Comparative Effect of Physical Field Processing Techniques on Soybean Protein Digestibility and Probiotic Bile Acid Metabolism.

Food processing is essential for ensuring food safety, as it can alter protein structure and digestive properties, regulate the bioavailability of dietary nitrogen, and further affect gut probiotics. In this study, three physical field processing methods, namely far-infrared radiation heating, hot-air convection heating, and microwave dielectric heating, were used to systematically investigate the structure-activity relationship of processing-induced changes in protein structure and digestive characteristics on the proliferation and bile acid metabolism of Lacticaseibacillus paracasei 207-27 (

Exploring cellular fatty acid composition and intracellular metabolites of osmotic-tolerant mutant Lactobacillus paracasei NCBIO-M2 for highly efficient lactic acid production with high initial glucose concentration.

High titer, productivity and yield are the main pre-requisites of an efficient lactic acid production process. However, the hyperosmotic stress inhibits cell metabolism in the later phase of fermentation. In this study, an osmotic-tolerant mutant named Lactobacillus paracasei NCBIO01-M2 was obtained through a high-throughput screening technology, which exhibited a higher tolerance to osmotic stress due to its more flexible regulation of the unsaturated fatty acid proportion along with the intracellular compatible solute pools. The mutant successfully consumed all 248 g/L initial glucose and pr

Metagenomics to assess authenticity and traceability of Asturian Gamonéu PDO cheese: A multi-omic study.

Cheese is one of the most widely consumed fermented foods in Europe. The Principality of Asturias (northern Spain) has a broad tradition in cheese making including four cheeses under Protected Designation of Origin (PDO) status (Cabrales, Gamonéu, Casín and Afuega'l Pitu). The added value of PDO food products increases the risk of fraudulently copied cheeses reaching the market. The aim of this work was to develop a novel microbiome-based method contributing to the assessment of the authenticity of Gamonéu PDO cheese. For this purpose, cheese metagenomes and volatile organic compounds (VOCs) p

Regulation divergences of Lactobacillus fermentum PCC and Lactobacillus paracasei 431 on penicillin-induced upper respiratory tract microbial dysbiosis in BALB/c mice.

Antibiotic-induced host health imbalance during upper respiratory tract infection (URTI) treatment is an emerging issue. Studies have confirmed that Lactobacillus casei 431 and Lactobacillus fermentum PCC alleviate gut microbiome dysbiosis and improve immune response. However, their effect on the upper respiratory tract (URT) microbial structure and the correlation between the URT microbiota and immunological indicators remain unclear. To evaluate the effects of Lactobacillus strains on restoring penicillin-induced imbalance in the URT microbiome and on immune response, Lactobacillus fermentum

Reactivity of Autologous Serum IgG to Gut Microbes in Pediatric Ulcerative Colitis.

Ulcerative colitis (UC) is caused by an excessive immune response to gut microbiota. A recent study reported that the population of IgG-coated gut microbes increases with disease severity in patients with UC, but the role of these IgG-coated microbes in UC pathology is unclear. Serum, feces and colonoscopic lavage fluids (CLFs) were collected from pediatric UC (n = 13) and non-inflammatory bowel disease (IBD) patients (n = 15). Gut microbes were isolated from feces. Serum IgG reactivity to microbial cells and CLF-derived proteins was evaluated by Western blotting. Complement activation by the

Antimicrobial Activity, Genetic Relatedness, and Safety Assessment of Potential Probiotic Lactic Acid Bacteria Isolated from a Rearing Tank of Rotifers (Brachionus plicatilis) Used as Live Feed in Fish Larviculture.

Aquaculture is a rapidly expanding agri-food industry that faces substantial economic losses due to infectious disease outbreaks, such as bacterial infections. These outbreaks cause disruptions and high mortalities at various stages of the rearing process, especially in the larval stages. Probiotic bacteria are emerging as promising and sustainable alternative or complementary strategies to vaccination and the use of antibiotics in aquaculture. In this study, potential probiotic candidates for larviculture were isolated from a rotifer-rearing tank used as the first live feed for turbot larvae.
