How Adequate Are the Guidelines for Dietary and Workplace Exposure to Cadmium?

Cadmium (Cd) is a heavy metal pollutant to which most people are exposed daily through their diet because of its presence in nearly all food types, including potatoes, vegetables, cereals, grains, legumes, shellfish, and organ meat. Cd has no physiological role or nutritional value in the body and causes toxicity to multiple tissues and organs via oxidative stress and chronic inflammation; as such, at high prevalence, it is frequently associated with diseases, notably cancer, heart disease, diabetes, osteoporosis, and chronic kidney disease. Using kidneys and bones as critical toxicity targets

Dietary exposure to polyaromatic hydrocarbons of the Hong Kong population.

Polyaromatic hydrocarbons (PAHs) are ubiquitous in the environment and food. The Joint FAO/WHO Expert Committee on Food Additives concluded 13 individual PAHs are carcinogenic and genotoxic in vitro and in vivo. Food is recognized as the main source of exposure to PAHs for adult non-smokers, which contributed to more than 90% of total exposure. In this study, 300 food samples were collected in Hong Kong, analysed the levels of 16 European Union priority PAHs, the dietary exposure to these PAHs by the local adult population from these food items, and the associated health risk. The most predomi

Fish - a source of dietary exposure to iodine and other chemicals.

Fish, fish products and seafood are an important part of a healthy diet. They make an important contribution as a dietary source of iodine, but also of other substances that have a positive effect on the human body. On the other hand, they contain contaminants (especially mercury/methylmercury) whose toxic properties affect food safety. Based on the results of dietary exposure monitoring and specialised studies by the National Institute of Health - Centre for Health, Nutrition and Food and international activities it can be concluded that there are clear benefits in terms of human health from

An Assessment of Dietary Exposure to Cadmium in Residents of Guangzhou, China.

Cadmium and its compounds are human carcinogens with severe organ toxicity, and their contamination of agricultural soil in China has been frequently reported; however, the dietary exposure to cadmium in residents and the relevant health risk have seldom been reported. In this study, the concentration of cadmium in various types of food collected from 2013 to 2015 were analyzed using graphite furnace atomic absorption spectrometry, and the dietary exposure to cadmium assessed based on a dietary survey in 2976 Guangzhou residents. In total, 3074 out of 4039 food samples had cadmium levels above

Exposure assessment of adult intake of bisphenol A (BPA) with emphasis on canned food dietary exposures.

Bisphenol A (BPA) is a high-volume, synthetic compound found in epoxy resins and plastics used in food packaging. Food is believed to be a major source of BPA intake. In this study, we measured the concentration of BPA in convenience samplings of foodstuffs purchased in Dallas, Texas. Sampling entailed collection of 204 samples of fresh, frozen, and canned foods in two rounds in 2010. BPA was positive in 73% of the canned food samples, while it was found in only 7% of non-canned foods at low concentrations. The results of this food sampling program were used to calculate adult dietary intakes

Bayesian inference of nonylphenol exposure for assessing human dietary risk.

Nonylphenols (NPs) are endocrine-disrupting compounds commonly found in the environment and a number of food products. In this study, we constructed a probabilistic risk framework incorporating a Bayesian inference of exposure level in foodstuffs in conjunction with effect analysis of reproduction and renal disease. Our objective was to contrast the risk of dietary exposure to NPs among individuals in various age groups, with a particular focus on fertile females. In this study, seafood presented relatively high NP concentrations; however, seafood accounts for only a small proportion of the to

Infantile Botulism in the Absence of Dietary Exposure to Honey: A Case Likely Related to Environmental Spore Exposure.

Infantile botulism is a rare but potentially life-threatening neuroparalytic condition caused by botulinum toxin produced by Clostridium botulinum colonizing the infant's gastrointestinal tract. Early manifestations are often subtle and nonspecific, frequently leading to delayed or missed diagnosis. We report a case of a four-week-old infant who developed progressive hypotonia and respiratory compromise secondary to infantile botulism. The diagnosis was confirmed by detection of botulinum toxin in the stool, and the patient was treated promptly with botulism immune globulin. This case highligh

Behavioral and physiological toxicity of dietary methylmercury exposure to larval dragonflies.

While ecotoxicology has traditionally focused on impacts to reproduction and mortality, sublethal effects on behavior can also have important consequences that affect toxicity risk. Mercury is a potent neurotoxicant with well-documented effects on vertebrate behavior, although behavioral toxicity to invertebrates is understudied. Over a series of experiments, we assessed how a gradient of dietary methylmercury exposure influenced behavioral and physiological endpoints in dragonfly larvae, a widely used mercury biosentinel. Mercury exposure induced suboptimal behaviors in an artificially ideal

Burden of Disease Associated with Dietary Exposure to Aflatoxins in China in 2020.

Aflatoxins (AFTs), as a group 1 carcinogen, could lead to hepatocellular carcinoma (HCC). Dietary intake is the primary way of AFT exposure in humans. However, the contribution of foodborne AFT intake to the HCC burden remains unknown in recent years in China. Hence, the present study was conducted to estimate the burden of HCC attributed to foodborne AFT exposure by using disability-adjusted life years (DALYs). The risk assessment was used to estimate the incidence of HCC related to AFT exposure. Concentrations of AFTs in peanuts, peanut oil, corn, and corn products were retrieved from litera

Occurrence and dietary exposure to phthalates in the US population - a contextual review.

