Genome-Assisted Characterization of Lactobacillus fermentum, Weissella cibaria, and Weissella confusa Strains Isolated from Sorghum as Starters for Sourdough Fermentation.

Sourdough fermentation of bakery products is a well-established and widespread technique to confer an added value to the resulting food. In recent decades, gluten-free raw materials have gained more attention due to the diffusion of food disorders such as coeliac disease, but, at the same time, they present difficult manipulation and scarce technological properties because of the absence of gluten. For this reason, the present work was aimed at selecting starter cultures for sourdough application that are isolated from fermentation of sorghum flour. Three isolates of Lactobacillus fermentum, W

Herbivore-induced sorghum volatiles mediate attraction of Cotesia flavipes: roles of DMNT and (Z)-3-hexenyl acetate in tritrophic chemical communication.

Herbivore-induced plant volatiles (HIPVs) influence chemical communication among plants, herbivores, and natural enemies and contribute to indirect plant defense. Previous work by our group characterized volatile emissions from sorghum following simulated herbivory and identified DMNT and (Z)-3-hexenyl acetate among consistently induced compounds, but their behavioral activity toward the stem-borer parasitoid Cotesia flavipes was not determined. Four-week-old sorghum (Sorghum bicolor L. Moench) plants were mechanically wounded and treated with Chilo partellus larvae oral secretions. Head-space

Effects of 12-Week Sorghum Consumption on Visceral Fat Area and Metabolic Parameters in Japanese Adults: An Exploratory Single-Arm Trial.

Background: Visceral fat accumulation is strongly associated with metabolic disorders, particularly in Japanese adults who accumulate visceral fat even at lower body mass index levels. Sorghum is a whole grain rich in resistant starch and polyphenols, which may influence visceral fat area (VFA). This exploratory study aimed to investigate the effects of 12-week sorghum consumption on VFA and metabolic parameters in Japanese adults with visceral fat accumulation. Methods: This single-arm intervention trial included adults aged 20-60 years with VFA ≥ 100 cm2 and no ongoing medical treatment. Par

Sustainably Polyanionic Hyaluronic Acid-Based Hydrogel for Efficient Removal of Fe3+, Cd2+, and Pb2+ Ions in Soil with Enhanced Sorghum Growth.

Toxic metals damage soil quality and harm human health via bioaccumulation, necessitating eco-friendly removal techniques. Hydrogel-based adsorption offers a promising approach for heavy metal extraction. Nevertheless, the potential of innovative hyaluronic acid (HA)-based hydrogels has not been fully investigated. In this study, levodopa and tannic acid were first grafted onto HA using condensation reactions. Subsequently, the HLDT hydrogel was developed by grafting Na-AMPS onto the HA derivative through free radical polymerization, which enhanced its mechanical properties for metal ion adsor

Lignocellulose degradation, enzymatic saccharification and bioethanol production from whole-crop sweet sorghum silage inoculated with feruloyl-esterase producing lactic acid bacteria.

Commercialization of cellulosic biofuels faces challenges like year-round feedstock availability and lignocellulose recalcitrance. This study ensiled whole-crop sweet sorghum biomass, inoculating it with feruloyl-esterase producing Lactiplantibacillus plantarum A1 to ensure consistent feedstock supply and promote lignin degradation during fermentation. The ensiled biomass underwent 72 h enzymatic saccharification followed by 96 h Saccharomyces cerevisiae fermentation for bioethanol production. Compared to uninoculated controls, L. plantarum A1 inoculation significantly reduced dry matter loss,

Multiresponse Surface Optimization of Ionic Gelation Vibrational Jet Flow Technology to Fine-Tune Kafirin Microparticles Extracted From Sorghum Dried Distiller's Grain.

Sorghum dried distiller's grain with solubles (DDGS), a protein-enriched byproduct of sorghum bioethanol production, is predominantly used as a low-cost animal feed. However, unutilized DDGS is mainly discarded as waste, containing approximately 40% of the prolamin protein kafirin. Kafirin's high hydrophobicity, low digestibility, evaporation-induced self-assembly, and strong disulfide cross-linking offer potential for biomaterial applications. This study used ethanol extraction and acid precipitation to purify kafirin protein from sorghum DDGS. The extracted protein was then used to prepare m

Proximate Composition, Antidiabetic and Hypolipidemic Activity of Bread Produced from Wheat-Sorghum Base Supplemented with Mung Bean Malt and Carrot Flour.

Diabetes is a group of disorders of carbohydrate metabolism characterized by a high level of glucose in urine. Evidence supports the use of whole-grain foods, vegetables, and fruits, and foods with a low glycemic index in the management of diabetes. Ten (10) blends of wheat-sorghum flour supplemented with mung bean malt and carrot flour were used for bread production and evaluated for proximate composition. Three bread samples with protein contents of 18% or higher were tested for antidiabetic and hypolipidemic effects on alloxan-induced diabetic rats. Bread samples containing 30% mung bean ma

Localized co-inoculation of compatible Bacillus subtilis and Trichoderma afroharzianum is associated with shifts in the root microbiome and improves plant performance in sorghum.

