Identification of key taste active compounds and potential umami peptides in soft-boiled chicken based on taste recombination and virtual screening.

Soft-boiled chicken, a traditional Chinese delicacy renowned for its distinct umami and overall taste, was investigated to identify key taste-active compounds and potential umami peptides. Using taste recombination combined with omission/addition tests, six compounds (sodium ion, chloride ion, inosine-5'-monophosphate (IMP), lactic acid, succinic acid and glutamic acid) were identified as key taste-active compounds. Through the mass spectrometry and virtual screening 14 potential umami peptides were identified, with 13 being reported for the first time. Molecular docking analysis revealed that

Taste processing in autism spectrum disorder: A translational scoping review.

Autism spectrum disorder (ASD) is a neurodevelopmental condition characterized by persistent challenges in social communication and restricted/repetitive behaviors, including sensory atypicalities. Taste processing is critical for assessing the sensory and hedonic properties of food; however, it remains understudied in ASD, which may limit our understanding of the disorder's links to selective eating and nutritional deficits. This scoping review on autistic gustatory functioning followed a predefined protocol. We conducted searches across four databases and identified 37 studies involving huma

From immersion to emotion: virtual reality as the new frontier of sensory science.

This Letter to the Editor expands on Da Silva et al. (2025), who showed that realistic virtual environments enhance emotional engagement and sensory acceptance during beer consumption. We argue that virtual reality (VR) bridges experimental control and real-world context, enabling deeper exploration of emotional dynamics in food perception. However, immersive research requires ethical and methodological caution regarding discomfort and cultural variability. Moreover, protocol standardization, overing exposure time, scenario calibration, and user familiarity is essential to ensure comparability

Seeing is misbelieving: Consumers wrongly believe that unhealthy food tastes better when there is more of it.

Recent studies have shown that people can believe that unhealthy foods taste better, even if healthy and unhealthy foods are equally as tasty. Specifically, when tasty and unhealthy foods are frequent in one context but rare in another, people perceive unhealthy foods to taste better, even if health and taste are unrelated. Given that people often consume food in one context, the current study investigated whether false beliefs about the health-taste relationship in foods can also occur in just one single context, in which either healthy or unhealthy foods are predominant, when there is no con

A neural substrate for short-term taste memories.

Real-time decisions on what foods to select for consumption, particularly in the wild, require a sensitive sense of taste and an effective system to maintain short-term taste memories, also defined as working memory in the scale of seconds. Here, we used a behavioral memory assay, combined with recordings of neural activity, to identify the brain substrate for short-term taste memories. We demonstrate that persistent activity in taste cortex functions as an essential memory trace of a recent taste experience. Next, we manipulated the decay of this persistent activity and showed that early term

Rapid structural remodeling of peripheral taste neurons is independent of taste cell turnover.

Taste bud cells are constantly replaced in taste buds as old cells die and new cells migrate into the bud. The perception of taste relies on new taste bud cells integrating with existing neural circuitry, yet how these new cells connect with a taste ganglion neuron is unknown. Do taste ganglion neurons remodel to accommodate taste bud cell renewal? If so, how much of the structure of taste axons is fixed and how much remodels? Here, we measured the motility and branching of individual taste arbors (the portion of the axon innervating taste buds) in mice over time with two-photon in vivo micros

[Dysgeusia in clinical practice. 1. Physiology].

The anatomical basis of taste are discussed both in their peripheral and in central aspects. The perception is based upon four principal flavors; this happens by complex chemical interactions between peripheral receptors of papillae and the taste producing substances. The nervous stimulus flows through fibres of VII-IX-X cranial nerves up to the tractus solitarius nucleus; successive elaboration leads to the taste sensation, whose principal cortical site is the zone between Silvius and Rolando's sulcus. The distribution of the sensible zones for the fundamental flavors is presented.

The Sweet Tooth Trial: A Parallel Randomized Controlled Trial Investigating the Effects of A 6-Month Low, Regular, or High Dietary Sweet Taste Exposure on Sweet Taste Liking, and Various Outcomes Related to Food Intake and Weight Status.

BACKGROUND: Public health organizations currently recommend lowering the consumption of sweet-tasting foods, on the assumption that a lower exposure to sweet-tasting foods lowers preferences for sweet taste, decreasing sugar and energy intake, and aiding obesity prevention. However, empirical data supporting this narrative are lacking. OBJECTIVES: The objective of this study was to assess the effects of a 6-mo low, regular, and high dietary sweet taste exposure on liking for sweet taste. METHODS: In a parallel-groups randomized controlled intervention study, 180 healthy adults (female/male:

Unleashing the pharmacological potential of taste receptors in reproductive processes beyond their gustatory role.

Traditionally, taste receptors (TRs) have been understood to reside within the taste buds on the tongue, serving as initiators for different taste perceptions. However, recent research has expanded our understanding, revealing that TRs are found throughout the body and perform a wide range of functions beyond taste perception as non-tasting functions. These receptors, along with their genetic variations, have been linked to various human health conditions. They are activated by an array of substances, including hormones, nutrients, and toxins, indicating their involvement in numerous biologica

Neural Coding of Food Is a Multisensory, Sensorimotor Function.

