Characterisation of the gastrointestinal bacterial community in pigs fed fermented liquid feed and dry feed: composition and fermentation capacity (phenotypic fingerprint).

Feeding pigs with fermented liquid feed (FLF) has been shown to reduce the number of enteropathogens such as Salmonella and Brachyospira hyodysenteriae as well as coliform bacteria in general in the gastrointestinal tract (GIT). Also the commensal bacterial populations have been shown to respond to the use of FLF, e.g. the total counts of anaerobes, including lactic acid bacteria are reduced. In the present work we demonstrate that the capacity to ferment a series of substrates (mainly low-molecular weight carbohydrates) is reduced in caecum, colon and faeces of pigs fed FLF compared to pigs f

Biosensors of Wine Fermentation for Monitoring Chemical and Biochemical Interactions, Process Indicators and Migration of Compounds and Metabolites, Between Wine and Fermentation Vessels-A Critical Review.

Wine alcoholic fermentation occurs in a dynamic biochemical environment where interactions between the vessel and the product can cause inorganic and organic species to migrate into the fermenting must or wine. At low pH and with rising ethanol levels, fermentation tanks made of stainless steel, concrete or cementitious materials, ceramics, or polymers exhibit material-specific behaviors that may promote the release of toxic trace elements or alter technologically important ions. These changes can affect yeast physiology, fermentation kinetics, and matrix stability, directly impacting wine saf

Fermentation substrate drives flavor differentiation: Multi-omics analysis of flavor formation mechanisms in sour meat fermented by various grains.

This study investigated the influence of different grain fermentation substrates on the flavor development of sour meat. The results indicated that the fermentation substrate in the coix seed group, characterized by its high starch, protein, and fat content, created favorable conditions for the proliferation of Lactiplantibacillus. This promoted the accumulation of flavor compounds, including alcohols, aldehydes, and medium-chain fatty acids, which imparted distinctive grassy and fatty flavors to the product. Additionally, this substrate enhanced the product's sour profile while significantly

Effects of varying forage particle size and fermentable carbohydrates on feed sorting, ruminal fermentation, and milk and component yields of dairy cows.

Ration sorting is thought to affect ruminal fermentation in such a manner that milk yield milk and components are often decreased. However, the influence of ruminally degradable starch on ration sorting has not been studied. Therefore, the objective of this experiment was to evaluate the interactions between forage particle size (FPS) and ruminally fermentable carbohydrates (RFC) for dry matter intake (DMI), ration sorting, ruminal fermentation, chewing activity, and milk yield and components. In this study, 12 (8 ruminally cannulated) multiparous, lactating Holstein cows were fed a total mixe

Lignin/sodium alginate composite hydrogel enhances microbial stress resistance during fermentation.

Fermenting lignocellulose-derived sugars into bulk chemicals and fuels is a pivotal route for valorizing renewable plant biomass. Microbial immobilization enables stable continuous production, yet traditional hydrogel carriers fail to protect microbes from harsh fermentation conditions and inhibitors due to structural and functional limitations. Here, a dual-crosslinked lignin/sodium alginate (L-SA) composite hydrogel was fabricated, with adhesion and chewiness enhanced by 55.8 % and 95.2 % compared to pure sodium alginate (SA) hydrogel. Lignin's weak acidic groups buffered fermentation pH via

Lactic Acid Bacteria in Vinegar Fermentation: Diversity, Functionality and Health Benefits.

Vinegar, frequently distilled by solid fermentation or liquid processes, was generated through the synergistic effect of a microbial community in open or semi-open environments. Based on the studied raw materials, researchers distributed the vinegar into three classes: grain, fruit and animal, with lactic acid bacteria (LAB) playing a pivotal role in their fermentation and contributing significantly to their functional and sensory qualities. Typically, the natural maturation of fresh vinegar necessitates a long period and vast space, engendering a reduced efficiency. To accelerate the vinegar

An update on valorising dark fermentation effluent through microbial lipid synthesis.

The transition to a sustainable bioeconomy requires effective transformation of biomass, including biogenic residues, into high-value products. Dark fermentation effluent is a promising feedstock for microbial lipid production, offering a renewable and cost-effective alternative to conventional carbohydrate substrates. Rich in short-chain carboxylic acids, this effluent provides essential carbon sources for microbial growth and supports circular biorefinery strategies, particularly when produced from locally available biogenic waste streams. This review assesses the potential of microbial lipi

Viticultural and Pre-Fermentation Strategies to Reduce Alcohol Levels in Wines.

Changes in lifestyles, as well as the growing attention to healthy nutrition, led to the increasing demand for wines with reduced alcohol content. The reduction in fermentable sugars in the pre-fermentation stage of wine is one of the common methods for the production of wines with lower alcohol content. Viticultural practices such as early harvesting, use of growth regulators, reducing leaf area to limit photosynthetic rate, and pre-harvest irrigation are utilized. Additionally, techniques such as juice dilution, juice filtration with membranes, and the use of enzymes (e.g., glucose oxidase)

'Geophagy' and Clay Minerals: Influencing Ruminal Microbial Fermentation for Methane Mitigation.

Methane is a greenhouse gas with high warming potential, and ruminants like cattle and sheep are a major source of its emission. In the rumen, the first stomach compartment, diverse microorganisms and fauna live, including archaea, bacteria, protozoa, nematodes, and fungi. They participate in complex fermentation processes. During rumen fermentation, various gases are produced, dominantly hydrogen and carbon dioxide. In methanogenesis, methanogens utilize these two gases to produce methane as a byproduct, which burps out into the atmosphere. Therefore, interfering with this methanogenesis is a

Nutrient factors specifically promoting ethanol fermentation but not growth in yeast.

Yeast ethanol fermentation and growth are affected by environmental factors such as nutrients, pH, and temperature. Ethanol fermentation in yeast is typically accompanied by cell proliferation. Thus, the specific nutrients required for fermentation remain unclear. To determine nutrients required for fermentation, first a semi-synthetic medium with a small inoculum size (OD600 = 2) was used, and CO2 gas emissions were monitored. The addition of sodium aspartate (Asp) and MgSO4 to a medium containing 0.2 % yeast extract and 9.1 % glucose efficiently increased gas emissions. Further addition of K

Induced Phase Separation and Recovery of 2,3-Butanediol from Fermentation Broth.

2,3-Butanediol (2,3-BDO) is a promising platform chemical that can be utilized in a wide range of applications including pharmaceuticals or as a building block for sustainable aviation fuel (SAF). Presently, 2,3-BDO is produced using petroleum feedstocks, however, it can also be produced by bacterial fermentation of sugars. A major drawback to biobased 2,3-BDO production is the costly separation and recovery process. Due to the high boiling point of 2,3-BDO (177 °C), a traditional distillation process would be energy intensive. This work evaluated the separation and recovery of 2,3-BDO from fe
