Fermentation-derived umami peptides from animal-based foods: Mechanistic insights, nutritional benefits, and technological innovations.

Umami peptides are short bioactive sequences released during protein hydrolysis. They are increasingly recognized as important contributors to the characteristic savory taste of meat and meat products. Fermentation provides a sustainable and cost-effective approach for generating these taste-active peptides. This process is primarily driven by microbial metabolism and proteolytic enzyme systems. Key microorganisms involved in meat fermentation include lactic acid bacteria such as Lactobacillus spp. (L. plantarum, L. sakei, and L. curvatus) and Pediococcus spp., drive proteolysis and umami pept

Proteomics Characterization of Food-Derived Bioactive Peptides with Anti-Allergic and Anti-Inflammatory Properties.

Bioactive peptides are found in foods and dietary supplements and are responsible for health benefits with applications in human and animal medicine. The health benefits include antihypertensive, antimicrobial, antithrombotic, immunomodulatory, opioid, antioxidant, anti-allergic and anti-inflammatory functions. Bioactive peptides can be obtained by microbial action, mainly by the gastrointestinal microbiota from proteins present in food, originating from either vegetable or animal matter or by the action of different gastrointestinal proteases. Proteomics can play an important role in the iden

Marine-Derived Collagen Peptides as Emerging Biofactors: Molecular Characteristics, Biological Mechanisms, and Potential Roles in Healthy Aging.

Marine-derived collagen (MDC) represents a sustainable source of bioactive biomolecules derived from marine processing by-products, with emerging applications in molecular nutrition and healthy aging. Compared with mammalian collagen, MDC exhibits distinctive structural characteristics, including variable imino acid composition, reduced thermal stability, and enhanced enzymatic accessibility, which determine its physicochemical properties, processing behavior, and biological potential. These structural features also underpin the distinct functional roles of native collagen and collagen-derived

Macauba (Acrocomia aculeata) kernel-derived protein hydrolysates modulate intestinal development, antioxidant responses and hepatic metabolic gene expression in an in ovo (Gallus gallus) model.

Macauba kernel protein isolate (MKPI) is nutrient-rich and ideal for plant-based diets, with potential for generating bioactive peptides upon hydrolysis. This study evaluated the effects of MKPI-derived hydrolysates (HD) on intestinal development, antioxidant defenses, and hepatic glucose metabolism using an in ovo (Gallus gallus) model, combined with peptide characterization and in silico bioactive prediction. Fertile broiler eggs (n = 9/group) were assigned to four groups: (1) non-injected (NI), (2) H₂O, (3) MKPI (IS), and (4) hydrolysates (HD). Intra-amniotic administration was performed on

Preparation, isolation, purification and identification of ACE inhibitory fractions from yak casein fermented by Bacillus cereus (XBMU-13).

Food-derived angiotensin-converting enzyme (ACE) inhibitory peptides have been shown to contribute to blood pressure reduction. In this study, a protease-producing bacterial strain was isolated and identified for fermentation of yak milk casein to produce ACE inhibitory peptides. Subsequently, fermentation conditions were optimized, and the resulting peptides were purified, and identified. The results showed that a Bacillus cereus strain, designated XBMU-13, was isolated from naturally fermented bean curd and exhibited a protease activity of 86.27 ± 3.82 U/mL. Optimization of Moringa oleifera Lam. leaf hydrolysis for the release of bioactive di- and tripeptides with antioxidant and biostimulant potential.

Bioactive peptides develop diverse functions and represent an underexplored biotechnological resource. Moringa oleifera Lam., due to its high protein content, is a promising raw material for generating these compounds. This study aimed to obtain di- and tripeptides-key molecules for rapid cellular absorption-by optimizing alkaline and enzymatic (Alcalase®) hydrolysis of dried M. oleifera leaves to maximize the release of small bioactive peptides. A full factorial response surface design was applied to evaluate two independent variables (M. oleifera mass and reagent concentration) and two respo

Fermented dairy products as sources of bioactive peptides with potential benefits to older adults' health.

Aging is a natural process that involves various physiological changes, including increased susceptibility to diseases. With aging, the immune system weakens, and the body becomes more vulnerable to infections and inflammation. Moreover, conditions such as sarcopenia, osteoporosis, and non-communicable chronic diseases (hypertension, type 2 diabetes mellitus, and obesity) are more common among older adults. However, diet can play a fundamental role in maintaining health and preventing various pathologies. Fermented dairy products, which are rich in high-quality proteins and bioactive peptides,

Plastein reaction with exogenous tryptophan addition as a promissing strategy to enhance the bioactivity and digestive stability of chicken peptides.

Instability during gastrointestinal digestion is one of the key factors that limiting further application of bioactive peptides. Plastein reaction is considered an effective strategy to enhance the bioactivity and digestive of peptides, especially introducing specific amino acid with favorable activity. In this study, chicken peptides (CP) were subjected to plastein reaction with exogenous Trp addition, aiming to improve the bioactivity and digestive stability. Results showed that, after Alcalase-catalyzed plastein reaction with 5% Trp addition, the ADH-stabilizing activity and ABTS radical sc

Food-derived bioactive peptides with anti-hyperuricemic activity: A comprehensive review.

Hyperuricemia (HU) is a metabolic disorder caused by the overproduction or underexcretion of uric acid (UA) in the human body. Several approved drugs for the treatment of HU are available in the market; however, all these allopathic drugs exhibit multiple side effects. Therefore, the development of safe and effective anti-HU drugs is an urgent need. Natural compounds derived from foods and plants have the potential to decrease UA levels. Recently, food-derived bioactive peptides (FBPs) have gained attention as a functional ingredient owing to their biological activities. In the current review,

Biochemical properties of regulatory peptides derived from milk proteins.

Biologically active peptides derived from milk proteins are inactive within the sequence of the precursor proteins but can be released by enzymatic proteolysis. Based on structure-activity studies, peptides with a defined bioactivity show common structural features. Moreover, many milk protein-derived peptides reveal multifunctional bioactivities. Bioactive peptide fragments originating from milk proteins should be taken into account as potential modulators of various regulatory processes in the body. Opioid peptides are opioid receptor ligands with agonistic or antagonistic activities. Angiot
