Dysgonic fermenter-2: a clinico-epidemiologic review.

In the literature to date, there have been 44 confirmed cases of infection with the Dysgonic Fermenter-2 (DF-2) bacterium. DF-2 infections appear to demonstrate a strong association with dog bites (or recent exposure to dogs) and have a predilection for patients with defective host defenses although immunocompetent individuals are also susceptible. Recently, the first two cases of documented DF-2 infection following cat bite have been reported. Of the cases reported, 42 of the 44 blood cultures grew DF-2. In one of the two cases where blood culture failed to grow DF-2, the bacterium was isolat

Effects of supplementing a Saccharomyces cerevisiae fermentation product during the transition period on rumen fermentation of dairy cows fed fresh diets differing in starch content.

The objective of this study was to evaluate the effects of supplementing a Saccharomyces cerevisiae fermentation product (SCFP; NutriTek, Diamond V, Cedar Rapids, IA) during the transition period (d -28 ± 3 to 23 ± 3 relative to calving) on rumen fermentation and mRNA abundance of genes in the rumen epithelium of fresh cows (d 1 to 23 ± 3 after calving) fed diets differing in starch content. Eighteen ruminally cannulated multiparous Holstein cows were fed diets with SCFP (n = 9) or without (CON; n = 9) throughout the experiment. All cows were fed a common basal controlled-energy close-up diet

Microbial fermentation as a strategy for the abatement of peanut allergens.

Although valued for their nutritional content and flavor, peanuts are ranked among the nine major food allergens in the United States, capable of inducing life-threatening reactions mediated by immunoglobulin E (IgE). Ara h 1, Ara h 2, Ara h 3, and Ara h 6 are recognized as major allergens due to the prevalence and structural stability of their epitopes, which make them resistant to digestion and processing. To address these challenges, processing treatments of different natures have been tested (e.g., physical, chemical, and biological) to reduce the allergenic content and create safer and mo

Research progress on enantiomers detection in fermented foods.

Fermented foods are an important part of global traditional diets, featuring unique flavors and health benefits. Enantiomers, as mirror-image molecules with different biological activities, play a crucial role in flavor, health functions and overall quality of fermented foods. Therefore, accurately detecting enantiomers in fermented foods is essential for quality control and process optimization of fermented foods. This review summarizes the recent advances, challenges and future prospects in the detection of enantiomer in fermented foods. Firstly, the effects of fermentation material factors

Dos and don'ts for scaling up gas fermentations.

Gas fermentation processes (using CO2, CO, H2, CH4) have gained significant research and commercial interest in the last years due to their potential for carbon capture and sequestration. The small economic margins of these processes necessitate the use of large-volume bioreactors. For cost-effective gas delivery, we advise using pneumatically agitated bioreactors, like bubble column reactors, compared to traditional stirred-tank reactors. Although scale-up is conventionally done on an empirical and rule-of-thumb basis, rational methods are currently available. The most important one is the kn

Presence of an ultra-small microbiome in fermented cabbages.

BACKGROUND: Ultramicrobacteria (UMB), also known as ultra-small bacteria, are tiny bacteria with a size less than 0.1 µm3. They have a high surface-to-volume ratio and are found in various ecosystems, including the human body. UMB can be classified into two types: one formed through cell contraction and the other that maintains a small size. The ultra-small microbiome (USM), which may contain UMB, includes all bacteria less than 0.2 µm in size and is difficult to detect with current methods. However, it poses a potential threat to food hygiene, as it can pass through sterilization filters and

Novel dichloromethane-fermenting bacteria in the Peptococcaceae family.

Dichloromethane (DCM; CH2Cl2) is a toxic groundwater pollutant that also has a detrimental effect on atmospheric ozone levels. As a dense non-aqueous phase liquid, DCM migrates vertically through groundwater to low redox zones, yet information on anaerobic microbial DCM transformation remains scarce due to a lack of cultured organisms. We report here the characterisation of DCMF, the dominant organism in an anaerobic enrichment culture (DFE) capable of fermenting DCM to the environmentally benign product acetate. Stable carbon isotope experiments demonstrated that the organism assimilated carb

Fermented foods and probiotics: An approach to lactose intolerance.

The aim of this review was to present various topics related to lactose intolerance with special attention given to the role of fermented foods and probiotics in alleviating gastrointestinal symptoms. Lactose intolerance is a common digestive problem in which the human body is unable to digest lactose, known as milk sugar. Lactose intolerance can either be hereditary or a consequence of intestinal diseases. Recent work has demonstrated that fermented dairy products and probiotics can modify the metabolic activities of colonic microbiota and may alleviate the symptoms of lactose intolerance. We

The Effect of Fermented Papaya Preparation on Radioactive Exposure.

