Sixty-one samples of Portuguese cereal-based foods were analysed for the occurrence of emerging mycotoxins called enniatins (A, A1, B and B1) and beauvericin. Samples were extracted with a mixture of acetonitrile/water (85/15, v/v) using an Ultra-Turrax homogeniser, and mycotoxins were detected with liquid chromatography coupled to a mass spectrometer. This method was validated and adequate values of recovery (70-103%) and relative standard deviation (<15%) were obtained. Signal suppression/enhancement was studied and matrix-matched calibration used to minimise this effect, but no additional c

Alternaria alternata is a common postharvest mold affecting tomato products, including cherry tomatoes, and causing their contamination with mycotoxins. When consumers encounter moldy fruits, some may remove the visibly contaminated part and consume the rest, to reduce waste. However, the extent to which A. alternata toxins migrate beyond visible fungal growth remains unclear, potentially posing health risks. This study investigated (i) the within-fruit migration of A. alternata in cherry tomatoes together with the associated mycotoxin production, and (ii) the diffusion of purified Alternaria

The purpose of ante- and post-mortem inspections at slaughterhouses is to ensure that meat and other relevant food products of animal origin are safe for human consumption. However, these inspections can also be useful for detecting animal health and welfare issues. In cattle, traumatic injuries from on-farm incidents, transport or handling at the slaughterhouse are indications of both reduced animal welfare and increased risk of food waste, ultimately resulting in economic losses for both farmers and slaughterhouses. This observational study aimed to investigate the prevalence and seasonal va

Porcine cysticercosis (PC) is an important public health problem, especially in sub-Saharan Africa, but limited information is available on the prevalence of infection in pigs entering the food chain. Existing diagnostic methods vary in accuracy and efficiency; whole carcass dissection is the most reliable method but is labour-intensive and destroys the carcass so can only be used in a research setting. Serological tests offer lower specificity, while meat inspection and lingual examination lack sensitivity, hampering accurate estimates and the removal of infected pigs from the food chain. Her

Listeria monocytogenes is a bacterium widely spread in the environment. Its persistence in industrial environment leads to food product contamination from the raw materials and constitutes a recurrent problem in food processing industry despite the use of cold chain procedures. L. monocytogenes is a foodborne pathogen causing severe and life-threatening infections that evolve mainly under sporadic mode, even if epidemics sometimes occur. Listeriosis causes mainly septicemia, central nervous system infections (meningitis and meningoencephalitis) and abortions. Listeriosis occurs primarily at ri

The uncertainty associated with estimates should be taken into account in quantitative risk assessment. Each input's uncertainty can be characterized through a probabilistic distribution for use under Monte Carlo simulations. In this study, the sampling uncertainty associated with estimating a low proportion on the basis of a small sample size was considered. A common application in microbial risk assessment is the estimation of a prevalence, proportion of contaminated food products, on the basis of few tested units. Three Bayesian approaches (based on beta(0, 0), beta(1/2, 1/2), and beta(l, 1

The Canadian Food Inspection Agency is developing an Establishment-based Risk Assessment model for Hatcheries to allocate inspection resources according to the food safety risk associated with each hatchery falling under its jurisdiction. In a previous study, 29 factors contributing to the food safety risk of hatcheries were identified and grouped into three clusters (inherent risk, risk mitigation, and compliance) and assessment criteria were defined. The objective of the current study was to estimate the relative risk (RR) of these criteria. Two rounds of expert elicitations were conducted t

The People's Republic of China has a large number of animal parasites transmitted through the ingestion of food products. Approximately 20 species of parasites in animals and man are reported from most of the provinces and autonomous regions of the country. The major food-borne parasitic zoonoses are reported from pigs, cattle, fish, crabs and crayfish, snails, frogs, snakes, and aquatic plants. The most important diseases are toxoplasmosis, taeniasis, cysticercosis, sparganosis, clonorchiasis, fascioliasis, fasciolopsiasis, paragonomiasis, echinostomiasis, trichinosis, gnathostomiasis, and an

