Seasonal Determination of Antibiotic-Resistant Microorganisms and Ciprofloxacin Residues in Pork and Chicken Meats Collected from Fresh Markets in Chiang Mai, Northern Thailand.

Antibiotic-resistant bacteria are usually found in food-producing animals worldwide. Ciprofloxacin, an antibiotic, can lead to antibiotic residues in food products, posing health risks to consumers and contributing to the development of antimicrobial resistance. Foodborne illnesses occur when adequate attention is not paid to food hygiene and safety, raising the potential for resistant bacteria to spread to humans through the food chain. This study aims to determine the presence of antibiotic-resistant organism contamination and ciprofloxacin residue in raw pork and chicken. Forty-three pork a

Molecular Diversity of ESBL-Producing Escherichia coli from Foods of Animal Origin and Human Patients.

Dissemination of enterobacteria that produce extended spectrum β-lactamases (ESBL) throughout the food chain has become an important health concern. This work aimed to evaluate the occurrence of ESBL-producing bacteria in foods of animal origin and to investigate the similarities between food and human isolates. The presence of beta-lactam-resistant Enterobacteriaceae was analyzed in 108 food samples, isolating 10 strains of Escherichia coli, one strain of Citrobacter freundi, and one of Hafnia alvei. E. coli isolates were compared to a group of 15 strains isolated from human patients by antib

Food toxicology--from forensic to policy tool: an evolution from reactive to proactive action.

Since the nineteenth century, food toxicology has evolved in several ways. The analytical power of the food toxicologist has been increased. The concept of adulterated food was modified significantly. Most commodities are now processed and addition of numerous non-nutrient additives is legalised. Other "alien" compounds get introduced in the food chain from background contamination or during processing and distribution. This makes the task of the food toxicologist more complex. From forensic science food toxicology developed to a policy aid.

High sensitivity detection of the glial fibrillary acidic protein as indicator for TSE risk material in meat products using an immuno-PCR.

The emergence of prion diseases in cattle during the bovine spongiform encephalopathy (BSE) epidemic and the transmission to humans causing variant Creutzfeldt-Jakob disease by consume of BSE-contaminated meat has focused attention on the use of tissues from the central nervous system (CNS) in food. To avoid food contamination, it is regulated by law that specified risk material has to be removed from food chains. Detection of well-expressed CNS indicator proteins such as the glial fibrillary acidic protein (GFAP) assumes an important role in detection of food contamination; however, the sensi

Aquatic methylmercury is a significant subsidy for terrestrial songbirds: Evidence from the odd mass-independent fractionation of mercury isotopes.

In contrast to aquatic food chains, knowledge of the origins and transfer of mercury (Hg) and methylmercury (MeHg) in terrestrial food chains is relatively limited, especially in songbirds. We collected soil, rice plants, aquatic and terrestrial invertebrates, small wild fish, and resident songbird feathers from an Hg-contaminated rice paddy ecosystem for an analysis of stable Hg isotopes to clarify the sources of Hg and its transfer in songbirds and their prey. Significant mass-dependent fractionation (MDF, δ202Hg), but no mass-independent fractionation (MIF, ∆199Hg) occurred in the trophic t

Food-derived molecules as regulators of intestinal tight junctions and barrier function: mechanisms and implications.

Controlling TJ permeability in the small intestine facilitates nutrient absorption, maintains luminal osmotic balance, and prevents the paracellular entry of pathogens. The pharmaceutical industry has leveraged the capacity of medium-chain fatty acids and their derivatives to transiently and reversibly open epithelial TJs in formulations to enable oral administration of therapeutic peptides, some of which have received regulatory approval or are progressing in advanced clinical trials. Other food-derived agent including chitosan and its analogues enhance mucoadhesion and also modulate TJ perme

Methyl mercury and stable isotopes of nitrogen reveal that a terrestrial spider has a diet of emergent aquatic insects.

Terrestrial spiders transfer methyl mercury (MeHg) to terrestrial consumers such as birds, but how spiders become contaminated with MeHg is not well understood. In the present study, the authors used stable isotopes of nitrogen in combination with MeHg to determine the source of MeHg to terrestrial long-jawed orb weaver spiders (Tetragnatha sp). The authors collected spiders and a variety of other aquatic and terrestrial taxa from 10 shallow ponds in north Texas, USA. Based on MeHg concentrations and stable nitrogen isotope ratios, the authors identified distinct aquatic- and terrestrial-based

[Epidemiological study and serotyping by multiple PCR of Listeria monocytogenes isolated from food matrices in Argentina].

Listeria monocytogenes is an opportunistic foodborne pathogen. It can resist stress conditions by adapting through the production of biofilms, which represents a serious problem for the food industry. It is classified into 14 serotypes, although only four (1/2a, 1/2b, 1/2c, and 4b) account for 89.0-98.0% of listeriosis cases worldwide. The objective of this study was to detect and serotype L.monocytogenes isolated from different food matrices from processing plants in Argentina. In the period 2016-2021, 1832 samples (meat, ready-to-eat foods, ice cream, dairy foods, and frozen vegetables) were

Microcystin Contamination in Irrigation Water and Health Risk.

Microcystins (MCs), natural hepatotoxic compounds produced by cyanobacteria, pose significant risks to water quality, ecosystem stability, and the well-being of animals, plants, and humans when present in elevated concentrations. The escalating contamination of irrigation water with MCs presents a growing threat to terrestrial plants. The customary practice of irrigating crops from local water sources, including lakes and ponds hosting cyanobacterial blooms, serves as a primary conduit for transferring these toxins. Due to their high chemical stability and low molecular weight, MCs have the po

Examining the Effects of an Anti-Salmonella Bacteriophage Preparation, BAFASAL®, on Ex-Vivo Human Gut Microbiome Composition and Function Using a Multi-Omics Approach.

Salmonella infections (salmonellosis) pose serious health risks to humans, usually via food-chain contamination. This foodborne pathogen causes major food losses and human illnesses, with significant economic impacts. Overuse of antibiotics in the food industry has led to multidrug-resistant strains of bacteria, and governments are now restricting their use, leading the food industry to search for alternatives to secure food chains. Bacteriophages, viruses that infect and kill bacteria, are currently being investigated and used as replacement treatments and prophylactics due to their specifici
