Denatonium is widely recognized as an intensely bitter synthetic compound used to prevent accidental ingestion of toxic or undesirable products. Here, we report the natural occurrence of denatonium in seed-derived tissues of Camellia japonica. Direct chewing of the seeds produced exceptional bitterness, consistent with LC-MS/MS detection. To confirm reproducibility, samples from different sources or growth conditions, including germinated sprouts and oil-removed seed cake, were analyzed. Denatonium was detected in the radicle, plumule, cotyledons, and seed cake. Its identity was confirmed by c

The polyphenolic composition of Camellia irrawadiensis, which is a closely related species of Camellia sinensis (cultivated tea), was investigated. The most predominant polyphenol, a kind of ellagitannin, was isolated from leaves of C. irrawadiensis. Its structure was established as 1,2-di-O-galloyl-4,6-O-(S)-hexahydroxydiphenoyl-beta-D-glucose (2) on the basis of spectral and chemical evidence. Moreover, the polyphenols [catechins, strictinin (1), compound 2, theogallin, and gallic acid] and two methylxanthines (theobromine and caffeine) in leaves of C. irrawadiensis were determined by HPLC-P

Squalene is a triterpene with potent biological activities. Squalene (C30H50) is a linear polyunsaturated hydrocarbon composed of six isoprene units and six carbon-carbon double bonds. It serves as an essential precursor for sterols, steroid hormones, and vitamin D in humans and exhibits antioxidant, anti-tumor, and lipid-regulating properties. In plants, squalene is produced via the mevalonate (MVA) and 2-C-methyl-D-erythritol-4-phosphate (MEP) pathways. The key rate-limiting enzymes in these pathways include 3-hydroxy-3-methylglutaryl-CoA reductase (HMGR), farnesyl diphosphate synthase (FPS)

Plant immune response following pathogenic infection is regulated by plant hormones, and salicylic acid (SA) and its sugar conjugates play important roles in establishing basal resistance. Here, the important pathogen Pseudopestalotiopsis camelliae-sinensis (Pcs) was isolated from tea gray blight, one of the most destructive diseases in tea plantations. Transcriptomic analysis led to the discovery of the putative Camellia sinensis UDP-glucosyltransferase CsUGT87E7 whose expression was significantly induced by SA application and Pcs infection. Recombinant CsUGT87E7 glucosylates SA with a Km val

Camellia oil is rich in polyphenols and phytosterols, whose accumulation during seed development influences both nutritional and functional quality. To understand how these compounds are biosynthesized and coordinated with primary metabolism, we profiled dynamic changes in polyphenols, phytosterols, and primary metabolites across four developmental stages of Camellia seeds. Early stages exhibited active carbohydrate metabolism, providing carbon precursors for polyphenol and phytosterol production to support seed coat formation and stress defense. During maturation, carbon flux shifted from sec

High-temperature roasting is a key process in preparing Aromatic Camellia oleifera Abel. seed oils (ACSOs). To investigate the effect of roasting temperature on its comprehensive quality, this paper analyzed the effects of five roasting temperatures (140 °C, 150 °C, 160 °C, 170 °C, 180 °C) on the quality characteristics, safety indicators and flavor characteristics of ACSOs. Results showed that with increasing roasting temperature, the p-anisidine value (p-AV) of the ACSOs was gradually raised, while the squalene content was progressively reduced. When the temperature exceeded 160 °C, the pero

Camellia oil has become an important plant oil in China in recent years, but its effects on non-alcoholic fatty liver disease (NAFLD) have not been documented. In this study, the effects of camellia oil, soybean oil, and olive oil on NAFLD were evaluated by analyzing the fatty acid profiles of the plant oils, the serum lipids and lipoproteins of rats fed different oils, and by cytological and ultrastructural observation of the rats' hepatocytes. Analysis of fatty acid profiles showed that the polyunsaturated fatty acid (PUFA) n-6/n-3 ratio was 33.33 in camellia oil, 12.50 in olive oil, and 7.6

The case of a 76-year-old retired surgeon and lover of green tea (camellia sinensis) infusions who developed a clinical, sero-biochemical and histological picture of severe subacute hepatitis is reported. The clinical presentation was that of jaundice with asthenia and weight loss. Abnormal liver function tests were associated with hyper-gammaglobulinemia, and the transient presence of anti-smooth-muscle antibodies and ANCA. Liver histology showed mixed features of lobular hepatitis with central collapses, portal inflammatory cells infiltration and interface hepatitis. All other potential caus