BACKGROUND: A one-step polymerase chain reaction (PCR) method for the simultaneous detection of the major allergens of pecan and Brazil nuts was developed. Primer pairs for the amplification of partial sequences of genes encoding the allergens were designed and tested for their specificity on a range of food components.
RESULTS: The targeted amplicon size was 173 bp of Ber e 1 gene of Brazil nuts and 72 bp of vicilin-like seed storage protein gene in pecan nuts. The primer pair detecting the noncoding region of the chloroplast DNA was used as the internal control of amplification. The intrins

Over the past decade, eastern Europe has experienced a resurgence of trichinellosis. A recent outbreak in Serbia, Yugoslavia, from December 2001 to January 2002, involving 309 people, revealed many of the causes for this reemergence. Epidemiological investigations indicate that the immediate cause of the recent outbreak was the consumption of smoked sausages produced by a small slaughterhouse or meat processor. However, failure of in-house meat inspection procedures and quality assurance as well as oversight by official veterinary control were also responsible. Further analysis of this breakdo

The aim of the present study was to evaluate the accuracy of labeling and the efficacy of visual inspection to detect the lesions by visible parasites in anglerfish Lophius litulon. One hundred samples were collected over a 2-year period (2011 to 2012) from Chinese retail markets in Sardinia, Italy. To assess the conformity of the items with the trade name, a preliminary visual inspection of the samples by a simple morphological analysis was performed. According to the Council Regulations (EC) 104/2000, 1224/2009, and 2074/2005, the Italian labels were examined to verify the appropriate indica

Vertebral osteomyelitis (VO) it is often a suppurative lesion that, in Portugal, represents the main cause of total condemnation of slaughtered finishing pigs. Based on the EU Meat Inspection legislation, meat from generalized VO cases presenting signs of pyemia should be declared unfit for human consumption. For that reason, the main objective of this study is to establish a classification scheme to differentiate between localized and generalized VO cases using macroscopic findings and validate it based on the presence of pyemia. To assist in, a combination of macroscopic characteristics of g

In spite of the EU directives that regulate meat inspection for bovine cysticercosis, Taenia saginata is still present in Europe and causes economic losses due to condemnation, refrigeration and downgrading of infected carcasses. The main reasons for this persistence include the low sensitivity of current meat inspection protocols, the dissemination and survival of eggs in the environment and cattle husbandry systems, which allow grazing on pastures and drinking from water streams. It is assumed that water streams and surface water are potentially contaminated with T. saginata eggs. Furthermor

In this study, the finite element method (FEM) is employed to quantitatively evaluate a plasmonic refractive index (RI) sensor using a metal-insulator-metal (MIM) waveguide with a disk-shaped resonator and a triangular defect. We examine the effects of different geometric attributes on the transmission spectrum to enhance sensor performance. The proposed sensor demonstrates peak RI sensitivity, peak temperature sensitivity, and a figure of merit (FoM) of 1600 nm/RIU, 1.2 nm/C, and 72.9RIU-1, respectively, within the 900-2000 nm wavelength spectrum. We have analyzed the framework for potential

Detailed postmortem examinations were conducted to evaluate the efficiency of meat inspection procedures and to determine the distribution of lesions in Mycobacterium bovis-infected cattle. The study involved routine inspection at slaughter, collection of tissues for detailed examination in the laboratory, and bacteriological examination to identify M. bovis. Additionally, a 10-year (1992--2001) meat inspection record was analysed to determine tuberculosis trends in the past decade. chi2-Test and simple regression were used to analyse the data. Out of 1350 cattle examined, 1.5% were found with

Septicemia is an unwholesome condition diagnosed during postmortem inspection in poultry slaughter establishments on the basis of macroscopic lesions. Early identification of septicemia has important public health implications. In this study, Pasteurella multocida, Escherichia coli, and Staphylococcus aureus septicemia were induced in broilers in order to determine if lesions of acute septicemia can be grossly detected in the visceral organs of broiler carcasses prior to the development of changes in the skeletal muscle. Increased spleen and liver weights were observed during the acute phase o

Antibiotics have been widely used in the treatment of livestock diseases. However, the emergence of issues related to drug resistance prompted governments to enact a series of laws regulating the use of antibiotics in livestock. Following control of the problem of drug resistant bacteria, public attention has shifted to the recurring incidence of human health and safety issues caused by residual veterinary drugs in livestock products. To guarantee the safety and hygiene of meat, milk, and eggs from food-producing animals, governments and relevant agencies established laws and regulations for t
