Subchronic Acrylamide Exposure Activates PERK-eIF2α Signaling Pathway and Induces Synaptic Impairment in Rat Hippocampus.

Acrylamide (ACR), a well-documented neurotoxicant to humans, is extensively found in starchy foods. More than 30% of the typical daily calorie intake comes from ACR-containing foods. Epidemiological and toxicological studies have found that ACR exposure is associated with mild cognitive change in men and experimental animals. However, there is limited information on the mechanisms by which ACR exposure induces memory deficits. The aberrant activation of the PKR-like ER kinase (PERK)-eukaryotic initiation factor 2α (eIF2α) signaling pathway is emerging as a major common theme in cognitive decli

Quercetin attenuates acrylamide-induced damage to largemouth bass myofibrillar protein and associated gut health impairments.

Thermal processing can enhance the nutritional quality and flavor of aquatic products; however, hazardous compounds such as acrylamide formed during the process may exert adverse effects on proteins and intestinal health. In this study, myofibrillar protein (MP) extracted from Largemouth Bass was used as a model to systematically investigate the regulatory effects of quercetin on acrylamide-induced protein damage and intestinal health impairment. The results showed that AA treatment significantly increased the particle size of MP, promoted protein aggregation, and markedly reduced the α-helix

Acrylamide-induced oxidative stress triggers organelle dysfunction, DNA damage, and apoptosis in porcine embryo development.

Acrylamide (ACR) forms in carbohydrate-rich foods during cooking at high temperatures and is a common contaminant in the diet. Although ACR has neurotoxic, genotoxic, and carcinogenic effects, limited information is available regarding its reproductive toxicity. This study was performed to investigate the effects of ACR exposure on porcine embryonic development and to elucidate the underlying mechanisms. Following parthenogenetic activation and in vitro fertilization, ACR exposure significantly reduced developmental parameters, including the cleavage rate, proportion of 4-cell stage embryos, a

Acrylamide-associated gastric cancer progression involves RRM2-related nucleotide metabolic dysregulation and immune evasion.

Acrylamide (AA) is a widespread environmental contaminant and a probable human carcinogen. Its role in gastric cancer (GC), however, remains unclear. We investigated whether AA-associated molecular changes may contribute to GC through altered nucleotide metabolism. Integration of CTD, MSigDB, and GeneCards identified 11 AA-nucleotide metabolism-GC-related genes (ANGRGs). Binding-pocket analysis and non-covalent molecular docking prioritized RRM2 as a candidate associated with AA-related molecular effects. These in silico analyses did not model covalent adduct formation. RRM2 was overexpressed