Exposure to ionizing radiation causes cellular damage, which can lead to premature cell death or accumulation of somatic mutations, resulting in malignancy. The damage is mediated in part by free radicals, particularly reactive oxygen species. Fermented papaya preparation (FPP), a product of yeast fermentation of Carica papaya Linn, has been shown to act as an antioxidant. In this study, we investigated the potential of FPP to prevent radiation-induced damage. FPP (0-100 μg/ml) was added to cultured human foreskin fibroblasts and myeloid leukemia (HL-60) cells either before or after irradiatio

Probiotics and their fermented food products are beneficial for health.

Probiotics are usually defined as microbial food supplements with beneficial effects on the consumers. Most probiotics fall into the group of organisms' known as lactic acid-producing bacteria and are normally consumed in the form of yogurt, fermented milks or other fermented foods. Some of the beneficial effect of lactic acid bacteria consumption include: (i) improving intestinal tract health; (ii) enhancing the immune system, synthesizing and enhancing the bioavailability of nutrients; (iii) reducing symptoms of lactose intolerance, decreasing the prevalence of allergy in susceptible individ

[Botulism after intake of half-fermented fish].

From 1975 to 1997, 21 cases of foodborn botulism have been reported in Norway. Half-fermented fish is the major cause. We describe one patient with botulism following intake of home-prepared half-fermented fish. Seven people had eaten fish from the same bucket, but only two developed symptoms. The fish was initially stored at 13 degrees C; this probably explains why toxin developed. Type E toxin in moderate concentrations was found in fish samples. The patient was treated with specific antitoxin and made a gradual recovery. He returned to work after eight months.

Microorganisms Involved in the Spoilage of Fermented Fruit Juices.

Bottled wines, ciders and perries that contain sugar are susceptible to refermentation by yeasts and the growth of lactic acid bacteria. The yeasts are strongly fermentative strains, often species of Saccharomyces , while the lactics are acid and ethanol tolerant species that grow slowly and are fastidious in their nutrient requirements. Spoilage is manifested by gas, haze and various flavor changes. Control procedures include filtration, pasteurization and the use of the preservatives sulfur dioxide and sorbic acid.

[Effect of mycotoxins on the rate of fermentation in Saccharomyces cerevisiae].

The rate of fermentation of Saccharomyces cerevisiae is partially inhibited by different mycotoxins. This effect is remarkable with T2-toxin and diacetoxyscirpenol, slight with aflatoxin-B1, penicillic acid and patulin. On the contrary, the butenolide appears as a stimulator of the alcoholic fermentation.

BACTERIAL ANTIFERMENTS : STUDIES ON FERMENT ACTION. XVII.

1. Intact bacteria probably resist tryptic digestion because of the absence of an exposed protein substrate. 2. Dried organisms resist digestion in a degree proportional to their content of unsaturated lipoids. 3. Lipoidal extractives reduce the resistance to tryptic digestion. 4. The extracted lipoids (saponified) are antitryptic in a degree proportional to their unsaturation. 5. The inactivation of the antiferment in Gram-negative organisms is probably due to changes in the degree of lipoidal dispersion. 6. Bacteria adsorb lipoids from the serum when incubated at 37 degrees C. Such organisms

Insights into the flavor formation mechanism of reduced-salt shallow-fermented sausages under oscillatory temperature fermentation with starter culture inoculation.

Inoculated fermentation is a promising strategy for enhancing the quality of sausage products. However, the underlying mechanisms by which it improves quality in traditional Sichuan air-dried sausages remain to be fully elucidated, which poses challenges for quality control during their production. The aim of this study is to reveal the dynamic evolution of flavor profiles and the metabolic networks of reduced-salt shallow-fermented sausages, prepared by employing Staphylococcus SM-75 as inoculating starter cultures and coupling it with oscillatory temperature fermentation process. Next-generation fermented foods from non-conventional proteins: Linking fermentation dynamics, flavor chemistry, and gut microbiome modulation.

The urgent need to diversify protein sources beyond animal agriculture has propelled non-conventional proteins (e.g., insects, microalgae, single-cell organisms, novel plants) to the forefront of food innovation. However, their adoption is limited by off-flavors, anti-nutritional factors, and low digestibility. Fermentation can address these drawbacks and may impart health-relevant benefits, though human evidence remains limited. This review defines next-generation fermented foods (NGFFs) as rationally fermented non-conventional protein substrates achieving superior sensory, nutritional, and g