Esters of 1,2-benzene dicarboxylic acid (or phthalates) are general purpose plasticizers used in multiple polyvinyl chloride (PVC) consumer applications. Some of these plasticizers are permitted for safe use in a narrow subset of food packaging applications by global regulatory agencies, including the US FDA. Several US studies have reported the presence of trace concentrations of phthalates (parts per billion) in the diet. These findings have prompted calls for regulatory action based on the potential for adverse impacts on public health. These claims are misguided. Global food safety regulat

Dietary exposure to methylmercury affects flight endurance in a migratory songbird.

Although there has been much speculation in the literature that methylmercury (MeHg) exposure can reduce songbird fitness, little is known about its effects on migration. Migrating songbirds typically make multiple flights, stopping to refuel for short periods between flights. How refueling at MeHg-contaminated stopover sites would contribute to MeHg bioaccumulation, and how such exposure could affect subsequent flight performance during migration has not been determined. In a dosing experiment we show that migratory yellow-rumped warblers (Setophaga coronata) rapidly accumulate dietary MeHg i

A framework to determine the effectiveness of dietary exposure mitigation to chemical contaminants.

In order to ensure the food safety, risk managers may implement measures to reduce human exposure to contaminants via food consumption. The evaluation of the effect of a measure is often an overlooked step in risk analysis process. The aim of this study was to develop a systematic approach for determining the effectiveness of mitigation measures to reduce dietary exposure to chemical contaminants. Based on expert opinion, a general framework for evaluation of the effectiveness of measures to reduce human exposure to food contaminants was developed. The general outline was refined by applicatio

Dietary exposure to DDT of secondary school students in Hong Kong.

The aim of this study was to determine the dietary exposure of DDT in foodstuffs consumed in Hong Kong by secondary school students in Hong Kong in 2005. Food samples of domestic or imported food were collected randomly from local markets for the determination of DDT. The analytical method for this survey was based on isotope dilution technique. DDT isomers were determined at parts per billion (microg kg(-1)) levels in foods by pressured fluid extraction followed by gel permeation column cleanup and gas chromatography with mass spectrometry detection. Among the 98 composite samples, 25 were fo

Dietary exposure to chloropropanols of secondary school students in Hong Kong.

This paper reports levels of 3-monochloropropan-1,2-diol (3-MCPD) and 1,3-dichloro-2-propanol (1,3-DCP) in a wide range of food items and estimates their dietary exposure for secondary school students in Hong Kong. Dietary exposure to chloropropanols was estimated using local food consumption data obtained from secondary school students in 2000 and the concentrations of 3-MCPD and 1,3-DCP in food samples taken from the local market. The dietary exposure to 3-MCPD for an average secondary school student consumer was estimated to be 0.063-0.150 µg kg(-1) body weight (bw) day(-1), whilst that for

Dietary exposure to cadmium and health effects: impact of environmental changes.

Cadmium exposure, metabolism, and effects are described especially in relation to dietary intakes. Data on dietary intakes in several countries have been complied from studies using the duplicate diet method or fecal analysis. These two methods seem to give more accurate data than estimates based on cadmium concentrations in food classes and food consumption (composite method). The present data on absorption and retention of ingested cadmium indicate that normally less than 5% is ingested, but absorption may increase in women who have iron deficiency. Earlier estimates of the critical concentr

Pyrrolizidine Alkaloids in Tea and Dietary Exposure Assessment of Tea Intake.

Pyrrolizidine alkaloids (PAs) and pyrrolizidine alkaloid N-oxides (PANOs) are secondary metabolites found in plants. 63 samples, which include green tea, lightly fermented tea, semifermented tea, and fermented tea, were tested to assess the dietary exposure risk of PAs/PANOs. We apply high-performance liquid chromatography coupled to tandem mass spectroscopy (HPLC-MS/MS) to detect the PAs/PANOs in tea. This study applies the margin of exposure (MoE) approach in dietary exposure assessment, and the MoE of 10,000 or higher would be of low exposure risk for health. Among the 25 PAs/PANOs tested,

Dietary exposure to creatine-precursor amino acids in the general population.

BACKGROUND: Creatine is a semi-essential nutrient that plays a critical role in energy metabolism, with dietary intake and endogenous synthesis contributing to overall creatine availability. While dietary creatine intake has been studied extensively, limited data exist on the dietary exposure to its precursor amino acids-glycine, arginine, and methionine-and their contribution to endogenous creatine synthesis. This study aimed to assess the dietary intake of these precursors in U.S. children and adults using data from the Third National Health and Nutrition Examination Survey (NHANES III) and

Assessment of dietary carotenoid intake and biologic measurement of exposure in humans.

Carotenoids are a diverse family of phytochemicals with over 1000 different carotenoids present in nature. A human diet containing a variety of plant foods typically includes approximately 50 different carotenoids, although six (α-carotene, β-carotene, β-cryptoxanthin, lycopene, lutein, and zeaxanthin) comprise over 90% of total carotenoid intake. Most carotenoids do not meet the definition of a nutrient, but several can be cleaved to form vitamin A and are important contributors to vitamin A nutriture and prevention of vitamin A deficiency. Large epidemiologic studies suggest that diets rich
