Mechanistic Systems Biology of High-Salinity Fermented Seafood: Multi-Omics Integration for Microbial Safety and Quality Prediction.

Foodborne diseases present a serious public health challenge, causing roughly 600 million illnesses and 420,000 deaths annually. A significant portion of this impact is felt in Asia, where traditional fermented and dry-salted seafood, such as katsuobushi, budu, and peda, are dietary staples. These products rely on diverse microbial communities that determine their final safety, flavor, texture, and shelf life. Historically, research has centered on lactic acid bacteria (LAB), yet the functional contributions of non-LAB halotolerant species, including genera like Tetragenococcus, Staphylococcus

Pollution profiles and human health risk assessment of BPA analogues in seafood from a Chinese coastal city.

With the restrictions on bisphenol A (BPA), bisphenol analogues (BPs) have become prevalent in the environment and organisms. Diet is a major route for human exposed to BPs, and seafood is a significant dietary component, particularly for coastal residents. We collected 31 seafood samples from the largest seafood market in Lianyungang and detected 11 BPs. The total BPs concentration (excluding two with low detectability) in seafood ranged from 0.54 to 39.65 μg/kg dry weight. Shellfish exhibited the highest levels of these compounds. Noteworthy variations were observed in both the quantity and

Graphene oxide supported MOFs-nanofiber carbon aerogel/SPCE for simultaneous detection of Cd2+ and Pb2+ in seafood.

A novel electrochemical sensor for detecting heavy metal ions in seafood was developed to address food safety concerns. The sensor integrates graphene oxide into NH2-UiO-66 loaded nanofiber carbon aerogel, enhanced its three-dimensional conductive network and effective active surface area (0.34 cm2), which improved ion enrichment and oxidation-reduction reaction rates. Using the Box-Behnken design, the sensor was optimized to detect cadmium and lead with LODs of 0.16 μg·L-1 and 0.07 μg·L-1 in the 1 to 150 μg·L-1 linear range. Applied to real seafood samples, the sensor showed results consisten

Cadmium ions mediated turn-on electrogenerated chemiluminescence of ZnS nanoparticles for highly selective cadmium detection in seafood.

Cd2+ is one of the most toxic heavy metal ions that can be easily accumulated in human body via food chain. Thus, the onsite detection of Cd2+ in food is very important. However, present methods for Cd2+ detection either require the use of large equipment, or suffer from the severe interference from other analogical metal ions. This work establishes a facile Cd2+ mediated turn-on ECL method for highly selective detection of Cd2+ via cation exchanging with the nontoxic ZnS nanoparticles, owing to the unique surface-state ECL properties of CdS nanomaterials. The linear range of the calibration c

COVID-19 Among Workers in the Seafood Processing Industry: Implications for Prevention Measures - Alaska, March-October 2020.

Large COVID-19 outbreaks have occurred in high-density workplaces, such as food processing facilities (1). Alaska's seafood processing industry attracts approximately 18,000 out-of-state workers annually (2). Many of the state's seafood processing facilities are located in remote areas with limited health care capacity. On March 23, 2020, the governor of Alaska issued a COVID-19 health mandate (HM10) to address health concerns related to the impending influx of workers amid the COVID-19 pandemic (3). HM10 required employers bringing critical infrastructure (essential) workers into Alaska to su

Macrocyclic lactones from seafood Amphioctopus neglectus: Newly described natural leads to attenuate angiotensin-II induced cardiac hypertrophy.

Amphioctopus neglectus (Family: Octopodidae) is recognised as culinary delicacy in many cultures and a common sea food item on the Mediterranean and Asian coasts. Bioassay-directed fractionation of ethyl acetate/methanol extract of A. neglectus ensued in the characterisation of four previously undescribed macrocyclic lactones (1-4). These compounds exhibited potential radical-scavenging capacities (IC50 0.95-1.73 mM) along with anti-hypertensive activities (IC50 1.12-2.34 mM) against angiotensin converting enzyme (ACE). The optimum binding affinity of compound 2 (-9.84 kcal mol-1) bearing furo

Identification of microbial communities and multi-species biofilms contamination in seafood processing environments with different hygiene conditions.

Biofilms formed by spoilage and pathogenic bacteria increase microbial persistence, causing an adverse influence on the quality of seafood. The mono-species biofilms are widely reported, however, the contamination of multi-species biofilms and their matrix in food environments are still not fully understood. Here, we assessed the contamination of multi-species biofilms in three seafood processing environments with different hygiene levels by detecting bacterial number and three biofilm matrix components (carbohydrates, extracellular DNA (eDNA), and proteins). Samples comprising seven food matr

Dual-signal fluorescent test strips for spoilage sensing of packaged seafood: Visual monitoring of volatile basic nitrogens.

With the food safety issues abounding, exploring reliable and efficient methods for evaluating food safety is crucial. Herein, a ratiometric test strip was proposed by using green-yellow fluorescent d-penicillamine capped silver nanocluster (DPA-AgNCs) as indicator and red-emitting bimetallic gold/silver nanoclusters (AuAgNCs) as an internal reference, providing a real-time and visual monitoring system for food freshness. Results showed that the as-prepared DPA-AgNCs displayed an excellent response and good sensitivity for volatile basic nitrogens (VBNs), with a limit of detection (LOD) of 0.5

Genetic and Phenotypic Virulence Potential of Non-O1/Non-O139 Vibrio cholerae Isolated from German Retail Seafood.

Non-O1 and non-O139 Vibrio cholerae (NOVC) can cause gastrointestinal infections in humans. Contaminated food, especially seafood, is an important source of human infections. In this study, the virulence potential of 63 NOVC strains isolated from retail seafood were characterized at the genotypic and phenotypic levels. Although no strain encoded the cholera toxin (CTX) and the toxin-coregulated pilus (TCP), several virulence factors, including the HlyA hemolysin, the cholix toxin ChxA, the heat-stable enterotoxin Stn, and genes coding for the type 3 and type 6 secretion systems, were detected.

Ultra-trace determination of methylmercuy in seafood by atomic fluorescence spectrometry coupled with electrochemical cold vapor generation.

A homemade electrochemical flow cell was adopted for the determination of methylmercury. The cold vapor of mercury atoms was generated from the surface of glassycarbon cathode through the method of electrolytic reduction and detected by atomic fluorescence spectroscopy subsequently. The operating conditions were optimized with 2 ng mL(-1) methylmercury standard solution. The caliberation curve was favorably linear when the concentrations of standard HgCH3(+) solutions were in the range of 0.2-5 ng mL(-1)(as Hg). Under the optimized conditions, the limit of detection (LOD) for methylmercury was
