Harnessing Bacillus amyloliquefaciens for Amazake Production: Comparison with Aspergillus oryzae Amazake for Metabolomic Characteristics, Microbial Diversity, and Sensory Profile.

Amazake is a traditional, sweet, non-alcoholic Japanese beverage typically produced through koji fermentation by the fungus Aspergillus oryzae. However, alternative microorganisms such as Bacillus amyloliquefaciens offer potential advantages and novel possibilities for producing similar fermented beverages. This study aimed to replicate the ancestral beverage of amazake by replacing A. oryzae (W-20) with B. amyloliquefaciens (NCIMB 12077) and comparing their fermentation processes and resulting products. Our results show that the production of amazake with B. amyloliquefaciens (ABA) is not onl

Alcohol and emotion: Analyzing convergence between facially expressed and self-reported indices of emotion under alcohol intoxication.

OBJECTIVE: Emotion measurement is central to capturing acute alcohol reinforcement and so to informing models of alcohol use disorder etiology. Yet our understanding of how alcohol impacts emotion as assessed across diverse response modalities remains incomplete. The present study leverages a social alcohol-administration paradigm to assess drinking-related emotions, aiming to elucidate impacts of intoxication on self-reported versus behaviorally expressed emotion. METHOD: Participants (N = 60; Mage = 22.5; 50% male; 55% White) attended two counterbalanced laboratory sessions, on one of which

Synergistic induction of cytochrome P450 by ethanol and isopentanol in cultures of chick embryo and rat hepatocytes.

The purpose of this study was to investigate whether isopentanol, the most abundant higher chain alcohol in alcoholic beverages, contributes to induction of different forms of hepatic P450s associated with consumption of these beverages. We have previously reported that ethanol and isopentanol each induce P450 2H1/2 in cultured chick hepatocytes and that ethanol induced P450 2B1/2, as well as P450 2E, in cultured rat hepatocytes. Here we investigated the induction of P450 by isopentanol alone and in combination with ethanol in cultured chick and rat hepatocytes. The forms of induced P450 were

[The relationship between the popular beverages in Korea and reported postprandial heartburn].

BACKGROUND/AIMS: The aim of this study was to investigate the frequency of heartburn produced by beverages available in Korea and to clarify the mechanism causing heartburn. METHODS: We measured pH, titratable acidity, and osmolality of 35 beverages in vitro and correlated them with the severity of heartburn reported by questionnaire in 382 patients from November 2004 to June 2005. RESULTS: Coffee (1.15) and soju (1.12) showed the highest heartburn score, while oolong tea (0.17) and carrot juice (0.18) showed the lowest heartburn score among all beverages. Titratable acidity of citrus juices

Dual-mode SERS and colorimetric detection of cyanide in baijiu (Chinese distilled liquor).

In recent years, the issue of excessive cyanide levels in fermented alcoholic beverages has raised widespread public concern regarding food safety. Technologies enabling rapid detection of cyanide ions (CN-) in alcoholic matrices have consequently emerged as a key research focus. This study presents a novel dual-mode sensing platform based on Au@Ag nanocubes and Au@Ag-graphene oxide (GO) nanocomposites for ultrasensitive and selective cyanide detection in Chinese baijiu (traditional Chinese distilled liquor with multiple types and flavours). The hybrid substrates exploit the strong localized s

Nucleus accumbens functional connectivity changes underlying alcohol expectancies in bipolar disorder and prospective alcohol outcomes: a within-subject randomized placebo-controlled alcohol administration fMRI study.

INTRODUCTION: Alcohol use disorder (AUD) occurs at higher rates in individuals with bipolar disorder compared to the general population. A paucity of data are available on specific mechanisms that may contribute to bipolar and AUD co-occurrence. We recently reported differences in alcohol expectancies and placebo response during alcohol administration in early-stage bipolar disorder, compared to healthy young adults. This current report investigated subjective and neural response following placebo beverage consumption in young adults with bipolar disorder. METHODS: As part of a within-subject

COVID-19 pandemic and methanol poisoning outbreak in Iranian children and adolescents: A data linkage study.

