Changes in carotenoids, phenolic acids and antioxidant capacity in bread wheat doughs fermented with different lactic acid bacteria strains.

Amongst the processing technologies able to improve the functional features of cereal-based foods, sourdough fermentation using Lactic Acid Bacteria (LAB) has been recently rediscovered for its beneficial effects. Wheat (Triticum aestivum L.) bread doughs were prepared using LAB strains belonging to different Lactobacillus species and changes in phenolic acid, carotenoid content and antioxidant capacity were evaluated. Two L. plantarum strains out of six were able to significantly increase carotenoid content in the dough, suggesting that a higher mobilization/solubilisation of these antioxidan

Co-Fermentation of Wickerhamomyces anomalus and Saccharomyces cerevisiae in Bread Dough: Effects on Ethyl Acetate Production and Flavor Enhancement.

Fermentation affects the quality of bakery products. Saccharomyces cerevisiae is the traditional baking yeast, but the desire for alternative flavor profiles has driven interest in non-Saccharomyces yeasts. Wickerhamomyces anomalus, a non-Saccharomyces yeast with high ester-producing ability, has attracted attention as a promising co-fermentation partner. Although previous studies have explored its co-fermentation potential in alcoholic beverage production, the effects of its co-fermentation with S. cerevisiae on dough fermentation characteristics, bread quality, and flavor remain largely unex

The effect of dough mixing speed and work input on the structure, digestibility and celiac immunogenicity of the gluten macropolymer within bread.

Modern high-speed mechanical dough development (MDD) alters the gluten macropolymer's (GMP) structure. Changes to both the protein and food matrix structure can influence protein digestibility and immunogenicity. This study investigated the relationship between protein structural changes imparted by MDD and gluten's digestibility plus celiac reactivity. Dough was prepared at three mixing speeds (63 rpm, 120 rpm and 200 rpm) to different degrees of development (between 10 and 180% wh.kg-1). Protein structural changes were characterised by confocal microscopy, free thiol determination and protei

Characterization of stable grain protein content loci on chromosome 6D without adverse effect on yield traits in bread wheat.

This study identified and validated novel QTL controlling GPC, predicted the underlying candidate genes, and provides valuable insights for improving wheat nutritional quality while minimizing yield penalties. Grain protein content (GPC) is a key determinant of wheat quality, but its improvement is often limited by a negative correlation with yield. To elucidate the genetic architecture of GPC, a genome-wide association study was conducted on 224 wheat cultivars genotyped with a 120 K SNP array and phenotyped across three environments. We identified three stable quantitative trait loci (QTL) o
