Three-dimensional characteristic of fungiform papillae and its taste buds in European bison (Bison bonasus), cattle (Bos taurus), and Bison bonasus hybrid.

BACKGROUND: Our recent macro- and scanning electron microscopic study of tongue conducted on domesticated cattle, wild living European bison, and Bison bonasus hybrid revealed various spatial arrangement and number of gustatory and mechanical papillae between parental species and their hybrid. Furthermore, scanning electron microscopy analysis of gustatory papillae indicated the variable distribution of fungiform papillae (Fu) over the surface of the tongue, which could be significant in differentiated taste perception during feeding in studied wild living and domesticated husbandry ruminants.

Naloxone modulates gustatory perception, but not insulin and C-peptide release, in sham-fed human subjects.

In order to determine the role of the endogenous opiatergic system in modulation of human pancreatic B-cell function and taste perception, we measured the reactivity of gustatory receptors (electrogustometry), insulin and C-peptide serum concentration (radioimmunoassay) in six normal men (aged 24-26 years) during sham feeding and 0.8 mg of naloxone or placebo (saline) administration. We did not observe any differences in insulin and C-peptide concentrations during tease feeding independently of placebo or naloxone infusion. The verge of electric reactivity of gustatory perception significantly

Taste aversion as an under-recognized determinant of bowel preparation quality.

Inadequate bowel preparation remains a major barrier to high-quality colonoscopy, with taste aversion representing a common yet under-recognized contributor to poor tolerability of the bowel preparation. Current strategies primarily aim to improve palatability through formulation changes or dosing regimens. This paper proposes a novel, hypothesis-driven approach: transient pharmacologic suppression of gustatory perception using topical oral lidocaine to reduce the perceived unpleasantness of bowel preparation solutions. The concept arises from a serendipitous clinical observation in which tong

Utilizing Herbs and Microwave-Assisted Thermal Sterilization to Enhance Saltiness Perception in a Chicken Pasta Meal.

This study was the first to evaluate the influence of herb addition in a complex food matrix processed by microwave-assisted thermal sterilization (MATS) system for potential salt reduction implications. In a chicken pasta meal, salt concentrations included 100% (full salt) and reduced salt variations (75%, 50%, and 25% of the original salt concentration) and for each meal, a version with and without herb addition. The influence of storage time on sensory perception and acceptance was investigated, along with the odor-induced saltiness enhancement (OISE). Trained sensory panel results showed t

The electronic tongue: an advanced taste-sensing multichannel sensory tool with global selectivity for application in the pharmaceutical and food industry.

Taste is a crucial organoleptic characteristic that determines whether a substance will be accepted for delivery through the mouth. However, the vast majority of medications have an unpleasant taste. Drugs with a bitter taste are often depicted using a variety of flavouring compounds to increase patient acceptance and compliance. Human panellists are the principal means of assessing the flavour of medication ingredients and formulations. Due to the toxicity of medications and subjectivity of taste panellists, as well as issues with hiring taste panellists and panel upkeep when working with unp

Cortical taste processing evolves through benign taste exposures.

Experience impacts learning and perception. Familiarity with stimuli that later become the conditioned stimulus (CS) in a learning paradigm, for instance, reduces the strength of that learning-a fact well documented in studies of conditioned taste aversion (CTA; De la Casa & Lubow, 1995; Lubow, 1973; Lubow & Moore, 1959). Recently, we have demonstrated that even experience with "incidental" (i.e., non-CS) stimuli influences CTA learning: Long Evans rats pre-exposed to salty and/or sour tastes later learn unusually strong aversions to novel sucrose (Flores et al., 2016), and exhibit enhanced su

A tale of two sugars: How studying ingestive behavior revealed glucose sensing pathways in the taste system.

To optimize health, animals must evaluate the nutritional value of foods before digestive and absorptive processes reveal their metabolic consequences. Taste is traditionally viewed as a chemosensory system that categorizes compounds into a small set of perceptual qualities (e.g., sweet, salty, bitter) that guide ingestion or avoidance behaviors. In this framework, sweetness is assumed to signal the presence of carbohydrates, and, thus, energy. However, sweet taste does not uniquely signal caloric or metabolic value. Some sweet-tasting compounds provide little or no energy, whereas others diff

Comprehensive evaluation of taste dysfunction in allogeneic hematopoietic cell transplant recipients: a combined subjective and objective assessment.

PURPOSE: Taste dysfunction is a common but underrecognized complication in patients undergoing allogeneic hematopoietic cell transplantation (allo-HCT). Taste dysfunction can adversely affect oral intake, nutritional status, and overall quality of life. This study aimed to comprehensively evaluate taste function in allo-HCT recipients using both objective and subjective measures and to identify clinical factors associated with taste disturbances. METHODS: We conducted a prospective observational study of 21 adult allo-HCT recipients. Taste function was assessed at two time points (pre-conditi

Association of Phenylthiocarbamide Taste Sensitivity with Dental Caries, Skeletal Maturity, and Body Mass Index Percentiles in Children Aged 8-12 Years: A Cross-sectional Study.

BACKGROUND: Taste perception, shaped by both genetic makeup and environmental influences, plays an important role in dietary habits and overall health. Sensitivity to phenylthiocarbamide (PTC), which is controlled by variations in the TAS2R38 gene, categorizes individuals as either tasters or nontasters. This distinction can affect food preferences and may contribute to differences in susceptibility to dental caries. Research has shown associations between PTC-tasting ability and dental caries, skeletal development, and body mass index (BMI), highlighting its potential usefulness in evaluating

Locus coeruleus activation transforms cortical taste representations.