Although bacterial-fungal consortia have been investigated for plant growth promotion, their effects on sorghum performance and associated root microbial taxa remain less characterized. Here, we investigated how individual and combined inoculation with Bacillus subtilis and Trichoderma afroharzianum influenced sorghum performance and root microbiome assembly. The in vitro co-culture assay demonstrated the compatibility of B. subtilis and T. afroharzianum as a microbial consortium. The B. subtilis-T. afroharzianum consortium demonstrated the highest CPPI (composite plant performance index) and

Age versus stage: does ontogeny modify the effect of phosphorus and arbuscular mycorrhizas on above- and below-ground defence in forage sorghum?

Arbuscular mycorrhizas (AM) can increase plant acquisition of P and N. No published studies have investigated the impact of P and AM on the allocation of N to the plant defence, cyanogenic glucosides. We investigated the effects of soil P and AM on cyanogenic glucoside (dhurrin) concentration in roots and shoots of two forage sorghum lines differing in cyanogenic potential (HCNp). Two harvest times allowed plants grown at high and low P to be compared at the same age and the same size, to take account of known ontogenetic changes in shoot HCNp. P responses were dependent on ontogeny and tissue

Integrated Transcriptomic and Metabolomic Profiling Reveals the Involvement of the miR397-5p-SbLAC14 Module in Condensed Tannin Accumulation in Developing Sorghum Seeds.

Sorghum seeds accumulate substantial amounts of condensed tannins (CTs), which are also referred to as proanthocyanidins (PAs), contributing to their characteristic astringent taste. Flavan-3-ol polymers, known as PAs, are sequestered within plant vacuoles and become catalytically activated via laccase enzymes. However, the biological roles and regulatory pathways of laccases in sorghum are still largely unclear. Here, integrated transcriptomic and metabolomic profiling of developing sorghum seeds identified 7942 differentially expressed genes between low- and high-CT lines, with Kyoto Encyclo

Index- and Pareto-based multi-trait selection identifies dual-purpose sorghum and pearl millet cultivars for arid agro-ecosystems of Saudi Arabia.

BACKGROUND: Rainfed cereal production in southwestern Saudi Arabia depends largely on farmer-saved landraces, creating an important opportunity to strengthen grain and fodder productivity in mixed crop-livestock systems exposed to heat and variable rainfall. This study evaluated introduced dual-purpose sorghum and pearl millet germplasm under contrasting arid, supplemental-irrigated rainfed environments, and applied complementary quantitative approaches to identify high-performing, stable candidates that balance grain yield and green-fodder production while accounting for genotype × environmen

Enhanced extraction and functional properties of 3-deoxyanthocyanidins from red sorghum leaf sheaths via ultrasound-assisted extraction with natural deep eutectic solvent.

The leaf sheaths of the red sorghum (Sorghum bicolor L.) Moench) are a plant waste, which has a stable red color due to the bioactive 3-deoxyanthocyanidins such as apigeninidin (APG) and luteolinidin (LUT). In the present study, a multiple optimization process was conducted on ultrasound-assisted extraction (UAE) combined with natural deep eutectic solvent (NADES) to maximize the extraction of 3-deoxyanthocyanidins from the leaf sheaths of the red sorghum. The preliminary experiments showed that the contents of APG and LUT were found in ranges of 2.25 ± 0.01-31.59 ± 0.09 mg/g and 1.36 ± 0.01-3

Down-Regulation of CYP79A1 Gene Through Antisense Approach Reduced the Cyanogenic Glycoside Dhurrin in [Sorghum bicolor (L.) Moench] to Improve Fodder Quality.

A major limitation for the utilization of sorghum forage is the production of the cyanogenic glycoside dhurrin in its leaves and stem that may cause the death of cattle feeding on it at the pre-flowering stage. Therefore, we attempted to develop transgenic sorghum plants with reduced levels of hydrogen cyanide (HCN) by antisense mediated down-regulation of the expression of cytochrome P450 CYP79A1, the key enzyme of the dhurrin biosynthesis pathway. CYP79A1 cDNA was isolated and cloned in antisense orientation, driven by rice Act1 promoter. Shoot meristem explants of sorghum cultivar CSV 15 we

Localized root colonization by Trichoderma afroharzianum T22 is associated with host transcriptional reprogramming and beneficial bacterial enrichment under salinity stress in sorghum.

Salinity is a major abiotic stress that severely restricts crop productivity. Despite considerable potential, the role of Trichoderma afroharzianum T22 in the molecular responses and root microbiome dynamics associated with salinity tolerance remains poorly understood in sorghum. In this study, T. afroharzianum inoculation alleviated salinity-induced stress by improving chlorophyll content, growth parameters, and nutrient balance, while restricting root-to-shoot Na+ translocation. Split-root experiments showed that T. afroharzianum application to a single root compartment was insufficient to i

The improvement of Hovenia acerba-sorghum co-fermentation in terms of microbial diversity, functional ingredients, and volatile flavor components during Baijiu fermentation.

The quality of Baijiu was largely affected by raw materials, which determine the flavor and taste. In the present study, organic acids, polyphenols, volatile flavor components and microbial community in Hovenia acerba-sorghum co-fermented Baijiu (JP1) and pure sorghum-fermented Baijiu (JP2) were comprehensively analyzed. Organic acids, polyphenols and volatile flavor components in JP1 were more abundant than JP2. The abundance and diversity of bacteria and fungi in JP1 was higher than that in JP2 in the early stage of fermentation, but presented opposite trend in the middle and late stages. Le
