fermented foods and raw vegetable products and evaluated their radical scavenging activity using DPPH and ABTS assays. Among them, four strains Lacticaseibacillus paracasei D2, Lacticaseibacillus rhamnosus JL, Latilactobacillus sakei F1, and Weissella cibaria JLK were selected and assessed for their tolerance to hydrogen peroxide

A combination of liver fluke infection and traditional northeastern Thai foods associated with cholangiocarcinoma development.

Opisthorchis viverrini infection is one of the risk factors for cholangiocarcinoma (CCA) in northeast Thailand, a region with one of the highest reported incidence rates of CCA. The traditional practice of eating raw fish, repeated exposure to liver flukes, and consumption of nitrosamine-contaminated food are major risk factors for CCA. So far, there have been no reports about which northeastern traditional dishes may be involved in CCA development. The present study, thus, investigated the effects of traditional foods. It focused specifically on the consumption of fermented foods in combinati

Metabolome analysis of milk fermented by γ-aminobutyric acid-producing Lactococcus lactis.

γ-Aminobutyric acid (GABA) is one of the most important functional components in fermented foods because of its physiological functions, such as neurotransmission and antihypertensive activities. However, little is known about components other than GABA in GABA-rich fermented foods. A metabolomic approach offers an opportunity to discover bioactive and flavor components in fermented food. To find specific components in milk fermented with GABA-producing Lactococcus lactis 01-7, we compared the components found in GABA-rich fermented milk with those found in control milk fermented without GABA

Lacto-Fermented Fruits and Vegetables: Bioactive Components and Effects on Human Health.

Lacto-fermented fruits and vegetables (FVs) such as kimchi, sauerkraut, and fermented olives and nonalcoholic juices have a long history as dietary staples. Herein, the production steps and microbial ecology of lacto-fermented FVs are discussed alongside findings from human and laboratory studies investigating the health benefits of these foods. Lacto-fermented FVs are enriched in beneficial live microbes and bioactive compounds, including lactic and acetic acids, phenolic compounds, bacteriocins, and amino acid derivatives such as indole-3-lactic acid, phenyl-lactic acid, and γ-aminobutyric a

Wild chimpanzees share fermented fruits.

The use of fermented foods and drinks by humans is so widespread as to be considered ubiquitous, with their use largely linked to dietary benefits and social bonding123. The discovery of a molecular adaptation in an alcohol dehydrogenase enzyme that greatly increased ethanol metabolism in the common ancestor of African apes suggests that the incorporation of fermented fruit in the human diet has ancient origins4. However, little is known about the inclusion of ethanolic foods in the diet of nonhuman great apes. Here, we document for the first time the repeated ingestion and sharing of naturall

Fermentation-Derived Metabolites Shape Host Biology to Attenuate Severity of Inflammatory and Metabolic Disease.

Fermented foods are among the few dietary interventions shown to increase gut microbiome diversity and reduce systemic inflammation in healthy adults, yet the underlying mechanisms remain poorly defined. Metabolites produced during food fermentation, termed fermentation-derived metabolites (FDMs), represent a largely uncharacterized pool of bioactive compounds that may directly mediate the physiological effects of fermented food consumption. Here, we characterize the metabolite landscape of ten vegetable-based fermented foods using metabolomics, identifying conserved enrichment of aromatic and

Physical and Chemical Properties, Flavor and Organoleptic Characteristics of a Walnut and Purple Rice Fermented Plant Drink.

In recent years, green and healthy foods have attracted much attention. Plant-based foods have become an alternative to animal-derived foods. In this study, we used walnut and purple rice as the primary raw materials to produce a fermented plant drink. The process included boiling, mixing, grinding, inoculation, fermentation, and sterilization. We then analyzed the similarities and differences between the resulting walnut and purple rice fermented plant drink and an unfermented walnut and purple rice plant drink, as well as dairy-based yoghurt, in terms of physical chemistry, flavor, and senso

[Motor variant of the unilateral neglect syndrome as a consequence of brain injury].

Development of oat-based fermented beverages started in Europe in the past 30 years with the rise of the functional foods market. It is based on the increasing consumer demand for health drinks and value added foods and on the scientific insights on the nutrition composition of oats. The main health effects of oats are attributed to their high β-glucan content, which is proved to lower blood cholesterol and the intestinal absorption of glucose thus preventing diseases like cardiovascular injury, dyslipidemia, hypertension, inflammatory state and diabetes type 2. Another important role of β- gl

Hexane-Isopropanolic Extract of Tungrymbai, a North-East Indian fermented soybean food prevents hepatic steatosis via regulating AMPK-mediated SREBP/FAS/ACC/HMGCR and PPARα/CPT1A/UCP2 pathways.

