Spinal cord injury (SCI) disturbs the autonomic nervous system and induces dysfunction in multiple organs/tissues, such as the gastrointestinal (GI) system. The neuroprotective effects of melatonin in SCI models have been reported; however, it is unclear whether the beneficial effects of melatonin are associated with alleviation of gut dysbiosis. In this study, we showed that daily intraperitoneal injection with melatonin following spinal cord contusion at thoracic level 10 in mice improved intestinal barrier integrity and GI motility, reduced expression levels of certain proinflammatory cytok

Intestinal microbiota plays a crucial role in preventing the colonization and invasion by pathogens, and disruption of microbiota may cause opportunistic infections and diseases. Pathogens often have strategies to escape from the colonization resistance mediated by microbiota, but whether they also modulate the microbiota composition is still a topic of investigation. In the present study, we addressed this question using an opportunistic pathogen, Klebsiella pneumoniae serotype K1, which is known to cause pyogenic liver abscess (KLA) in about 30% of mice. We examined the effect of K. pneumoni

Lactic acid bacteria (LAB) are promising probiotics and natural biopreservatives, yet non-dairy sources remain underexplored. We identified four LAB from sugarcane juice−Limosilactobacillus fermentum SCJ26, Lactiplantibacillus plantarum SCJ27, L. fermentum SCJ28 and Lactiplantibacillus pentosus SCJ29, evaluated through an integrated “safety-to-application” framework. Unlike single-endpoint assessments, we combined gut-adaptation (acid, bile, phenol tolerance; adhesion traits), functional bioactivities (antimicrobial, antifungal, antioxidant, anti-biofilm), safety (antibiotic susceptibility, ab

Fungal spoilage significantly affects the quality of dairy products, causing economic losses and health risks due to mycotoxin production. While physical and chemical methods are commonly used to control spoilage, chemical additives may threaten consumer food safety. Due to their antimicrobial properties, lactic acid bacteria like Lactobacillus plantarum and Lactobacillus rhamnosus are promising natural preservatives. This study evaluated the efficacy of these two bacteria to prevent mold spoilage and extend the shelf life of yogurt. Results showed that yogurt samples containing these protecti

Lactic acid bacteria (LAB), particularly members of the genus Lactobacillus, have emerged as promising biological agents with antimicrobial and anti-biofilm properties. While numerous individual studies have reported their inhibitory effects against pathogenic microorganisms, a systematic understanding that integrates their functional components, molecular mechanisms, and material-based applications remains lacking. In this review, we provide a comprehensive and component-oriented overview of LAB-mediated antimicrobial strategies. We first summarize secreted factors, including organic acids, b

We assessed frozen (-20°C) storage of lactic acid bacteria (LAB) in cryovials containing plastic beads known as Microbanks and developed a method for utilizing them in preparing starter cultures for commercial fermentations. Microbanks preserved Lactococcus lactis and Levilactobacillus brevis for 1 year, whereas Pediococcus spp. and Lactiplantibacillus pentosus and Lactiplantibacillus plantarum were viable for 22 months. The preserved LAB were resuscitated in cucumber, carrot, or sweet potato juice after 24-30 h of incubation at ambient temperature. Cucumber fermentation medium (CFM), used for

Plant-based fermented beverages are increasingly valued for their nutritional and potential health benefits. Co-fermenting nutrient-dense grains with medicinal herbs offers a promising strategy for novel functional drinks. This study investigated the mixed-culture fermentation of germinated quinoa and wolfberry with composite lactic acid bacteria. The synergistic evolution of microbiota and metabolites was elucidated via 16S rRNA sequencing and untargeted metabolomics. Fermentation was carried out at 31°C for 48 h with a wolfberry-to-quinoa ratio of 1:3 (m/m) and 0.05% inoculum. Fermentation d

This study systematically analyzed metabolite changes in quinoa after lactic acid bacteria (LAB) fermentation and the hypoglycemic mechanism of key metabolites inhibiting α-glucosidase. Mixed LAB fermentation significantly altered the metabolic profile of quinoa, and a total of 627 differential metabolites were identified, among which 471 were significantly up-regulated. After fermentation, the levels of flavonoids, phenolic acids, and amino acid derivatives increased significantly, and five new flavonoid metabolites were detected. The polyphenol extract from fermented quinoa (FQP) significant

Traditional fermented horsemeat and horsemeat sausages in Xinjiang are rich in microbial resources, mainly including lactic acid bacteria and yeasts. Although the probiotic effects of lactic acid bacteria have been widely studied, there is relatively little research on the probiotic properties of yeasts, which limits their application in functional food development. This study isolated 44 yeast strains from traditional fermented horsemeat products in Xinjiang, and 16 strains exhibiting strong tolerance to temperature, acidic pH, simulated gastrointestinal fluids, and high bile salt solution we

Some lactic acid bacteria (LAB) enzymatically decarboxylate hydroxycinnamic acids (HCAs) as a detoxification mechanism, yielding 4-vinylphenols. These compounds can in turn react with anthocyanins to form more stable chromophores, called pyranoanthocyanins, which are potential candidates as food colorants. However, LAB growth conditions differ from the ones needed for pyranoanthocyanin production. This study aimed to determine if Lactiplantibacillus plantarum, Enterococcus mundtii and Pediococcus pentosaceus strains could perform decarboxylation under acidic conditions that favor pyranoanthocy

Campylobacter and Salmonella are the two most prominent foodborne zoonotic pathogens reported in the European Union. As poultry is one of the major sources of these pathogens, it is imperative to mitigate the colonization of these pathogens in poultry. Many strains of lactic acid bacteria (LAB) have demonstrated anti-Salmonella and anti-Campylobacter characteristics to varying degrees and spectrums which are attributed to the production of various metabolites. However, the production of these compounds and consequent antimicrobial properties are highly strain dependent. Therefore, the current

Listeria monocytogenes is an important human and animal pathogen able to cause an infection named listeriosis and is mainly transmitted through contaminated food. Among its virulence traits, the ability to form biofilms and to survive in harsh environments stand out and lead to the persistence of L. monocytogenes for long periods in food processing environments. Virulence and biofilm formation are phenotypes regulated by quorum sensing (QS) and, therefore, the control of L. monocytogenes through an anti-QS strategy is promising. This study aimed to identify, by in silico approaches, proteins s

Lactic acid bacteria are microorganisms that can be present in meat, milk and fermented products, as well as fermented drinks and vegetables, and they inhibit the growth of pathogenic and decaying microorganisms. Our aim was isolating, screening, characterization and estimation of bacteriocin/s of Lactic acid bacteria isolated from Horses milk in Jeddah city, Saudi Arabia. That have antagonistic activity against a wide range of pathogenic bacteria. On MRS agar medium 16 LAB isolates were examined using the agar well diffusion method against the pathogenic bacteria (Gram-positive bacteria: S. a
