Sucrose and starch intake contribute to reduced alveolar bone height in a rodent model of naturally occurring periodontitis.

While there is a burgeoning interest in the effects of nutrition on systemic inflammatory diseases, how dietary macronutrient balance impacts local chronic inflammatory diseases in the mouth has been largely overlooked. Here, we used the Geometric Framework for Nutrition to test how the amounts of dietary macronutrients and their interactions, as well as carbohydrate type (starch vs sucrose vs resistant starch) influenced periodontitis-associated alveolar bone height in mice. Increasing intake of carbohydrates reduced alveolar bone height, while dietary protein had no effect. Whether carbohydr

Selected Properties of a TPS/PA12 Composite Material Produced in a Two-Stage Method.

The world economy is struggling with the increasing pollution of the natural environment with non-biodegradable synthetic polymers produced from petroleum products. This fact has prompted research on the use of natural renewable polymers. Starch is one of the polymers that has already been used as an additive to synthetic polymers; however, its use is associated with a problem arising from the incompatibility of hydrophilic starch with hydrophobic synthetic polymers. For these reasons, other authors have not used more than 20% of the starch component in synthetic materials. In this work, a res

Modulation of highland barley noodles quality by water-soluble polyphenols epigallocatechin gallate and ferulic acid.

Barley flour is valued for its unique texture and resistance to starch digestion. However, its high bran content often compromises food quality. To address this, the effects of incorporating epigallocatechin gallate (EGCG) and ferulic acid (FA) into whole grain barley noodles were investigated. In terms of digestibility, resistant starch content increased from 24% (Control) to 37% (0.5% EGCG) and 26% (0.5% FA), while rapidly digestible starch decreased from 62% to 51% and 59%, respectively. These results indicate that EGCG and FA enhanced the anti-digestive property of noodles. Analyses using

How hydrocolloid molecular features modulate lotus rhizome starch digestibility and retrogradation: A structure-function study.

Lotus rhizome starch (LS) has limited application owing to its high digestibility and pronounced retrogradation tendency. To elucidate how hydrocolloid molecular architecture regulates LS functionality after gelatinization, fully gelatinized LS was blended with pre-hydrated xanthan gum (XG), flaxseed gum (FG), guar gum (GG), or carrageenan (CA). Multiscale structural and functional analyses, including microstructure, nanoscale morphology, rheology, and water distribution, were performed to evaluate the ability of hydrocolloids to spatially integrate with the gelatinized LS matrix and organize

Impact of butyric acid modification on the structural and functional properties of rice starch.

Rice is a food with a high starch content, comprising over 75% of its composition. However, prolonged and excessive consumption of this cereal may lead to elevated blood glucose levels, which can increase the risk of obesity, type 2 diabetes, and cardiovascular disease. Butyric acid (BA), the primary energy source for colonic epithelial cells, exhibits the highest utilization rate among short-chain fatty acids, underscoring its importance for human health. In this study, rice starch butyrate (RSB) samples were synthesized using the aqueous phase process, with broken rice starch (RS) and butyri

Pyrraline Formation Modulated by Sodium Chloride and Controlled by Encapsulation with Different Coating Materials in the Maillard Reaction.

Advanced glycation end products (AGEs), which are present in heat-processed foods, have been associated with several chronic diseases. Sodium chloride (NaCl) modulates the formation of furfurals and acrylamide in the Maillard reaction; however, the effects of NaCl on AGE formation are inconsistent. In this study, we investigated the effects of NaCl on pyrraline formation using glucose-lysine model systems. NaCl, especially at 0.50%, promoted Maillard browning and pyrraline formation, with a simultaneous increase in the 3-deoxyglucosone concentration. To reduce the rate of pyrraline formation,

Effects of milling methods on the properties of frozen corn dough: Insights into starch structural and physicochemical properties under repeated freeze-thaw cycles.

