Microbial succession, identification, and spoilage potential of dominant bacteria in ready-to-eat salmon under different storage conditions.

As a popular high-value seafood with rich nutritional benefits, ready-to-eat salmon is highly susceptible to microbial spoilage, posing risks to its quality and food safety. This study investigated bacterial community dynamics in commercial ready-to-eat salmon under different temperatures (4 °C/25 °C) combined with packaging conditions (aerobic/vacuum) using high-throughput 16S rRNA gene sequencing, and further explored the species-specific spoilage characteristics of five specific spoilage organisms (SSOs) via culture-dependent methods. The results revealed that bacteria under vacuum storage

Microbiome and resistome successions in pig carcasses and fresh pork meat throughout slaughtering, processing and shelf-life.

BACKGROUND: Slaughterhouses and meat cutting plants represent potential hotspots for the spread and transfer of spoilage and pathogenic, including antimicrobial resistant, bacteria to meat and meat products. Here, we characterise the progression of the microbiome and resistome of two pork cuts (loin and sirloin) at different stages of processing, from the slaughter line to the end of shelf-life. To this end, we analysed samples from facility surfaces, carcasses, and meat cuts using whole metagenome sequencing. RESULTS: The taxonomic and antimicrobial resistance gene (ARG) profiles of carcasse

Using consumer acceptance to guide microbial thresholds for the shelf life of fresh chicken breasts.

A declared shelf life aligned with consumer acceptance is essential to avoid unnecessary food waste. The relationship between microbial development and consumers' odour-based decisions to accept or discard industrially packed chicken breasts from three European countries (Hungary, Norway and Portugal) was investigated. Products were stored at 4 °C up to 27 days, with or without a shift to 8 °C after 3-7 days to mimic temperature abuse at retail/consumer stages. Bacterial levels were quantified by culture-based enumeration (total viable counts, TVC), and the microbiota assessed by 16S rRNA gene

Antimicrobial and Antibiofilm Potential of Thymus vulgaris and Cymbopogon flexuosus Essential Oils against Pure and Mixed Cultures of Foodborne Bacteria.

The spread of pathogenic and food spoilage microorganisms through the food chain still faces major mitigation challenges, despite modern advances. Although multiple cleaning and disinfection procedures are available for microbial load reduction in food-related settings, microbes can still remain on surfaces, equipment, or machinery, especially if they have the ability to form biofilms. The present study assessed the biofilm-forming properties of pure and mixed cultures of foodborne and spoilage bacteria (Listeria monocytogenes, Enterococcus faecalis, Aeromonas hydrophila, Brochothrix thermosph

Investigation of the Suitability of a Combination of Ethyl-Να-dodecanyl-L-arginat_HCl (LAE) and Starter Culture Bacteria for the Reduction of Bacteria from Fresh Meat of Different Animal Species.

Meat can be contaminated with (pathogenic) microorganisms during slaughter, dissection and packaging. Therefore, preservation technologies are frequently used to reduce the risk of (fatal) human infections due to the consumption of meat. In this study, we first investigated, if the application of ethyl-Nα-dodecanyl-L-arginate hydrochloride (LAE) and the starter culture bacteria Staphylococcus carnosus and Lactobacillus sakei, either single or in combination, influences the bacteria number on pork, chicken meat and beef, inoculated with Brochothrix (Br.) thermosphacta (all meat species) or Salm

Campylobacter survival potentially influenced by key microbial species within the microbiota on free-range broiler carcasses during refrigerated storage.

Campylobacter is the leading cause of foodborne gastroenteritis in Europe, with poultry as its primary reservoir. Although Campylobacter responses to abiotic stress are well documented, these mechanisms alone do not fully explain its persistence on broiler meat, suggesting a role for the surrounding meat microbiota. This study investigated whether Campylobacter survival during refrigerated storage of broiler meat was associated with specific microbial community structures. Using combined culture-dependent and culture-independent approaches, microbiota composition and Campylobacter levels were

Microbial variation and shelf life of chicken breast fillets: A year-long study across two European producers.

Despite extensive research on poultry spoilage, variability across batches, seasons, and facilities remains poorly resolved, limiting evaluation of microbiological data for adaptive, data-driven shelf-life determination. This study examined whether initial microbial status, growth dynamics, microbiota composition, and sensory changes varied systematically over one year in modified atmosphere-packed (MAP) chicken breast fillets from two European producers using different gas compositions (Producer A, Norway; Producer B, Portugal). Fillets were analysed after production and during storage at 4 °

Investigating the relationship between microbial community dynamics and flavor profiles in Korat chicken breast fillets under varied packaging conditions.

The dynamics of microbial community changes in Korat chicken (KC) breast meat, an indigenous Thai crossbred, packed under traditional air-overwrapping (Con), vacuum packaging (VP), and modified atmosphere packaging (MAP) at 30 % CO2/70 % N2 were investigated, as well as their correlation with flavor attributes and acceptability during 12 days of chilled storage. Beta diversity and hierarchical clustering revealed that the microbial communities in VP and MAP were more similar than those in Con. The result suggested that packaging had a greater impact on microbial changes than storage time (p <

Insights into Microbial Community and Its Enzymatic Profiles in Commercial Dry-Aged Beef.

Dry-aged beef has gained interest worldwide in recent years due to its improved sensory attributes. This enhancement is thought to be partially driven by microbial activities, particularly lipolysis and proteolysis. In this study, dry-aged beef manufactured by seven commercial producers in China was analyzed. The pH value and total volatile base nitrogen value of dry-aged beef were determined. High-throughput amplicon sequencing of full-length 16S rRNA genes and internal transcribed spacer (ITS) regions was used to analyze the microbial community. A total of 207 proteolytic and lipolytic isola

High pressure inactivation of Escherichia coli, Campylobacter jejuni, and spoilage microbiota on poultry meat.

This study evaluated the high pressure inactivation of Campylobacter jejuni, Escherichia coli, and poultry meat spoilage organisms. All treatments were performed in aseptically prepared minced poultry meat. Treatment of 19 strains of C. jejuni at 300 MPa and 30°C revealed a large variation of pressure resistance. The recovery of pressure-induced sublethally injured C. jejuni depended on the availability of iron. The addition of iron content to enumeration media was required for resuscitation of sublethally injured cells. Survival of C. jejuni during storage of refrigerated poultry meat was ana
