Analysis of the potential long-lasting effects of probiotic Debaryomyces hansenii CBS 8339 on trained immunity in newborn goats.

Trained immunity has been described as the memory capacity of the innate immune system. Several microbial components have been shown to induce trained immunity. Research on the potential of probiotics to trigger these effects has been limited to a few in vitro studies but remains completely unknown in vivo. Components from the probiotic Debaryomyces hansenii CBS 8339 (Dh) have been shown to induce innate immune memory in goat kids and calves. In the present study, stimulating innate immune cells from newborn goats with probiotic Dh increased respiratory burst activity and nitric oxide producti

Exploring the Role of Debaryomyces hansenii as Biofertilizer in Iron-Deficient Environments to Enhance Plant Nutrition and Crop Production Sustainability.

The European "Green Deal" policies are shifting toward more sustainable and environmentally conscious agricultural practices, reducing the use of chemical fertilizer and pesticides. This implies exploring alternative strategies. One promising alternative to improve plant nutrition and reinforce plant defenses is the use of beneficial microorganisms in the rhizosphere, such as "Plant-growth-promoting rhizobacteria and fungi". Despite the great abundance of iron (Fe) in the Earth's crust, its poor solubility in calcareous soil makes Fe deficiency a major agricultural issue worldwide. Among plant

Modulation of flavour perception under sodium-reduced conditions: A sensory-metabolic interaction framework driven by Debaryomyces hansenii SH4 and KCl.

This study reconstructs salt-associated flavour in sodium-reduced fermented sausages by integrating ionic substitution (KCl) and yeast-based biotransformation (Debaryomyces hansenii SH4). Comprehensive analysis integrating non-volatile and volatile compound profiling, sensory evaluation, and electronic sensing (E-tongue and E-nose) was employed to decode the underlying mechanisms. The combined KCl and D. hansenii treatment (1.75 % NaCl +0.75 % KCl + D. hansenii SH4) significantly elevated perceived saltiness and umami intensity, exceeding even the full-salt control, while effectively mitigatin

Debaryomyces hansenii ST14 exhibiting antagonistic activity against Pseudomonas lundensis improves microbial stability and quality of reduced-salt air-dried cured meat.

Reducing sodium chloride in air-dried cured meat weakens microbial stability and accelerates quality deterioration. This study evaluated the potential of Debaryomyces hansenii ST14 as a bioprotective culture to improve the microbial stability and quality of reduced-salt air-dried cured meat. In the meat system, D. hansenii ST14 inoculation significantly reduced lipid oxidation and protein degradation, decreasing thiobarbituric acid reactive substances (TBARS) and total volatile basic nitrogen (TVB-N) levels by approximately 52.63% and 35.60%, respectively, compared with the control group, whil

Debaryomyces hansenii Strains Isolated From Danish Cheese Brines Act as Biocontrol Agents to Inhibit Germination and Growth of Contaminating Molds.

The antagonistic activities of native Debaryomyces hansenii strains isolated from Danish cheese brines were evaluated against contaminating molds in the dairy industry. Determination of chromosome polymorphism by use of pulsed-field gel electrophoresis (PFGE) revealed a huge genetic heterogeneity among the D. hansenii strains, which was reflected in intra-species variation at the phenotypic level. 11 D. hansenii strains were tested for their ability to inhibit germination and growth of contaminating molds, frequently occurring at Danish dairies, i.e., Cladosporium inversicolor, Cladosporium si

Pseudomonas simiae WCS417 and Debaryomyces hansenii Induce Iron Deficiency Responses in Rice (Oryza sativa L.) Through Phytosiderophore Production and Gene Expression Modulation.

Iron (Fe) is an essential micronutrient for crop productivity, but its low availability in alkaline and calcareous soils limits the growth of rice (Oryza sativa L.), which employs a combined strategy for its acquisition based on the release of phytosiderophores (PS) and the use of specific transporters. In this study, the effect of the rhizospheric bacterium Pseudomonas simiae WCS417 and the halotolerant yeast Debaryomyces hansenii CBS767 as inducers of responses to Fe deficiency in rice grown under hydroponic conditions was evaluated. Plants were inoculated in nutrient solutions with and with

Multi-omics analysis reveals the mechanism underlying microbial-driven flavor formation in fermented xuecai (Brassica juncea var. multiceps).

