Towards coeliac-safe bread.

Gluten-free foods cannot substitute for products made from wheat flour. When wheat products are digested, the remaining peptides can trigger an autoimmune disease in 1% of the North American and European population, called coeliac disease. Because wheat proteins are encoded by a large gene family, it has been impossible to use conventional breeding to select wheat varieties that are coeliac-safe. However, one can test the properties of protein variants by expressing single genes in coeliac-safe cereals like maize. One source of protein that can be considered as coeliac-safe and has bread-makin

Mercury accumulation and biotransportation in wetland biota affected by gold mining.

Phytoremediation is a cost-effective, eco-friendly technology for the removal of metals from polluted areas. In this study, six different plant species (Datura stramonium, Phragmites australis, Persicaria lapathifolia, Melilotus alba, Panicum coloratum, and Cyperus eragrostis) growing in a gold mine contaminated wetland were investigated as potential phytoremediators of mercury. The accumulation of total mercury and methylmercury in plant tissues was determined during the wet and dry seasons to establish the plants' variability in accumulation. The highest accumulation of total mercury was in

Extrinsic iron from soil contributes to Hb regeneration of anaemic rats: implications for foods contaminated with soil iron.

Contamination of foods with extrinsic (soil) Fe is common in developing countries. However, the bioavailability of this extrinsic Fe and the extent to which it contributes to Fe nutrition remains unknown. The present study compared the bioavailability of laboratory- and field-threshed teff (Eragrostisis tef (Zucc) Trotter) to evaluate the bioavailablity of extrinsic soil Fe that resulted from the traditional threshing of the staple grain. Using sequential extraction, Fe was fractionated and its solubility was evaluated. The contribution of the additional extrinsic (soil) Fe to the Hb regenerat

Traditional fermentation of tef injera: Impact on in vitro iron and zinc dialysability.

Tef [Eragrostis tef (Zucc.) Trotter], an ancient cereal mainly produced in Ethiopia, is increasingly getting higher acceptance in the global market because it is gluten free and has high iron content. The aim of this study was to evaluate the in vitro dialysability of Fe and Zn in a backslop fermented gluten free flat bread known as injera. The traditional fermentation caused up to 49-66% reduction of phytic acid (PA). Molar ratios of PA:Fe and PA:Zn decreased from 14 to 1 and from 63 to 19, respectively, after 120h of fermentation. The total soluble fractions of Fe and Zn ranged between 11 an

Teff consumption and anemia in pregnant Ethiopian women: a case-control study.

PURPOSE: Teff, an iron-rich staple grain in Ethiopia, is consumed mainly in the form of teff injera (TI). Studies on the association of TI consumption with anemia are limited. We aimed to determine the association of frequencies of TI consumption with anemia, in Addis Ababa, Ethiopia. METHODS: We conducted a hospital-based case-control study involving 592 pregnant women: 187 anemic cases, and 405 non-anemic controls. TI consumption was assessed by a food frequency questionnaire (FFQ). Multiple logistic regression, adjusted for dietary and non-dietary covariates, was performed to determine the

Putative Aspergillus niger-induced oxalate nephrosis in sheep.

A sheep farmer provided a maize-based brewer's grain (mieliemaroek) and bales of Eragrostis curvula hay to ewes and their lambs, kept on zero-grazing in pens. The 'mieliemaroek' was visibly mouldy. After 14 days in the feedlot, clinical signs, including generalised weakness, ataxia of the hind limbs, tremors and recumbency, were noticed. Six ewes died within a period of 7 days. A post mortem examination was performed on 1 ewe. The carcass appeared to be cachectic with mild effusions into the body cavities; mild lung congestion and pallor of the kidneys were observed. Microscopical evaluation r

Profiling of plants at petroleum contaminated site for phytoremediation.

The paucity of information in the literature on the characteristics of plants that could be used for phytoremediation of petroleum hydrocarbons (PHC)-contaminated sites was the principal reason for this study. The aim of the study was to identify indigenous plants growing in PHC-impacted soil in Umuahia in eastern-Nigeria that have the ability to phytoremediate soils contaminated with hydrocarbons under tropical monsoon climate conditions. A total of 28 native plant species from different families growing in and around hydrocarbon-impacted soil in the vicinity of vandalized pipelines carrying

Two New Novophytoptus Species (Acariformes, Eriophyoidea) from Chile and a Novel Hypothesis on the Functioning of the Eriophyoid Digestive System.

