Relation between PROP (6-n-propylthiouracil) taster status, taste anatomy and dietary intake measures for young men and women.

Previous studies have related 6-n-propylthiouracil (PROP) taster status to preference for, and consumption of various (bitter-tasting) foods recognized for their cancer-preventive properties. The aim of this study was to examine PROP taster status in relation to general measures of dietary intake as well as the consumption of specific food groups. College students (n=183) were classified as non-tasters (n=49), medium tasters (n=89) and supertasters (n=45) of PROP based on intensity ratings of NaCl and PROP solutions. Dietary intake measures were derived from a food frequency questionnaire and

Major Bitter-Tasting Compounds from the Dichloromethane Fraction of Bitter Gourd (Fruit of Momordica charantia L.) Extract and Their Precursors.

The unripe fruit of the plant Momordica charantia L., commonly known as bitter gourd or bitter melon, is a popular vegetable and medical herb in many parts of the world and is characterized by its strong bitter taste. In our endeavor to decode its bitter taste, the dichloromethane fraction of 75% methanol extract of bitter gourd was found to be intensely bitter. Combining sensory analysis-guided fractionation and newly developed comparative high-pressure liquid chromatography (HPLC) analysis-guided purification led to the isolation of five known compounds including momordicoside L (1), (23E)-3

Naloxone modulates gustatory perception, but not insulin and C-peptide release, in sham-fed human subjects.

In order to determine the role of the endogenous opiatergic system in modulation of human pancreatic B-cell function and taste perception, we measured the reactivity of gustatory receptors (electrogustometry), insulin and C-peptide serum concentration (radioimmunoassay) in six normal men (aged 24-26 years) during sham feeding and 0.8 mg of naloxone or placebo (saline) administration. We did not observe any differences in insulin and C-peptide concentrations during tease feeding independently of placebo or naloxone infusion. The verge of electric reactivity of gustatory perception significantly

A psychophysical and electrophysiological analysis of salt taste in Trpv1 null mice.

Current evidence suggests salt taste transduction involves at least two mechanisms, one that is amiloride sensitive and appears to use apically located epithelial sodium channels relatively selective for Na(+) and a second that is amiloride insensitive and uses a variant of the transient receptor potential vanilloid receptor 1 (TRPV1) that serves as a nonspecific cation channel. To provide a functional context for these findings, we trained Trpv1 knockout (KO) and wild-type (WT) C57BL/6J mice (n = 9 or 10/group) in a two-response operant discrimination procedure and measured detection threshol

[The effect of zinc agent in 219 patients with zinc deficiency-inductive/ idiopathic taste disorder: a placebo controlled randomized study].

Diagnosis and treatment of taste disorders are challenging because the disorder can only be determined by the awareness of the patient. Hence, these disorders still require comprehensive evidence. We conducted a randomized, placebo-controlled double-blind study to investigate the effect of polaprezinc, a zinc-containing agent, in 219 patients with either zinc deficiency-inductive or an idiopathic taste, disorder. As a result, the zinc-treated arm experienced a statistically significant improvement against the placebo-treated arm in the perceptible threshold scores of the filter-paper disk meth

Exploring the Relationship Between Astringency and Lingual Tactile Sensitivity.

When lingual tactile sensitivity has received less attention than taste, it plays a critical role in food textural preferences and eating behavior. The anterior tongue, rich in specialized mechanoreceptors, is particularly sensitive to tactile stimuli. This study investigated inter-individual variability in lingual tactile sensitivity and its potential relationship with astringency sensitivity. To this end, three distinct aspects of lingual tactile sensitivity as well as tongue strength were assessed in 39 subjects (26 F, mean age = 35 ± 5 years). The three tactile dimensions included: (i) lig

[Olfactory and gustatory sweating--case report on reflex facial hyperhidrosis].

Localised hyperhidrosis is comparatively rare among the vegetative disorders. A case of pathological gustatory and olfactory sudation is reported, with the sequence of symptoms corresponding to that of the Frey syndrome. Working from the reflex nature of the phenomen, the paper puts forward a model to account for the delayed onset of the manifestation following a peripheral lesion. It is assumed that readjustment of the reflex excitation level takes place according to a modification in peripheral afference, and that a decompensation of the central control mechanisms results in a pathological e

Characterization of the sweetness of natural plant-derived sweeteners mogroside IV and V and their interactions with human sweet taste receptor.