The effects of dry, semi-dry, and wet milling on the multi-scale structure and physicochemical properties of corn dough under freeze-thaw cycles(F/T) were investigated. The semi-dry milled corn dough with low damaged starch content (1.35%) and uniformly distributed starch granules, readily formed a stable starch-protein matrix. It restricted water migration and accumulation, exhibited the highest relative crystallinity (20.40%), and maintained structural stability during F/T. After F/T, its hardness increased (136.0-224.0 N). High damaged starch (6.03%) and large granules (D50 = 19.14 μm) in d

Effect of edible ethanol-induced redistribution of gluten proteins on fresh noodle quality and starch digestibility.

This study explored how edible ethanol (0-5 %) affects fresh noodle quality and starch digestibility by examining its impact on gluten protein structure and redistribution. Ethanol treatment reduced dough mixing stability and extensibility, while increasing tensile resistance and stickiness. Microscopic structure images revealed ethanol-induced migration and redistribution of gluten/gliadin fractions. Chromatography showed partial solubilization and depolymerization of gliadin, enhancing its ability to coat starch granules. This led to increased starch enthalpy change (ΔH) and crystallinity, r

Inhibition of starch digestion by phenolic acids with a cinnamic acid backbone: Structural requirements for the inhibition of α-amylase and α-glucosidase.

This study investigated the inhibition mechanism of cinnamic acid-based phenolic acids (cinnamic acid: CIA, 3,4-dimethoxy cinnamic acid: 3,4-mCIA, caffeic acid: CA, ferulic acid: FA) on starch digestion. CA, FA, and 3,4-mCIA contributed to reducing the rapidly digested starch content and increasing the resistant starch content. The enzyme activity inhibition results responded that the four phenolic acids inhibited α-amylase activity better than α-glucosidase. The order of IC50 against α-amylase and α-glucosidase was CA > FA > 3,4-mCIA > CIA. Phenolic acid's benzene ring formed conjugated Pi-sy

Thermal stability and in vitro digestive behavior of Pickering emulsion stabilized by high-amylose starch nanocrystals.

In this study, high-amylose starch (HAS) was processed using sulfuric acid-ultrasonic cross-linking to produce high-amylose starch nanocrystals (HASNC). These nanocrystals were used to stabilize Pickering emulsions and assess their effectiveness in encapsulating β-carotene. Normal starch nanocrystals (NSNC) were prepared similarly for comparison. The HASNC retained key HAS properties, such as heat and enzyme resistance, providing several advantages to HASNC-stabilized emulsions. First, after exposure to 100 °C heat and in vitro tests simulating the mouth and stomach, the HASNC-stabilized emuls

Mechanisms, Functions, Research Methods and Applications of Starch-Polyphenol Complexes in the Synergistic Regulation of Physiological Parameters.

Metabolic illnesses such as obesity, type 2 diabetes and hyperuricemia are becoming more common, driving intensified research into nutritional interventions through targeted dietary modifications as a primary preventive strategy. The apparent fluctuation in blood glucose value is modulated by the digestive behavior of starch. Moreover, polyphenols-historically considered to be anti-nutrients due to their inhibition of digestive enzymes and sometimes astringent taste-can be used to significantly improve the functional properties of starch. This can be achieved primarily through α-amylase inhibi

Regulation of composite gel properties of buckwheat starch by insoluble dietary fiber from large-leaf yellow tea and its application in 3D printing.

This study constructed BS-TIDF composite systems with different levels of addition using large-leaf yellow tea insoluble dietary fiber (TIDF) and buckwheat starch (BS), and investigated their physicochemical properties, in vitro digestibility, and 3D printing characteristics. Dietary fiber is generally resistant to digestion and absorption in the upper gastrointestinal tract and therefore passes through the digestive system largely intact, contributing to satiety, accelerating intestinal transit, and increasing fecal bulk. The results showed that with increasing TIDF content, the L⁎ value of t

Heat-shock and soaking modulate parboiled rice starch structure and digestibility via in situ amylase hydrolysis.