Endoparasitism is a highly specialized form of symbiosis, prominently manifested among phytophagous eriophyoid mites in the genus Novophytoptus Roivainen 1947. These mites have been traditionally thought to be restricted to the subepidermal lacunae of herbaceous monocots of the order Poales, which they penetrate to feed and reproduce. Based on surveys in Chile, two new species of Novophytoptus are described: N. cyperin. sp. from Cyperus eragrostis (Cyperaceae) and N. eryngiin. sp. from Eryngium paniculatum (Apiaceae), with the latter representing the first record of Novophytoptus from a eudico

Food-based dietary guidelines for optimizing calcium intakes for reproductive-aged women in Ethiopia using local foods.

Increasing dietary calcium intakes of Ethiopian women of reproductive age (WRA) is a public health priority for reducing pre-eclampsia in pregnancy. Using linear programming, we determined whether locally available foods consumed by WRA in nine regions (urban and rural) and two administrative cities of Ethiopia could provide 1000 mg/day of dietary calcium, and we identified food-based recommendations (FBRs) to improve dietary calcium adequacy in each region. Results showed that diets providing 1000 mg/day of calcium were feasible in eight regions (40%) of the target populations examined. It wo

Vegetation Restoration in Karst Southwest China: Effects of Plant Community Diversity and Soil Physicochemical Properties on Soil Cadmium.

In southwest China, vegetation restoration is widely used in karst rocky desertification control projects. However, mechanistic evidence explaining how plant community composition and species diversity regulate cadmium (Cd) bioavailability remains limited. Here, the plant community's species diversity, soil properties, Cd, and available Cd contents were evaluated. Four plant community types, NR (natural recovery), PMC (Pistacia weinmannifolia + Medicago sativa + Chrysopogon zizanioides), and PME (Pistacia weinmannifolia + Medicago sativa + Eragrostis curvula), were selected as the research obj

Cropland type shapes arbuscular mycorrhizal fungi (AMF) population density and species diversity in Northwest Ethiopia.

AMF play critical function in soil fertility and plant nutrition, especially in absorption and translocation of immobile nutrients. Farm and soil fertility management activities enhance crop yield; however, they either positively or negatively impact the AMF population and diversity. This study was aimed at assessing effects of farm and soil fertility management activities on AMF population density, species diversity and richness in North West Ethiopia. Soil samples were obtained from teff (Eragrostis tef) and maize (Zea mays) croplands. AMF spores were extracted, quantified, and identified. A

Grass silica short cell phytoliths in Pyrenean subalpine grasslands: taxonomy and palaeoecological relevance.

BACKGROUND AND AIMS: Subalpine grasslands of the Central Pyrenees (1600-2300 m a.s.l.) are semi-natural ecosystems shaped by millennia of pastoral land use. Reconstructing their long-term dynamics requires proxies with higher taxonomic resolution than Poaceae pollen. Grass silica short cell phytoliths (GSSCPs) offer this potential. We aim to build a taxonomically broad, ecologically grounded reference collection and assess the diagnostic value of GSSCP assemblages across grass lineages and habitats. METHODS: We inventoried 251 grass species and selected 66 native taxa to maximize phylogenetic

Addition of Whole Wheat Flour During Injera Fermentation Degrades Phytic Acid and Triples Iron Absorption from Fortified Tef in Young Women.

BACKGROUND: Iron deficiency is a major public health concern in Ethiopia, where the traditional diet is based on tef injera. Iron absorption from injera is low due to its high phytic acid (PA) content. OBJECTIVES: We investigated ways to increase iron absorption from FeSO4-fortified tef injera in normal-weight healthy women (aged 21-29 y). METHODS: Study A (n = 22) investigated the influence on fractional iron absorption (FIA) from FeSO4-fortified injera of 1) replacing 10% tef flour with whole wheat flour (a source of wheat phytase), or 2) adding an isolated phytase from Aspergillus niger.

Catalytic Performance Investigation of Alkali and Bifunctional Catalysts Derived from Lignocellulosic Biomasses for Biodiesel Synthesis from Waste Frying Oil.

In this study, alkali and bifunctional catalysts were synthesized for waste frying oil methyl ester (WFOME) synthesis. Coffee husk (CH) and CH blended with Eragrostis tef straw (TS) (CH-TS) lignocellulosic biomasses (LBs) were utilized during the catalysts' synthesis. The alkali catalysts were CH and CH-TS ashes, both modified by KNO3 impregnation. They are designated as C-45 and C-Mix, respectively. Zirconia (ZrO2) promoted CH ash catalysts via precipitation followed by impregnation (Bic-PP) and in situ precipitation-impregnation (Bic-Dm) were the bifunctional ones. CH and CH-TS chars were th