Mogrosides are an important type of natural plant-derived sweeteners, which are used in foods and medicines. However, their sweetness and structure-activity relationship, especially those for the representative members mogrosides IV and V, have been rarely reported. In the present study, we characterized the sweet taste properties (threshold values, etc) of mogrosides IV and V with a cell-based calcium mobilization assay, showing that mogrosides represent a category of primitive sweet compounds which are edible by primates as well as other mammals. Furthermore, it was demonstrated that the swe

Gustatory and olfactory sensitivity in patients with anorexia and bulimia in the course of treatment.

BACKGROUND: The majority of studies on taste and smell in eating disorders have revealed several alterations of olfactory or gustatory functions. Aim of this prospective study was to employ detailed olfactory and gustatory testing in female subjects of three homogenous groups - anorexia nervosa, bulimia nervosa and healthy controls - and to look at the effects of treatment on these measures. METHODS: Sixteen hospitalized female patients with anorexia (restricting type, mean age [M]=24.5 years), 24 female patients with bulimia (purging type, M=24.3 years) as well as 23 healthy controls (M=24.5

Taste Mechanism of Umami Molecules from Fermented Broad Bean Paste Based on In Silico Analysis and Peptidomics.

In this study, in silico analysis and peptidomics were performed to examine the generation mechanism of the umami taste of fermented broad bean paste (FBBP). Based on the information from peptidomics, a total of 470 free peptides were identified from FBBP, most of which were increased after fermentation. Additionally, the increase of the content of umami peptides, organic acids, and amino acids during fermentation contributed to the perception of umami taste in FBBP. Molecule docking results inferred that these umami molecules were easy to connect with Ser, Glu, His, and Gln in the T1R3 subuni

Effect of cross-cultural differences on thickness, firmness and sweetness sensitivity.

Sensitivity of the somatosensory system may be influenced by multiple physiological parameters. Variations in oral physiology can arise from cross-cultural differences which may potentially affect sensory sensitivity. The aim of this case study was to quantify texture and taste sensitivity in Dutch (Caucasian) and Chinese (Asian) adults living in the Netherlands. Eighty-five healthy subjects were recruited including 44 Dutch (Caucasian) adults (29 females, 22.8 ± 2.3 yrs) and 41 Chinese (Asian) adults (30 females, 24.5 ± 2.1 yrs) living in the Netherlands for less than 1 year. Taste perception in patients with insular cortex lesions.

Research on nonhuman primates suggests that the primary taste cortex in humans is located in the rostrodorsal insula. Qualitative and quantitative assessment of taste perception was performed on 6 patients with unilateral damage to the insula, 3 patients with brain damage outside the insula, and 11 age-matched, normal subjects. Each subject identified the quality and intensity of the gustatory stimuli applied separately to the left and right sides of the anterior tongue. Damage to the right insula produced ipsilateral taste recognition and intensity deficits. Damage to the left insula caused a

[Electrometric method of studying taste in brain diseases].

Disorders of the sense of taste were studied in 355 patients with craniocerebral pathology, among whom 70 had tumors of the acoustic nerve, 64 had a craniocerebral trauma, 60 had tumors of the cerebral hemispheres. The most coarse disorders with the loss of the sense of taste on the anterior 2/3 of the tongue were encountered in tumors of the acoustic nerve and in transverse infracture of the pyramid of the temporal bone. Longitudinal infractures of the pyramid usually cause a diminished sense of taste on the anterior 2/3 of the tongue in the acute period, with improvment of the taste in the l

Influence of aging on electrogustometry thresholds.

Taste thresholds were measured using electrogustometry by the same researcher at three pairs of sites in the mouth (soft palate, tongue tip and tongue base) in both smokers and non-smokers (n = 461; age range 15-94 years). Comparison of the results by decades showed that the threshold increased significantly with age, starting at age 60 for areas innervated by the chorda tympani and glossopharyngeal nerves and at age 70 for areas innervated by the greater petrosal nerve. For the older teenage subjects, females had significantly lower thresholds than males and thresholds for women tended to be

Salt taste perception, dietary salt intake, cardiovascular health and genetic variation in Zambian adults with HIV.

INTRODUCTION: Cardiovascular diseases (CVDs) are the leading cause of noncommunicable mortality in sub-Saharan Africa (SSA), driven in part by excessive salt intake. People living with HIV (PLWH) face heightened CVD risks due to hypertension and potential taste dysfunction, yet genetic and sensory drivers of salt intake in this population remain understudied. This study primarily explores differences between salt taste perception and dietary salt intake. The secondary aim was to determine if genetic variation influences the above and health markers of CVD. METHODS: Seventy-nine Zambian adults
