Formation Mechanism of Lipid and Flavor of Lard Under the Intervention of Heating Temperature via UPLC-TOF-MS/MS with OPLS-DA and HS-GC-IMS Analysis.

Lard imparts unique organoleptic properties that underpin its essential role in Chinese gastronomy; however, the specific lipid precursors contributing to its aroma remain unclear. This study explores the flavor formation mechanism of lard by comparing its texture and aroma at two preparation temperatures, 130 °C and 100 °C. We identified a total of 256 and 253 lipids at these temperatures, respectively, with triacylglycerols (TGs) and diacylglycerols (DGs) being the predominant lipid species. An HS-GC-IMS analysis detected 67 volatile compounds, predominantly aldehydes, acids, and alcohols. A

Gut microbial activity, implications for health and disease: the potential role of metabolite analysis.

Microbial metabolism of proteins and amino acids by human gut bacteria generates a variety of compounds including phenol, indole, and sulfur compounds and branched chain fatty acids, many of which have been shown to elicit a toxic effect on the lumen. Bacterial fermentation of amino acids and proteins occurs mainly in the distal colon, a site that is often fraught with symptoms from disorders including ulcerative colitis (UC) and colorectal cancer (CRC). In contrast to carbohydrate metabolism by the gut microbiota, proteolysis is less extensively researched. Many metabolites are low molecular

Metabolite Quantitative Trait Loci Mapping for Fragrance and Fatty Acid Composition in Rice (Oryza Sativa L.).

BACKGROUND: Fragrance is a premium trait of grain quality in the traditional, Jasmine-style rice (Oryza sativa L.) variety Phka Rumduol (PRD). Rice fragrance is a combination of various volatile compounds with characteristic odours and flavours that can be traced back to fatty acids. Given the complexity of fragrance phenotype, the use of a robust phenotyping platform in identifying metabolite quantitative trait loci (mQTL) is essential to providing the most suitable set of genetic markers associated with desirable fragrance metabolites and their fatty acid origins in PRD-derived rice breeding

Untargeted Profiling and Differentiation of Volatiles in Varieties of Meat Using GC Orbitrap MS.

Volatile compounds play vital roles in food sensory attributes and food quality. An analysis of volatile compounds could illustrate the sensory attributes at the microscale level. Here, untargeted profiling approaches for volatiles in five most-consumed meat species were established using headspace SPME-GC/high resolution Orbitrap MS. An extended high-resolution database of meat volatile compounds was established to enhance the qualification accuracy. Using sulfur-containing compounds, aldehydes, and ketones as the research model, the parameters including fiber coating types, extraction temper

Biochemical pathways generating post-mortem volatile compounds co-detected during forensic ethanol analyses.

In this contribution are presented the fermentations of the main substrates present in a decaying corpse, namely carbohydrates, amino acids, glycerol and fatty acids, generating the post-mortem volatile compounds that could be detected along with ethanol during the forensic ethanol analysis. The available literature (preferably reviews) on microbial metabolic pathways (enzymes, substrates, conditions) that are implicated in the formation of these volatiles has been reviewed. The microbial formation of the following volatiles is supported by the presented biochemical data: ethanol, acetaldehyde

Dietary resveratrol improves meat quality in lambs via the rumen-muscle axis mediated by reshaped microbial metabolism.

Resveratrol (RSV) is a plant-derived polyphenol known to enhance host health and growth in animals. In this study, we used integrated metagenomic and metabolomic approaches to show that dietary RSV reshapes the rumen microbiome and its metabolism. Specifically, RSV upregulated volatile fatty acid (VFA) and amino acid synthesis pathways while suppressing methanogenesis in finishing lambs. These microbial metabolic changes propagated along a rumen-muscle axis, driving compositional improvements, as evidenced by elevated polyunsaturated fatty acids (gamma-linolenic acid) and key amino acids (Ser,

Lipid remodeling is associated with aroma formation during thermal processing of quail egg yolk: an integrated multi-omics study.

Thermal processing substantially influences egg flavor quality, yet the metabolic basis underlying aroma development in quail egg yolk remains incompletely understood. In this study, GC-IMS, HS-SPME-GC-MS, lipidomics, and widely targeted metabolomics were integrated to characterize flavor-related metabolic changes during thermal processing. GC-IMS detected 48 VOCs, whereas HS-SPME-GC-MS detected 451 volatile features, of which 161 compounds with available odor threshold data were further evaluated by OAV analysis. Aldehydes, ketones, esters, and terpenoids predominated in cooked yolks. GC-IMS

Effects of Infusion and Decoction Mashing on Carbohydrate Structure, Fermentation Behavior, and Volatile Compound Profiles in Wheat Beer.

Beer flavor depends on the composition and structural characteristics of fermentable carbohydrates generated during mashing. Although mashing strategy is known to influence wort composition, the mechanistic relationship between mashing-induced variations in carbohydrate structure and subsequent yeast metabolism and flavor formation remains poorly understood. This study aimed to compare the effects of two mashing procedures, infusion mashing (IMM) and decoction mashing (DMM), on carbohydrate structure, fermentation behavior, and flavor attributes of wheat beer. The physicochemical properties we

Fatty acid desaturase 2 (FAD2) is functionally involved in regulation of synthesis of fatty acid derivatives in Chrysanthemum indicum var. aromaticum.

The fatty acid desaturase 2 (FAD2) is an important functional gene in the fatty acid metabolism pathway of aromatic plants, which can significantly affect the biosynthesis of volatile compounds and the aroma characteristics. However, the possible mechanism of action of FAD2 in Chrysanthemum indicum var. aromaticum (Ci. var. aromaticum) is still unclear at present. In this study, the open reading frame (ORF) sequence of FAD2 (CiFAD2) was cloned from Ci. var. aromaticum, and it was heterologously transferred into the model plant tobacco by constructing a plant expression vector for overexpressio
