SALSA (Health, Nutrition and Sociability): Community networks for healthy eating, autonomy, and social interaction: Study protocol for a clinical randomized trial.

Loneliness is a highly relevant social determinant of health associated with depression, anxiety, reduced quality of life, malnutrition, cognitive decline, and increased morbidity and mortality. Social prescribing initiatives that connect individuals with community-based activities show potential to improve emotional and social wellbeing, although evidence, particularly regarding shared-meal programs, remains limited and inconsistent. This study aims to evaluate a community-based intervention consisting of group meals in restaurants, complemented by monthly healthy eating workshops, to improve

Carbon Dioxide Levels as a Key Indicator for Managing SARS-CoV-2 Airborne Transmission Risks Across 10 Indoor Scenarios.

Background The outbreak of severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2) in December 2019 has led to a global pandemic through contact, droplets, and aerosolized particles. Aim This study aimed to quantify the airborne transmission risk of SARS-CoV-2 in various indoor environments. Methods Using indoor carbon dioxide (CO2) levels, we estimated the probability of airborne transmission and the basic reproduction number (R0) across 10 hypothetical indoor scenarios, including a college classroom, restaurant, classical music concert, live event, city bus, crowded train, hospital room

Understanding the Relation between Establishment Food Safety Management and Salmonella Risk Factor Violations Cited during Routine Inspections.

Restaurants are a frequent setting for outbreaks and sporadic cases of Salmonella. The relationship among food safety management characteristics, compliance with procedures to reduce Salmonella-associated risk factors (as found during routine inspections), and the likelihood that an establishment has experienced a sporadic Salmonella case was assessed. Individual risk factor violations associated with Salmonella transmission pathways were identified by a literature review. Data from 546 routine inspection reports collected from July 2016 to June 2017, including 25 from restaurants that had exp

Anaphylaxis after eating Italian pizza containing buckwheat as the hidden food allergen.

A 20-year-old woman developed anaphylaxis after eating pizza on 4 different occasions in 2 restaurants. Both restaurants made their pizza dough with a mixture of wheat and buckwheat flours. A prick-to-prick test with buckwheat flour was positive. Skin prick tests and specific immunoglobulin E responses to soybean and peanut were weakly positive while the response to buckwheat was negative. We ruled out a pathogenic role for peanut and soybean because the patient usually eats both with no signs of allergic reaction. Double-blind, placebo-controlled food challenges with buckwheat flour were posi

The First Outbreak of Salmonella Enteritidis Infections Linked to Frozen Whole Kernel Corn in Canada, 2021-2022.

An investigation into an outbreak of Salmonella enterica serovar Enteritidis (S. Enteritidis) infections in Canada was initiated in October 2021 after a cluster of cases was identified through whole-genome sequencing. A total of 118 cases were identified in five provinces, related by 0-4 whole-genome multilocus sequence typing allele differences. Cases became ill between September 6, 2021 (symptom onset date) and January 27, 2022 (specimen isolation date). The median age of cases was 30 years (range: 1-89 years), and 64% were female. Five hospitalizations and two deaths were reported. Early in

Associations of eating context with dietary quality, satiety, and postprandial blood glucose in free-living Singaporean adults during 9 days of intensive digital phenotyping.

BACKGROUND: Eating behaviors are shaped by contextual factors such as where people eat, who they eat with, and their activities and mood during meals. However, data on these determinants of food choice in Asian populations are limited. We examined how eating context is associated with dietary quality, satiety, and postprandial blood glucose levels in an urban Asian population. METHODS: We analyzed data from up to 1291 Singapore residents aged 21–69 years (20,629 meals) in the Continuous Observations of Behavioral Risk Factors in Asia (COBRA) study. Over nine consecutive days, participants comp

Built environment and the metropolitan pandemic: Analysis of the COVID-19 spread in Hong Kong.

The COVID-19 reported initially in December 2019 led to thousands and millions of people infections, deaths at a rapid scale, and a global scale. Metropolitans suffered serious pandemic problems as the built environments of metropolitans contain a large number of people in a relatively small area and allow frequent contacts to let virus spread through people's contacting with each other. The spread inside a metropolitan is heterogeneous, and we propose that the spatial variation of built environments has a measurable association with the spread of COVID-19. This paper is the pioneering work to

COVID-19 social distancing and the US service sector: What do we learn?

This study investigates the impact of COVID-19 social distancing on the US service sector. Results from four industry indexes (hotels, entertainment, restaurants and airlines) indicate that conditional correlations among index pairs exhibited substantial increases. Iterated Cumulative Sums of Squares (ICSS) tests in dynamic conditional correlations show that while the relationship between airlines and entertainment venues is unstable, restaurants and hotels demonstrate stable co-movement. Markov regime-switching regression analysis suggests the pandemic is affecting mainly the entertainment an

Associations of Food Outlet Densities with Obesity Measures Identify Fish and Chip Shops as a Uniquely Important Problem.