This study examines the activation of endogenous amylase by heat-shock pretreatment during soaking and its effects on the structure and digestibility of parboiled rice starch. The results suggested that moderate heat-shock treatment (80 °C for 1-3 min or 100 °C for 20-60 s) increased amylase activity by 80%-270%, and this activation was associated with heat-induced release of enzyme proteins. During soaking, the enhanced in situ enzymatic hydrolysis preferentially attacked the amorphous regions of starch granules, leading to an initial reduction in crystallinity. However, the subsequent parboi

Porous corn starch granules as effective host matrices for encapsulation and sustained release of curcumin and resveratrol.

Type 2 Diabetes Mellitus (T2DM) is a carbohydrate-rich diet-regulated ailment with carbohydrates digested and absorbed rapidly. Hence, modulating carbohydrate digestion is warranted; to this end, polyphenols from plant sources are handy. However, polyphenols' instability and low bioavailability limit their wholesome use, and thus, encapsulating them into an inexpensive and suitable wall material would be the best strategy. Herein, the potential of porous starch granules is demonstrated. Curcumin and resveratrol were chosen as the test polyphenols due to their proven health benefits, and porous

Diet and the gut-lung axis in cystic fibrosis - direct & indirect links.

Cystic fibrosis (CF) is a multisystem, autosomal, recessive disease primarily affecting the lungs, pancreas, gastrointestinal tract, and liver. Whilst there is increasing evidence of a microbial 'gut-lung axis' in chronic respiratory conditions, there has been limited analysis of such a concept in CF. We performed a comprehensive dietary and microbiota analysis to explore the interactions between diet, gastrointestinal microbiota, respiratory microbiota, and clinical outcomes in children with CF. Our results demonstrate significant alterations in intestinal inflammation and respiratory and gas

CqRVE5-CqHAI3 is the potential key gene module regulating pre-harvest sprouting in quinoa.

The CqRVE5 - CqHAI3 gene module is a key regulator of seed germination at harvest, and it negativelyregulates germination by infl uencing starch metabolism. Quinoa is a crop that is both resistant to adversity and highly nutritious. Pre-harvest sprouting (PHS) significantly affects quinoa yield and quality, underscoring the need to understand the mechanisms underlying quinoa's resistance to PHS. In this study, the quinoa R157 exhibited significantly greater resistance to PHS than S222. Quinoa resistance to PHS is closely associated with gibberellin/abscisic acid (GA/ABA), amylase activity, and

Preparation and Mechanism Analysis of Boiling Resistance of the Fresh Alum-Free Sweet Potato Vermicelli Containing Gliadin Fractions.

Alum, an essential additive in sweet potato vermicelli (SPV) production, is harmful to health. To eliminate the harm to the human body caused by alum in sweet potato vermicelli, and considering the different viscous properties of gliadin fractions, an experiment was performed to replace alum with gliadin fractions to enhance the boiling resistance of SPV in this study. The results showed that the longest boiling-resistant time of fresh SPV extended to 34.31 min when swelling the dough binder at 50 °C for 5 h, adding a 2% complex of ω-gliadin + αβγ-gliadin at a ratio of 1:1, and mixing at 70 °C

Inhibition of digestive enzymes with EGCG-loaded inverse alginate beads: a strategy for modulating starch digestion.

This study developed epigallocatechin gallate (EGCG)-loaded alginate-starch liquid-core beads (LCBEx) as a novel approach to modulating starch digestion. The incorporation of EGCG noticeably altered the physicochemical properties of the beads, leading to a reduction in average diameter and porosity, and the emergence of a more dense mesh architecture. Mechanism studies revealed that the EGCG-enriched beads (LCBE1%) strongly quenched the innate fluorescence property of α-amylase and α-glucosidase via a mixed quenching mechanism (both dynamic and static).
