Wet-Heating-Induced Maillard Conjugation Combined With Rosemary Extract Co-Encapsulation Improves the Stability of Complex-Coacervated Citronella Oil Microcapsules.

A combined treatment integrating black bean protein isolate-gum Arabic (BBPI-GA) wet-heating conjugation and rosemary extract co-encapsulation was employed to improve the physicochemical characteristics and stability of citronella oil microcapsules. Changes in color, turbidity, molecular weight, and protein secondary structure confirmed the formation of BBPI-GA conjugates, with an optimal heating time of 1 h. Wet-heating conjugation increased the encapsulation efficiency (EE) of citronella oil from 91.97% (non-conjugated control) to 97.62% and produced microcapsules with a denser morphology an

Debaryomyces hansenii alone and in combination with plant extracts reduce ochratoxin A in dry-cured "chorizo".

The presence of ochratoxin A (OTA) in dry-cured sausages is a current hazard. To control its contamination, the use of biocontrol agents (BCAs) of plant and microbial origin as anti-ochratoxigenic strategies is being carried out. The aim of this study was to evaluate the anti-ochratoxigenic effect of rosemary essential oil (REO), acorn shell extract (AE) and Debaryomyces hansenii against OTA production by Penicillium nordicum in the Spanish dry-cured sausages "chorizo". For this purpose, BCAs were individually and in combination inoculated in the presence of P. nordicum on the surface of porti

Carnosic Acid Directly Targets STING C-Terminal Tail to Improve STING-Mediated Inflammatory Diseases.

cGAS (cyclic GMP-AMP synthase)-STING (stimulator of interferon genes) signaling plays a vital role in innate immunity, while its deregulation may lead to a wide variety of autoinflammatory and autoimmune diseases. It is essential to identify specifically effective lead compounds to inhibit the signaling. Herein, it is shown that carnosic acid (CA), an active ingredient of medicinal plant Rosmarinus officinalis L., specifically suppressed cGAS-STING pathway activation and the subsequent inflammatory responses. Mechanistically, CA directly bound to STING C-terminal tail (CTT), impeded the recrui

"The herbs that have the property of healing...,": the phytotherapy in Don Quixote.

Don Quixote, the most outstanding novel of the Spanish literature, represents a documentary source widely used among those specialists who intend to deepen in the knowledge of the late Renaissance society. In this sense, Don Quixote has been also studied from a medical perspective, including a general therapeutical view (oils, ointments, balms, poultices, syrups and other pharmacy preparations). We have tackled Don Quixote from the phytotherapeutic and ethnopharmacological perspective, a barely explored field. In this work, we intend to study the medicinal plants used during the Cervantine tim