Increases in the number of food outlets have been proposed as a key factor driving obesity. This study aimed to investigate the association between the densities of food establishments serving meals (excluding supermarkets and grocery stores), with body mass index (BMI), waist to hip ratio (WHR) and percentage of body fat among middle-aged adults in the UK. BMIs, WHR, %fat and socioeconomic factors were obtained from 456,079 individuals from the UK Biobank and averaged across 923 postcode districts (PD). The number of Fast-Food Restaurants (FFRs), Full-Service Restaurants (FSRs), delivery shop

Outbreaks of food borne diseases in the Lazio region, Italy: the results of epidemiological field investigations.

BACKGROUND: More thorough information about risks, exposures and vehicles of food borne diseases can be obtained from epidemiological field investigations than from infectious disease reports or laboratory data. METHODS: We analysed the results of 410 field investigations of food borne disease outbreaks reported from 1996 to 2000 and conducted as cohort studies. RESULTS: The incidence of food borne outbreaks increased from 0.8/100,000 in 1996 to 2.0 in 1999, as did the incidence of salmonellosis (from 16/100,000 to 21 in the same period) and diarrhoea episodes reported by laboratories (from

The impacts of product characteristics and regulatory environment on smokers' preferences for tobacco and alcohol: Evidence from a volumetric choice experiment.

OBJECTIVE: Concurrent use of alcohol and cigarettes is well-documented in the literature. However, it is unclear how e-cigarette regulations in a growing number of localities impact the use of tobacco and alcohol in the US. This study aims to evaluate the impacts of excise taxes, tobacco use restrictions in restaurants/bars, and availability of alcohol flavor in e-cigarettes on tobacco consumption, and their cross impacts on alcohol consumption. METHOD: A total of 181 US adult smokers who were using e-cigarettes and consuming alcohol participated in online volumetric choice experiments and re

Incidence of enteric bacterial pathogens in water found at the bottom of commercial freezers in calabar, southeastern Nigeria.

Bacteriological analysis of water that accumulates at the bottom of freezers in restaurants when the power was cut in Calabar, southeastern Nigeria, was carried out using standard procedures. Mean heterotrophic bacterial counts and Escherichia coli counts ranged from 3.1 +/- 0.02 to 7.1 +/- 0.30 x 10(4) cfu/ml and 0.2 +/- 0.10 to 0.6 +/- 0.50 x 10(4) cfu/ml, respectively, indicating heavy bacterial contamination whose source was mostly fecal. There was no significant difference (p > 0.05, 0.01) in bacterial counts between freezers. Some biochemically identified enteric bacterial pathogens were

The ecology of eating: smaller portion sizes in France Than in the United States help explain the French paradox.

Part of the "French paradox" can be explained by the fact that the French eat less than Americans. We document that French portion sizes are smaller in comparable restaurants, in the sizes of individual portions of foods (but not other items) in supermarkets, in portions specified in cookbooks, and in the prominence of "all you can eat" restaurants in dining guides. We also present data, from observations at McDonald's, that the French take longer to eat than Americans. Our results suggest that in the domain of eating, and more generally, more attention should be paid to ecological factors, ev

Causes of eczema in the food industry.

In a retrospective study covering a five-year period, 3664 consecutive patients suspected to suffer from contact dermatitis were patch tested in a private dermatology clinic. 180 of these patients had food handling occupations; they were employed in restaurant or institutional kitchens, fish factories, bakeries, or slaughterhouses. 25 of the 180 patients had protein dermatitis caused by meat or vegetables. This particular dermatitis was most common among restaurant personnel who make openface sandwiches and fish factory workers. 59 of the 180 patients had positive patch tests: 9 of these were

An analysis of diet sustainability among different dietary patterns in the Portuguese adult and elderly population.

PURPOSE: Dietary patterns influence human and environmental health. Shifts toward convenience and ready-to-eat ultra-processed foods have contributed to the rising prevalence of malnutrition, chronic disease, and ecological harm. This study examined the associations between dietary patterns and diet sustainability among Portuguese adults. METHODS: Data from 2287 individuals aged 18-84 years were obtained from the last National Food, Nutrition, and Physical Activity Survey (2015-2016). Three dietary patterns were identified based on food composition and processing: Traditional, Diet Concerns,

Vital signs: food categories contributing the most to sodium consumption - United States, 2007-2008.

BACKGROUND: Most of the U.S. population consumes sodium in excess of daily guidelines (<2,300 mg overall and 1,500 mg for specific populations). Excessive sodium consumption raises blood pressure, which is a major risk factor for heart disease and stroke, the nation's first and fourth leading causes of death. Identifying food categories contributing the most to daily sodium consumption can help reduction. METHODS: Population proportions of sodium consumption from specific food categories and sources were estimated among 7,227 participants aged ≥2 years in the What We Eat in America, National
