Soda bread provocation test for subjects with transient serology for coeliac disease 3 years after a population screening survey.

BACKGROUND: We have previously reported that IgA antigliadin antibodies (IgA-AGA) in the majority of healthy subjects are transient and do not indicate enteropathy, and also that an increased intake of gluten in the form of soda bread may be part of the explanation for this phenomenon. OBJECTIVE: The aim of the study was to determine whether gluten challenge with soda bread in subjects with transiently positive IgA-AGA could induce a significant titre of IgA-AGA. DESIGN: Food challenge study. METHODS: All subjects with positive IgA-AGA on screening at the time of the MONICA project in 1991

Deciphering the dynamic genetic architecture of adult-plant salinity tolerance in bread wheat using multi-model GWAS and genomic prediction.

BACKGROUND: Soil salinity is a major constraint to wheat productivity, necessitating the identification of robust genetic loci for breeding. This study aims to dissect the genetic architecture of adult-plant salinity tolerance in a diverse panel of 298 Iranian wheat accessions. A multi-model GWAS framework (MLM, FarmCPU, and BLINK) was deployed under moderate (6 dS/m) and severe (12 dS/m) salinity stress. High-confidence consensus marker-trait associations (MTAs) were validated through comparative synteny analysis with the rice genome. Furthermore, the genomic predictive ability of gBLUP was e

Deep rooting in bread wheat is more strongly associated with genotypes than drought stress: evidence from Van Lake Basin genotypes.

Drought stress is a major constraint limiting bread wheat productivity in semi-arid regions, where improved root system architecture is increasingly recognized as a key component of climate resilience. However, it remains unclear whether deep rooting is primarily a genetically determined trait or a plastic response induced by drought stress. This study tested the hypothesis that genotypic background exerts a stronger influence on deep rooting patterns than water deficit itself in bread wheat. Nine genotypes, including seven locally adapted landraces from the Van Lake Basin and two standard cul

A Glu209Lys substitution in DRG1/TaACT7, which disturbs F-actin organization, reduces plant height and grain length in bread wheat.

Plant height and grain size are two important agronomic traits that are closely related to crop yield. Numerous dwarf and grain-shape mutants have been studied to identify genes that can be used to increase crop yield and improve breeding programs. In this study, we characterized a dominant mutant, dwarf and round grain 1 (drg1-D), in bread wheat (Triticum aestivum L.). drg1-D plants exhibit multiple phenotypic changes, including dwarfism, round grains, and insensitivity to brassinosteroids (BR). Cell structure observation in drg1-D mutant plants showed that the reduced organ size is due to ir

Comparative study of physicochemical, nutritional, phytochemical, and sensory properties of bread with plantain and soy flours partly replacing wheat flour.

Plantain flour (PLF) and soy flour (SF) were used to substitute wheat flour (10% and 20% w/w) in composite bread. Physicochemical, phytochemical, and sensory properties were investigated. Partial substitution by PLF significantly increased (p < .05) starch, amylose, ascorbic acid, and potassium content in bread samples. In contrast, a significant improvement (p < .05) in protein, fat, amylopectin, and calcium content was observed with SF substitution. Composite bread with PLF and SF together lowered the hydrolysis index (HI) and glycemic index (GI) as compared with whole wheat flour. The molar

Effect of sonication on European and Peruvian lupin flours: impact on the technological quality of gluten-free breads and as a partial substitute for wheat.

BACKGROUND: A widely cultivated pulse, lupin, has garnered interest for its beneficial nutritional properties, especially for baking applications. The harmful alkaloid content and poor functional properties of lupin limit its wider use. Sonication is an ecofriendly technology used to modify molecular structures. Thus, this study aimed to investigate whether sonication can improve the functional properties of Lupinus mutabilis (Peruvian) and L. angustifolius (European) flours for a better baking suitability in wheat and gluten-free breads. Both flours were sonicated and analyzed for their funct

Use of unleavened bread to reduce the appearance of radiolucent areas associated with the palatoglossal air space in panoramic radiographs: A comparative study.

INTRODUCTION: Proper tongue positioning is crucial for obtaining high-quality diagnostic images in orthopantomography (OPG). Incorrect positioning often results in a radiolucent artifact in the palatoglossal air space, compromising image quality. This issue may necessitate repeating the study or advancing to Cone-Beam Computed Tomography (CBCT), both of which increase radiation exposure. This study aimed to evaluate the effectiveness of using unleavened bread as a physical aid to decrease the occurrence of this artifact. MATERIALS AND METHODS: An experimental study was conducted involving 100

Effect of salivary fluid characteristics on the physical features of in vitro bread bolus: From the absence of saliva to artificially simulated hypersalivation.

Saliva facilitates food oral processing, bolus formation, swallowing, and sensory perception, in addition to contributing to oral health and phonation. Ageing, health affections, and polymedication are among many causes altering salivary production, modifying the mastication process, the food impregnation ratio, and in turn altering the characteristics of the bolus, swallowing, and digestion. In this in vitro work, using the AM2 masticator apparatus, which replicates the mechanical actions taking place while chewing solid foods and produces realistic food bolus in various oral conditions, we i

Effects of Psyllium Husk Gel on Phase Redistribution, Microstructure, and Thermal Properties of Whole Wheat Dough and Steamed Bread Quality.

Psyllium husk gel (PHG) is a soluble dietary fiber with well-documented health benefits, yet its application in whole wheat products is constrained by complex interactions with the gluten network. This study investigated the effects of PHG at 0%, 2%, 8%, and 14% on the phase mass and protein redistribution, microstructure, thermal properties, and steamed bread quality of whole wheat dough. PHG reduced the aqueous phase mass after ultracentrifugation and reallocated proteins predominantly to the water-insoluble fraction, while non-protein substances shifted to the water-soluble fraction associa