BACKGROUND: During the first wave of COVID-19, many Iranians were poisoned by ingesting hand sanitizers and/or alcoholic beverages to avoid viral infection. To assess whether the COVID-19 pandemic resulted in an increased prevalence of accidental hand sanitizer/alcoholic beverage exposure in children and adolescents, we compared pediatric hospitalization rates during COVID-19 and the previous year. For poisoning admissions during COVID-19, we also evaluated the cause by age and clinical outcomes. METHODS: This retrospective data linkage study evaluated data from the Legal Medicine Organizatio

[Major hypokalemia with rhabdomyolysis secondary to the intake of a nonalcoholic aniseed aperitif].

A case of exogenous hypermineralocorticism secondary to absorption of an alcohol-free liquorice beverage is reported here. The patient was a 53 year old man with known alcoholic liver cirrhosis who had stopped drinking alcohol one year earlier. He was admitted to the hospital for fever and myalgia without hypertension. Laboratory tests showed severe hypokalemia (1.7 mmol/l), metabolic acidosis and enzyme abnormalities compatible with rhabdomyolysis. Urinary potassium excretion was high. Plasma renin activity and aldosterone levels were low. Symptoms were those of exogenous hypermineralocortici

Lifetime and baseline alcohol intake and risk of colon and rectal cancers in the European prospective investigation into cancer and nutrition (EPIC).

Alcohol consumption may be associated with risk of colorectal cancer (CRC), but the epidemiological evidence for an association with specific anatomical subsites, types of alcoholic beverages and current vs. lifetime alcohol intake is inconsistent. Within the European Prospective Investigation into Cancer and Nutrition (EPIC), 478,732 study subjects free of cancer at enrolment between 1992 and 2000 were followed up for an average of 6.2 years, during which 1,833 CRC cases were observed. Detailed information on consumption of alcoholic beverages at baseline (all cases) and during lifetime (1,44

Evaluating alleged drinking after driving--the hip-flask defence. Part 2. Congener analysis.

The second part of this review describes the principles and practice of forensic congener analysis as an alternative way to evaluate claims of drinking alcohol after driving. Congener analysis was developed, perfected and practised in Germany as a way to evaluate hip-flask defences. This kind of defence challenge arises frequently when the drunk driving suspect is not apprehended at the wheel and especially after hit-and-run incidents. Besides ethanol and water, alcoholic beverages contain trace amounts of many other low-molecular substances, known collectively as the congeners, which impart t

Evaluating the Efficiency of Areke Distillation Process Using the Traditional Method of Distillation and Double Pipe Distillation: A Traditional Ethiopian Beverage.

BACKGROUND: Areke is a popular traditional distilled beverage in semi-urban and rural areas in Ethiopia. Traditional areke distillation uses an open-fire system that consumes a lot of firewood and produces a large amount of indoor air pollution. METHODS: The areke distiller apparatus (heat exchanger, condenser, energy-efficient stoves, storage tanks, and local areke extraction apparatus) was manufactured by technicians (welders). Different types of grains (wheat, millet, lupine, barley, and maize) were purchased from a neighborhood market. The traditional method of areke fermentation was prep

Alcohol and Atrial Fibrillation: An Update and New Perspectives.

In the Western world, sales of alcoholic beverages are skyrocketing. Alcohol (ethanol) is consumed for its transient euphoric effects but is a risk factor for the development of heart disease. Here, we review the possible association between alcohol consumption and atrial fibrillation. Using a familiar analogy, we propose that atrial fibrillation is the mere tip of an iceberg (alcohol-associated heart disease). Our concern is that the many research studies on the effects of ethanol on the heart have produced inconsistent results. These include studies of individuals drinking only moderate amou

Beverage patterns, blood pressure, and proteinuria among West Africans with chronic kidney disease: a cross-sectional analysis of the diet, CKD, and apolipoprotein L1 study.

INTRODUCTION: Beverage intake is an important yet understudied contributor to blood pressure (BP) and proteinuria. This is particularly relevant in sub-Saharan Africa, where rapid shifts toward sugar-sweetened beverages (SSBs) and ultra-processed beverages, driven by affordability and aggressive marketing, are occurring alongside a high burden of Chronic Kidney Disease (CKD) within resource-limited health systems. Additionally, there are cultural differences within African populations that make beverage patterns in sub-Saharan Africa differ across populations and from Western cultures. METHOD