This review is a curated discussion of the relationship between the gustatory system and the perception of food beginning at the earliest stage of neural processing. A brief description of the idea of taste qualities and mammalian anatomy of the taste system is presented first, followed by an overview of theories of taste coding. The case is made that food is encoded by the several senses that it stimulates beginning in the brainstem and extending throughout the entire gustatory neuraxis. In addition, the feedback from food-related movements is seamlessly melded with sensory input to create th

Screening of novel umami peptides with saltiness enhancement effect using molecular docking and structure-activity analysis.

In this study, to explore a healthier and safer alternative method for reducing salt intake, new umami peptides were identified from the hydrolysate of Ruditapes philippinarum through structure-activity relationship and molecular docking. The impact of these peptides on enhancing salty taste was examined using a sensory test and an electronic tongue evaluation. The mechanism of salt reduction was investigated through molecular docking. In addition, eight new umami peptides: LEDKVE, DEELNKLK, DLKEKL, LEER, AEKEEEFENT, EQEEYKK, EFDKK, and GEDFDNKLV, extracted from the hydrolysate of Ruditapes ph

Taste acuity of the human palate. II. Studies with electrogustometry on subjects in different age groups.

The electrical taste acuity on the hard and soft palate and the tip of the tongue was determined in 140 subjects aged 13-81 years using an electrogustometer constructed for the study. The possible influence of several variables including age, sex, wearing of a full upper denture, smoking as well as medical and social factors on the threshold values was also studied. Taste perception was demonstrated on the soft palate and on an area of the hard palate close to the junction of the hard and soft palate in most subjects. No perception of the electrical taste was found in eleven subjects (8%) on e

Genetics of sensory nutrition.

Sensory nutrition is an emerging research area that examines how chemosensory perception, particularly taste and smell, shapes dietary behaviours, nutritional status, and disease risk. Variation in how individuals perceive the same foods may help explain differences in diet quality and responsiveness to behavioural dietary interventions, yet chemosensory phenotypes are rarely measured at the population level. Genetic variation contributes to this perceptual diversity and provides a framework for investigating sensory determinants of diet using genomic approaches. This review summarises evidenc

Associations between opioid dependence and sweet taste preference.

RATIONALE: Past research suggests that people with opioid dependence show increased consumption of sweet food, but it is unclear if this is influenced by altered taste preference and/or taste perception. OBJECTIVES: We tested whether people prescribed opioid substitution therapy (OST) exhibited a shift in preference towards sweeter flavours, and altered perception of sweetness, and explored whether these measures of taste preference/perception were associated with measures of opioid use. METHODS: Three groups of participants (people prescribed OST, n=36; people with past opioid dependence, b

Comprehensive insights into bitter compounds of food and medicine homologous substances: categorization, identification, and perception mechanisms.

Bitterness in food and medicine homology (FMH) products is crucial for both biological activity and consumer acceptance. However, the rigorous identification of bitter compounds and the underlying perception mechanisms have not been comprehensively evaluated. This review aimed to classify FMH into plan, fungal, and animal-derived sources, analyze the methods used for isolating and identifying bitter compounds, the mechanisms underlying bitter taste perception. Major bitter compounds include amino acids, peptides, polyphenols, alkaloids, and inorganic salts. Although traditional extraction meth

Three-dimensional characteristic of fungiform papillae and its taste buds in European bison (Bison bonasus), cattle (Bos taurus), and Bison bonasus hybrid.

BACKGROUND: Our recent macro- and scanning electron microscopic study of tongue conducted on domesticated cattle, wild living European bison, and Bison bonasus hybrid revealed various spatial arrangement and number of gustatory and mechanical papillae between parental species and their hybrid. Furthermore, scanning electron microscopy analysis of gustatory papillae indicated the variable distribution of fungiform papillae (Fu) over the surface of the tongue, which could be significant in differentiated taste perception during feeding in studied wild living and domesticated husbandry ruminants.

Potential role of glucagon like peptide 1 in taste receptors.

The perception of taste is a complex physiological process that extends far beyond the simple detection of flavor molecules, serving as a critical interface between nutrient sensing, metabolic regulation, and feeding behavior. Emerging evidence reveals that this process is profoundly modulated by endocrine and neuromodulatory systems, creating a sophisticated gut-brain-taste axis that integrates peripheral gustatory signals with central homeostatic and hedonic mechanisms. Hormones such as glucagon-like peptide-1, leptin, ghrelin, and CCK not only regulate appetite and energy balance but also d

Impaired metal perception and regulation of associated human foliate papillae tongue transcriptome in long-COVID-19.

Chemosensory impairment is an outstanding symptom of SARS-CoV-2 infections. We hypothesized that measured sensory impairments are accompanied by transcriptomic changes in the foliate papillae area of the tongue. Hospital personnel with known SARS-CoV-2 immunoglobulin G (IgG) status completed questionnaires on sensory perception (n = 158). A subcohort of n = 141 participated in forced choice taste tests, and n = 43 participants consented to donate tongue swabs of the foliate papillae area for whole transcriptome analysis. The study included four groups of participants differing in IgG levels (≥
