Meat spoilage by bacteria: Influencing factors, volatile compounds, and organoleptic alterations.

This review provides an understanding of spoilage factors of meat, the spoilage bacteria, the spoilage mode of major spoilage bacteria, and alterations due to spoilage. pH and water activity of meat, packaging atmosphere, and storage temperature affect the growth and activity of spoilage bacteria. The spoilage bacteria cause the production of various compounds. Volatile compounds such as volatile basic nitrogen [ammonia (NH3) and amines (RNH2)], alcohols (ROH), aldehydes (RCHO), ketones (RCOR'), and sulfur (S) compounds are generated by decomposition from glycogen, proteins and lipids in meat

Effects of interactions between microorganisms and lipids on inferior volatile compound production during cold storage of grouper (Epinephelus coioides).

The interaction between microorganisms, proteins, and lipids plays a critical role in the odor production of fish. To explore the specific impact of the interaction between lipids and microorganisms on the overall odor of grouper, this study excluded the influence of proteins and assessed lipid (POV and TBARS) and microbial characteristics (biofilm mass and ATP content) in lipid solutions. The Results showed that microbial growth and lipid oxidation mutually promote each other. Lipidomics analysis identified 44 differential lipids, and microbial diversity analysis pinpointed five key microorga

Efficacy of freeze-chilled storage combined with tea polyphenol for controlling melanosis, quality deterioration, and spoilage bacterial growth of Pacific white shrimp (Litopenaeus vannamei).

This study aimed to investigate melanosis, quality attributes, and bacterial growth of freeze-chilled Pacific white shrimp (Litopenaeus vannamei) during 6 days of chilled storage, as well as the preservative effects of tea polyphenol on shrimp. The results showed that freeze-chilled storage retarded the growth of bacteria and the accumulation of putrescine in shrimp. The growth of spoilage bacteria Photobacterium and Shewanella were inhibited. However, freeze-chilled storage aggravated melanosis and lipid oxidation. The total volatile basic nitrogen (TVB-N) slightly accumulated in the thawed s

Identification and typing of Vagococcus salmoninarum using genomic and proteomic techniques.

This study reports on the characterization of Vagococcus salmoninarum using phenotypic, serological, antigenic, genetic and proteomic methods. All strains of V. salmoninarum were resistant to most of the antimicrobials tested, and only 10% of strains were sensitive to florfenicol. Serological analysis demonstrated a high antigenic homogeneity within the species. No cross-reaction was detected with other fish pathogenic species causing streptococcosis (Lactococcus garvieae, Streptococcus parauberis, Streptococcus iniae, Streptococcus agalactiae, Carnobacterium maltaromaticum) using serum agains

Unraveling the improvement of (-)-epigallocatechin-3-O-gallate marination against salt reduction-induced quality deterioration of dry-cured grass carp: Mechanistic links among antioxidation, bacterial community rebalance, and flavor evolution control.

The improving effects and underlying mechanism of EGCG marination against salt reduction-induced quality deterioration of dry-cured grass carp (DCGC) were unraveled. Results showed that ≥500 mg/L EGCG marination contributed to water activity decline, inhibiting spoilage bacterial growth (Streptococcus parauberis, Carnobacterium maltaromaticum, Brochothrix, unclassified Enterobacteriaceae, Vibrio, etc.) and increasing flavor-contributing bacterial richness (mainly some lactic acid bacteria, Staphylococcus, and Psychrobacter species). The bacterial community structural rebalance and antioxidatio

Assessment of the bioprotective potential of lactic acid bacteria against Listeria monocytogenes on vacuum-packed cold-smoked salmon stored at 8 °C.

Smoked salmon is a highly appreciated delicatessen product. Nevertheless, this ready-to-eat (RTE) product is considered at risk for Listeria monocytogenes, due to both the prevalence and growth potential of this bacteria on the product. Biopreservation may be considered a mild and natural effective strategy for minimizing this risk. In this study, we evaluated the following three potential bioprotective lactic acid bacterial strains against L. monocytogenes in three smoked salmon types with different physicochemical characteristics, primarily fat, moisture, phenol and acid acetic content: two

Microbiome Dynamics of Camel Meat During Cold Storage Revealed by 16S rRNA Gene Sequencing.

Camel meat is an important red meat source, but culture-independent evidence of its bacterial community during refrigerated storage remains limited. No prior study has applied 16S rRNA sequencing to camel meat under aerobic chilled storage. Samples from three butcher shops were evaluated at Day 0 and Day 7 of aerobic storage at 5 °C. Thirty-eight samples were retained for diversity, compositional, and differential abundance analyses using Breakaway, DivNet, Bayesian hierarchical modeling, permutational multivariate analysis of variance (PERMANOVA), and Microbiome Multivariable Associations wit

Novel peeling skin condition in neonatal Pacific walruses, Saint Lawrence Island, Alaska, USA.

We describe here a novel peeling skin condition (PSC) in 2 neonatal Pacific walruses (Odobenus rosmarus subsp. divergens). Macroscopically, calves had various degrees of peeling skin exacerbated by mechanical trauma. Lesions occurred in areas subject to friction: ventrum, fore- and hindflippers, and associated joints. Histopathologic features included pseudocarcinomatous epithelial hyperplasia with orthokeratotic hyperkeratosis. Bacterial cocci were present within the stratum corneum. A few intraepidermal clefts were present. Inflammation, epidermolysis, and vasculopathies were not observed. P

A new strategy to reduce casein antigenicity: Investigating immune response, gut microbiota dysbiosis, and metabolic changes in allergic mice.