This study for the first time examined the prophylactic role of Tungrymbai, a well-known fermented soybean food of North-East India, against hepatic steatosis. Treatment with hexane-isopropanolic (2:1, HIET) but not hydro-alcoholic (70% ethanol, HAET) extract dose-dependently (0.1, 0.2, or 0.3 µg/mL) reduced the intracellular lipid accumulation as shown by lower triglyceride levels and both Oil Red O and Nile Red staining in palmitate (PA, 0.75 mM)-treated hepatocytes. Immunobloting, mRNA expression, and knock-down studies demonstrated the role of AMPK-mediated SREBP/FAS/ACC/HMGCR and PPARα/CP

The beneficial effect of fermented Spirulina platensis on reducing oxidative stress in patients with type 2 diabetes mellitus.

Oxidative stress caused by hyperglycemia can lead to the intensification of hyperglycemia and an increased risk of diabetes complications. Spirulina platensis is a potent free-radical scavenger; it has the potential to be used as a substrate for fermentation by lactic acid bacteria. This study aimed to formulate two functional foods with antioxidant capacity (yogurt containing S. platensis powder / fermented S. platensis powder) for Type 2 Diabetes Mellitus (T2DM) patients and compare the antioxidant effects in diabetic subjects. In this article, for the first time, the antioxidant effect of f

Comparative Evaluation of Functional Properties of Cow, Goat, and Donkey Milks Fermented with Lactic Acid Bacteria.

Milk represents not only a source of essential nutrients but also a versatile matrix for the development of functional foods when combined with lactic acid bacteria (LAB) fermentation. While cow milk is the most widely consumed, alternative matrices such as goat and donkey milk possess distinctive compositional features that may influence the bioactivity of fermented products. In this work, fifteen different strains belonging to LAB and bifidobacteria were initially tested for their ability to ferment cow, goat, and donkey milk. Fermented samples showing the best acidification rate were furthe

A popular fermented soybean food of Northeast India exerted promising antihyperglycemic potential via stimulating PI3K/AKT/AMPK/GLUT4 signaling pathways and regulating muscle glucose metabolism in type 2 diabetes.

This study examined the antidiabetic efficacy of popular fermented soybean foods (FSF) of Northeast (NE) India. Results showed that among different FSF, aqueous extract of Hawaijar (AEH), a traditional FSF of Manipur, NE India, significantly augmented glucose utilization in cultured myotubes treated with high glucose (HG, 25 mM). Furthermore, AEH also upregulated glucose uptake, glucose-6-phosphate level, and phopho-PI3K/phospho-AKT/phospho-AMPK/GLUT4 protein expression in HG-treated myotubes. In vivo studies demonstrated that AEH supplementation (50, 100, or 200 mg/kg body weight/day, oral ga

Impact of fermentation on the bioaccessibility and bioactivity of xanthophylls (lutein and zeaxanthin) in selected fruits and vegetables: an in vitro Caco-2 study.

Lutein and zeaxanthin are carotenoids that play a significant role in maintaining eye health and must be obtained from dietary sources, as humans cannot synthesise them de novo. However, their concentrations in foods are generally very low. This study evaluates the role of fermentation in enhancing the bioaccessibility of xanthophylls in twelve commonly consumed fruits and vegetables. In addition, it investigates the cellular uptake and bioactivity of raw and fermented kale and corn, which contain detectable levels of both lutein and zeaxanthin. The Lutein and zeaxanthin contents increased by

Dietary short-chain fatty acid intake improves the hepatic metabolic condition via FFAR3.

Fermented foods represent a significant portion of human diets with several beneficial effects. Foods produced by bacterial fermentation are enriched in short-chain fatty acids (SCFAs), which are functional products of dietary fibers via gut microbial fermentation. In addition to energy sources, SCFAs also act as signaling molecules via G-protein coupled receptors such as FFAR2 and FFAR3. Hence, dietary SCFAs in fermented foods may have a direct influence on metabolic functions. However, the detailed mechanism by dietary SCFAs remains unclear. Here, we show that dietary SCFAs protected against

Effects of ultrasonic pretreatment on the molecular conformation, gel texture, and rheological properties of oat-whey dual-protein gel induced by lactic acid bacteria fermentation.

The development of novel fermented nutritional foods based on plant-animal protein combinations remains challenging due to the limited gel- forming ability and structural regulation of dual-protein systems. This study investigated the effects of ultrasound pretreatment (0-600 W) of oat protein-whey protein dispersions before lactic acid bacteria (LAB) fermentation on the gel and structural properties of the resulting dual-protein gels (OWLG). Ultrasound pretreatment regulated protein aggregation and gel network formation in a power-dependent manner. The 300 W pretreatment group exhibited the s