Noradrenergic neurons in the locus coeruleus (LC) shape sensory processing, yet how LC activity influences population taste coding remains unclear. Using optogenetic LC activation with miniscope imaging in the gustatory cortex (GC), we examined LC modulation of multiple taste attributes. Phasic LC activation strengthens correlations between neuronal responses and palatability and expands the dynamic range of stimulus representations along a palatability axis. This expansion is driven by an aversive shift in the representations of all tastants except sucrose, the most palatable stimulus. For mi

Impact of cooking methods on the quality, sensory and flavor compounds of Sichuan pepper oleoresin.

Sichuan pepper oleoresin (SPO) is highly appreciated by the food industry as well as consumers for flavor. To understand the overall flavor of SPO and how the quality changes during practical application, this study investigated the effects of five cooking methods on the quality, sensory, and flavor compounds of SPO. The differences in physicochemical properties and sensory evaluation responded to potential changes in SPO after cooking. The SPO after different cooking could be clearly distinguished by E-nose and PCA. Based on the qualitative analysis of volatile compounds, 13 compounds were sc

Calcium-sensing receptor involved in the oral perception of kokumi substances.

Taste is a key determinant of food preference and involves basic tastes and complex sensations such as mouthfeel. To understand taste at a molecular level, researchers have used cryo-electron microscopy (cryo-EM) to determine the structures of taste receptors. Cryo-EM has also been applied to analyze the interactions between food components and biological systems, playing a vital role in food science. A key example is the calcium-sensing receptor (CaSR), a class C G-protein-coupled receptor (GPCR) essential for the oral perception of kokumi substances, which are taste modulators. We used cryo-

Salty taste deficits in CALHM1 knockout mice.

Genetic ablation of calcium homeostasis modulator 1 (CALHM1), which releases adenosine triphosphate from Type 2 taste cells, severely compromises the behavioral and electrophysiological responses to tastes detected by G protein-coupled receptors, such as sweet and bitter. However, the contribution of CALHM1 to salty taste perception is less clear. Here, we evaluated several salty taste-related phenotypes of CALHM1 knockout (KO) mice and their wild-type (WT) controls: 1) In a conditioned aversion test, CALHM1 WT and KO mice had similar NaCl avoidance thresholds. 2) In two-bottle choice tests, C

[Impact of Microsurgical Exstirpation of Vestibular Schwannomas on the Sense of Taste].

Patients with single sided vestibular schwannoma may report about a taste dysfunction apart from the well known cardinal symptoms. Very few data are published so far on that topic. The aim of this study was to investigate the influence of microsurgery for vestibular schwannomas on taste perception prospectively using a well validated taste test. 25 patients could be included in the study. No ageusia was claimed by the patients. In average a decrease of the taste score postoperatively could be detected on the tumor as well as on the non treated side. The differences were not statistically signi

Interkingdom Detection of Bacterial Quorum-Sensing Molecules by Mammalian Taste Receptors.

Bitter and sweet taste G protein-coupled receptors (known as T2Rs and T1Rs, respectively) were originally identified in type II taste cells on the tongue, where they signal perception of bitter and sweet tastes, respectively. Over the past ~15 years, taste receptors have been identified in cells all over the body, demonstrating a more general chemosensory role beyond taste. Bitter and sweet taste receptors regulate gut epithelial function, pancreatic β cell secretion, thyroid hormone secretion, adipocyte function, and many other processes. Emerging data from a variety of tissues suggest that t

TAS2R38 bitter taste genetics, dietary vitamin C, and both natural and synthetic dietary folic acid predict folate status, a key micronutrient in the pathoaetiology of adenomatous polyps.

Taste perception may influence dietary preferences and nutrient intakes contributing to diet-related disease susceptibility. This study examined bitter taste genetics and whether variation in the TAS2R38 gene at three polymorphic loci (A49P, V262A and I296V) could alter dietary and systemic folate levels and dietary vitamin C intake, and whether a nutrigenetic circuit existed that might link bitter taste, folate/antioxidant status and risk for a colonic adenomatous polyp. TAS2R38 diplotype predicted bitter taste (PROP) phenotype (p value <0.00001) and red cell folate status (p=0.0179) consiste

Adverse effects profile of sulfhydryl compounds in man.

Many of the adverse reactions produced by penicillamine and other compounds with an active sulfhydryl group form a distinctive pattern when viewed as a class. Alterations in taste perception, mucocutaneous lesions, proteinuria due to immune-complex membranous glomerulopathy, and pemphigus are adverse reactions that have been encountered with all of the compounds discussed herein. Hematologic reactions such as neutropenia and thrombocytopenia occur rarely and with variable frequency. The angiotension converting enzyme inhibitor captopril has an active sulfhydryl group. Neurolocalization of taste disorders.

Neurolocalization of taste disorders requires a knowledge of the functional anatomy involved in mediating taste information from the peripheral mucosal surfaces through numerous peripheral cranial nerves to complex subcortical and cortical brain regions. Our understanding of this functional anatomy has advanced in recent years. Taste is an experience that is both innate and learned, and the "taste" experience involves the integration of information from other sensory modalities, such as olfaction and somatosensation. Normal taste perception is influenced by different neurophysiologic states, w
