Exploring the potential of tocols and retinoids in authenticating pasture-derived sheep milk and cheese.

This study investigated the potential of tocols and retinoids to differentiate sheep milk and cheese from concentrate-feeding indoor farms and pasture-feeding extensive farms. A total of 94 milk and 90 cheese samples collected from intensive and extensive commercial farms were analyzed using high-performance liquid chromatography to quantify α- and γ-tocopherol, α- and β-tocotrienol, retinyl palmitate, and retinol. Higher concentrations of tocols and retinoids were found in the samples from extensive compared with intensive farms. The results of discriminant analysis showed that tocols and ret

Swiss cheese Is Essential for Maintaining Spermatogenesis and the Proper Functioning of Biological Barriers in Drosophila.

Functional changes in PNPLA6 (Patatin-like phospholipase domain-containing protein 6), caused by gene mutations or inhibition by organophosphates, affect the levels of various phospholipids. In humans, this leads to organophosphorus compound-induced delayed neurotoxicity syndrome (OPIDN) and a number of rare diseases. In this study, we analyze the role of the Swiss cheese gene (sws), an ortholog of PNPLA6, in spermatogenesis in Drosophila melanogaster. We report that the sws1 mutation affects membrane remodeling during spermatid individualization, as well as spermatid coiling during the late s

Exploring the effects of cheese intake on cholelithiasis through biomarkers: A Mendelian randomization study.

This study assesses the causal relationship between intake of cheese and cholelithiasis through the analysis of relevant biomarkers using Mendelian randomization. Genetic variants associated with cheese intake were employed as instrumental variables to assess potential causal effects. Data from the OpenGWAS project and FinnGen Biobank were used, including biomarkers related to blood cells, blood biochemistry, and blood pressure. The analysis revealed that cheese intake significantly influences biomarkers such as apolipoprotein B, direct bilirubin, C-reactive protein, cystatin C, IGF-1, and sex

Tryptamine accumulates in cheese mainly via the decarboxylation of tryptophan by lactic acid bacteria.

Few microorganisms are known to decarboxylate L-tryptophan, thereby producing tryptamine, a neuromodulator biogenic amine (BA) that can accumulate in cheese. Since lactic acid bacteria (LAB) are largely responsible for the production of other BA in this product, it was hypothesised that they would also be the main agents of tryptamine production. Using a rapid test based on the natural fluorescence of tryptamine, thousands of bacterial isolates from several cheese samples were screened. Only 1.4% of all isolates (43 out of 2982) were able to synthesise tryptamine and secrete it into the cultur

Survival of Brucella abortus RB51 and S19 Vaccine Strains in Fresh and Ripened Cheeses.

Brucellosis is a zoonotic infection caused by the consumption of contaminated raw milk and dairy products. This study aims to compare survival rates of Brucella abortus RB51 and S19 vaccine strains to that of virulent B. abortus 2308 strain during the manufacture of fresh and ripened cheeses. To do this, we inoculated fresh pasteurized milk with B. abortus RB51, S19, or 2308 at a 6 × 108 colony-forming unit per milliliter concentration during the cheese making process. Cheese was manufactured at room temperature, then, fresh cheeses were conserved at either 4°C or 25°C for 7 days, while ripene

Effect of the incorporation of β-galactosidase in the GOS production during manufacture of soft cheese.

Galactooligosaccharides (GOS) are non-digestible oligosaccharides with recognized prebiotic role. The present study aims to evaluate a β-galactosidase from K. lactis during soft cheese making and to analyse the impact on carbohydrates metabolism, proteolysis, and volatile compounds production, physicochemical and microbiological characteristics of the product. The enzyme was added to cheese milk (fluid milk plus whey powder) before (40 min.) or simultaneously of the starter addition (Ep and E treatments, respectively); cheese without enzyme addition was also made (C treatment). Also, we charac

Detection of mycobacterium avium subsp. paratuberculosis in cheeses from small ruminants in Tuscany.

Paratuberculosis is an infectious disease which affects mainly domestic and wild ruminants caused by Mycobacterium avium subsp. paratuberculosis (Map). Map has been associated with human diseases like Crohn disease, type-1 diabetes, sarcoidosis, multiple sclerosis and Hashimoto's thyroiditis. The aim of this study was to determine the level of Map positivity of cheeses produced in Tuscany (Italy) as an indication of human exposure to the specific pathogen. Sampling was focused on artisanal cheeses produced without commercial starter culture from raw sheep or goat milk, on small-scale farms. Sa

Detection and survival of Toxoplasma gondii in milk and cheese from experimentally infected goats.

The consumption of unpasteurized goat cheese and goat's milk has been suggested as a risk factor for toxoplasmosis in humans. In the present study, detection and survival of Toxoplasma gondii in milk and cheese was studied by bioassay in mice (milk) and in cats (cheese). Eight goats were inoculated orally with 300 to 10,000 oocysts of T. gondii strain TgGoatUS26. Milk samples were collected daily up to 30 days postinoculation and bioassayed in mice and cats. For mouse bioassay, 50 ml of milk samples were centrifuged, and the sediment was inoculated subcutaneously into mice. Mice were tested fo

Cheese whey as substrate of batch hydrogen production: effect of temperature and addition of buffer.

The aim of this work was to evaluate the effect of buffer addition and process temperature (ambient and 35°C) on H2 production in batch fermentation of cheese whey (CW). When the H2 production reached a plateau, the headspace of the reactors were flushed with N2 and reactors were re-incubated. Afterwards, only the reactors with phosphate buffer showed a second cycle of H2 production and 48% more H2 was obtained. The absence of a second cycle in non-buffered reactors could be related to a lower final pH than in the buffered reactors; the low pH could drive the fermentation to solvents productio

The occurrence of Staphylococcus aureus on a farm with small-scale production of raw milk cheese.

In recent years, the small-scale production of raw milk products has increased in Norway, and there is some concern that such foods may pose a risk of staphylococcal food poisoning to consumers. The aim of the study was to evaluate potential sources of contamination of raw milk cheese with Staphylococcus aureus on a bovine dairy farm with small-scale production. Samples for bacteriological analyses (n = 144) were collected from the animals, the environment, processing equipments, from humans, and from cheeses at various stages of production. Staphylococcus aureus was isolated from 10 of 11 cow

Anaphylaxis to sheep's milk cheese in a child unaffected by cow's milk protein allergy.

UNLABELLED: A 5-year-old atopic boy unaffected by cow's milk protein allergy experienced several anaphylactic reactions after eating food containing "pecorino" cheese made from sheep's milk. Prick-prick tests were strongly positive to sheep's buttermilk curd and 'pecorino' sheep's cheese. Skin prick tests to fresh sheep's milk and to goat's milk were also positive, whereas they were negative to all cow's milk proteins, to whole pasteurized cow's milk and to cheese made from cow's milk. Specific IgE antibodies were negative to all cow's milk proteins. CONCLUSION: Sheep's milk and cheese derive

Sporadic case of listeriosis associated with the consumption of a Listeria monocytogenes-contaminated 'Camembert' cheese.

Listeria monocytogenes is an intracellular gram-positive organism responsible for severe infections in both humans and animals. Whereas the food-borne transmission of listeriosis was demonstrated in several outbreaks, most cases of listeriosis occur sporadically and are rarely linked with consumption of contaminated foods. In this paper a case of septicaemia with L. monocytogenes in a 73-year-old immunocompromised man is described. Evidence for the association of this case of listeriosis with the consumption of a contaminated 'Camembert' cheese is provided by serotyping, esterase typing, DNA m