The unique flavor of xuecai stems from microbial metabolism, but how microbial community evolution is connected to fermentative flavor formation remains unclear. In this study, a comprehensive analysis of xuecai fermentation was conducted via untargeted metabolomics, microbiomics, and biochemical techniques to investigate the relationships among its physicochemical properties, flavor compounds, and microbial communities. Nontargeted metabolomics revealed 113 volatile flavor compounds, including 14 aldehydes, 38 alcohols, 37 esters, 11 ketones, and 13 phenols, and the overall flavor and nutriti

Biochemical changes and microbial community dynamics during spontaneous fermentation of Zhacai, a traditional pickled mustard tuber from China.

Zhacai is a traditional fermented vegetable that has been consumed in China for centuries. It is currently manufactured by spontaneous fermentation and therefore mostly relies on the activities of autochthonous microorganisms. Here, we characterized microbial community dynamics and associated biochemical changes in 12% salted Zhacai during a 90-day spontaneous fermentation process using high-throughput sequencing and chromatography-based approaches to identify associations between microorganisms and fermentation characteristics. Amplicon sequencing targeting bacterial 16S rRNA genes revealed t

Several Yeast Species Induce Iron Deficiency Responses in Cucumber Plants (Cucumis sativus L.).

Iron (Fe) deficiency is a first-order agronomic problem that causes a significant decrease in crop yield and quality. Paradoxically, Fe is very abundant in most soils, mainly in its oxidized form, but is poorly soluble and with low availability for plants. In order to alleviate this situation, plants develop different morphological and physiological Fe-deficiency responses, mainly in their roots, to facilitate Fe mobilization and acquisition. Even so, Fe fertilizers, mainly Fe chelates, are widely used in modern agriculture, causing environmental problems and increasing the costs of production

Characterization of the Gut Microbiota and Mycobiota in Italian Pediatric Patients With Primary Sclerosing Cholangitis and Ulcerative Colitis.

BACKGROUND: Primary sclerosing cholangitis (PSC) is a chronic, fibroinflammatory, cholestatic liver disease of unknown etiopathogenesis, often associated with inflammatory bowel diseases. Recent evidence ascribes, together with immunologic and environmental components, a significant role to the intestinal microbiota or its molecules in the PSC pathogenesis. METHODS: By metagenomic sequencing of 16S rRNA and ITS2 loci, we describe the fecal microbiota and mycobiota of 26 pediatric patients affected by PSC and concomitant ulcerative colitis (PSC-UC), 27 patients without PSC but with UC (UC), an

Determination of the microbial communities of Guizhou Suantang, a traditional Chinese fermented sour soup, and correlation between the identified microorganisms and volatile compounds.

Guizhou Suantang (GZST), a type of sour soup, is a traditional fermented food that can be classified into Hong Suantang (HST) and Bai Suantang (BST). GZST possesses unique flavors arising from various microbiota in fermentation ecosystems. However, the association between these microbiota and flavors remains poorly understood. Accordingly, this study analyzed the volatile components and microbial communities of GZST via headspace solid-phase microextraction coupled with gas chromatography-mass spectrometry and high-throughput 16S rRNA and internal transcribed spacer sequencing techniques. Multi-omics-based insights into the microbial community composition and quality characteristic differentiation potential between Xuanwei and Iberian dry-cured hams.

To uncover the microbial underpinnings of quality and flavor differences between Xuanwei ham (XWH) and Iberian ham (IRH), this study integrated high-throughput sequencing with metabolomics and volatilomics to establish microbiota-metabolite-flavor linkages. Physicochemical characterization revealed that XWH showed higher moisture, water activity, and salt content, whereas IRH had higher fat and protein. These matrix differences imposed selective pressures on microbial colonization. The IRH surface exhibited higher bacterial diversity, while the XWH interior showed higher bacterial diversity; X

Insights into LysM proteins of medically important yeasts.

LysM proteins are widely distributed in fungi of diverse lifestyles, including pathogens of humans and animals. Using bioinformatic methods, LysM proteins have been identified in representative yeasts of medical importance. However, LysM proteins have been found in only four ascomycete yeasts (Candida subhashii, C. tropicalis, Debaryomyces fabryi, and D. hansenii). In contrast, almost all basidiomycete yeasts contain at least one LysM effector but lack subgroup C chitinases. Notably, a unique LysM effector is highly conserved among all the lipid-dependent Malassezia species. The repertoire of