As the primary allergen in cow's milk, casein (CN) has restricted the development of hypoallergenic infant formulas. This study proposes a targeted enzymatic hydrolysis strategy to eliminate the antigenic epitopes of CN by taking advantage of the hydrolytic characteristics of different proteases, and to evaluate its antigen-lowering effect from multiple perspectives with the help of an allergic mouse model. The results of LC-MS/MS and ELISA indicate that the SC group (subtilisin protease + chymotrypsin hydrolysate) could effectively remove antigen epitopes and significantly reduce the antigeni

Raw milk at refrigeration temperature displays an independent microbiota dynamic regardless Listeria monocytogenes contamination.

Dairy products made of raw milk are associated with hypervirulent L. monocytogenes clonal complexes (CCs) CC1, CC4, and CC6, and cause half of the reported listeriosis outbreaks in Europe. However, it is currently unknown whether the overrepresentation of L. monocytogenes hypervirulent clones in dairy products made of raw milk is conditioned by an alteration in the native raw milk microbiota growth and/or composition. In this study, the lag phase, maximal growth rate, and the final maximal concentration of mesophilic aerobic bacteria from native raw milk bacteria were measured at refrigerated

Volatile compounds produced in smoked bacon inoculated with potential spoilage bacteria.

BACKGROUND: Volatile organic compounds (VOCs) produced during meat storage are mainly derived from the decomposition of meat components and the metabolism of spoilage bacteria. VOCs produced in sterile bacon model substrate inoculated or un-inoculated with spoilage bacteria, Staphylococcus xylosus (P2), Leuconostoc mesenteroides (P6), Carnobacterium maltaromaticum (P9), Leuconostoc gelidum (P16) and Serratia liquefaciens (P20), previously isolated, were identified by headspace solid-phase microextraction (HS-SPME) coupled with gas chromatography-mass spectrometry (GC-MS). Furthermore, combinat

The nasopharyngeal microbiota of feedlot cattle.

The bovine nasopharyngeal tract plays an important role in animal health and welfare by acting as a site for the carriage of pathogens causing bovine respiratory disease, a condition which results in significant morbidity and mortality in feedlot cattle. We characterized the bacterial nasopharyngeal microbiota in cattle at feedlot entry (day 0) and day 60 using 454 pyrosequencing. We also identified the most frequently isolated aerobic bacteria from nasopharyngeal swabs after plating onto three types of media. The cattle nasopharyngeal microbiota was composed primarily of Proteobacteria (68.9%

Altered mouse cecal microbiome-serum enterolignans relationships in response to dietary lignans ingested through whole flaxseed or flaxseed hull.

Flaxseed (FS) is rich in bioactive compounds, including fiber and lignans, which provide health benefits largely mediated by gut microbial metabolism. However, gut microbiota responses, including their relationship with fiber- and lignan-derived microbial metabolites (short chain fatty acids (SCFA) and enterolignans enterodiol and enterolactone), remain unclear. We addressed this through administration of an isocaloric flaxseed (FS) or flaxseed hull (FH) diet to female mice, where FH provided a higher amount of fiber and lignan secoisolariciresinol diglucoside compared to FS. Both diets increa

Recovery of metallo-tolerant and antibiotic resistant psychrophilic bacteria from Siachen glacier, Pakistan.

Cultureable bacterial diversity of previously unexplored Siachen glacier, Pakistan, was studied. Out of 50 isolates 33 (66%) were Gram negative and 17 (34%) Gram positive. About half of the isolates were pigment producers and were able to grow at 4-37°C. 16S rRNA gene sequences revealed Gram negative bacteria dominated by Proteobacteria (especially γ-proteobacteria and β-proteobacteria) and Flavobacteria. The genus Pseudomonas (51.51%, 17) was dominant among γ- proteobacteria. β-proteobacteria constituted 4 (12.12%) Alcaligenes and 4 (12.12%) Janthinobacterium strains. Among Gram positive bact

Ferritin-mediated regulation of gut microbiota homeostasis promotes blood-feeding adaptation in the tick Haemaphysalis doenitzi.

As obligate hematophagous parasites, ticks have evolved to cope with substantial amounts of iron and exogenous microorganisms present in host blood during feeding. In ticks, ferritin plays an important role in maintaining the oxidative balance of gut and the homeostasis of the microbial community structure, but its regulatory mechanism has not yet been clarified. This study successfully identified a ferritin gene from Haemaphysalis doenitzi, named Hd-fer, and further studied the function of Hd-fer. The results showed that rHd-fer had antioxidant properties and antibacterial activity. The expre

Portuguese cacholeira blood sausage: A first taste of its microbiota and volatile organic compounds.

Among typical Portuguese sausages, the cacholeira blood sausage undoubtedly represents one of the most popular preparations. To the authors' knowledge, a lack of information on both the microbiota and the volatile organic compounds (VOCs) of this blood-containing sausage emerges from the available scientific literature. This study represents the first characterization of physico-chemical, microbiological and volatile traits of Portuguese cacholeira blood sausage. To this end, ready-to-eat cacholeira blood sausages were collected from two production batches manufactured in summer (batch 1) and
