Abdominal subcutaneous fat thickness as a substitute for BMI in predicting complications in abdominally-based autologous breast reconstruction.

INTRODUCTION: Patient selection for autologous tissue transfer for postmastectomy breast reconstruction often utilizes body mass index (BMI) to risk stratify patients, though it only estimates fat content and does not address fat distribution. This study aims to identify a measurement of abdominal subcutaneous fat thickness (ASFT) from preoperative computed tomography (CT) angiography imaging to better predict complications. METHODS: A retrospective review of patients who underwent an abdominal microvascular free flap breast reconstruction was performed. The average of the bilateral distances

A Single-Food Substitution Strategy (SFSS) Improves Fat Mass and Metabolic Parameters in MASLD: A Prospective Pilot Study.

Background: Metabolic dysfunction-associated steatotic liver disease (MASLD) is associated with obesity, insulin resistance, and altered body composition. Although dietary intervention is a cornerstone of treatment, complex or calorie-restricted regimens may reduce long-term adherence. This study evaluated the effects of a pragmatic, short-term intervention that involved replacing one daily carbohydrate serving with cruciferous vegetables on body composition and metabolic parameters in individuals with obesity and MASLD. Associations between changes in fat mass and vitamin D and follistatin le

The Effect of Substitution of Palm Fat with Linseed Oil on the Lipid Peroxidation, Antioxidative Capacity and Intestinal Morphology in Rabbits (Oryctolagus cuniculus).

This experiment was conducted to investigate the effect of different dietary fatty acids (saturated or polyunsaturated fatty acids) supplementation on the oxidative status and intestinal morphology of adult rabbits (Oryctolagus cuniculus). Twenty-four "slovenska kunka" rabbits were randomly assigned to two different dietary treatments (12 rabbits per treatment) and fed the experimental diets between 80 and 102 days of age. The palm fat (PALM) diet with 6% palm fat and linseed (LINSEED) diets with 6% linseed oil were used. To evaluate the oxidative status of rabbits, the malondialdehyde concent

Dual-function Pickering emulsion stabilized by oat β-glucan/soybean protein nanoparticles via hydrogen bonding-driven self-assembly for fat substitutes and shelf-life extension in cheese sticks.

Developing clean-label fat substitutes that mimic texture and inhibit spoilage is challenging in low-fat dairy industry. Herein, oat β-glucan/soybean protein nanoparticles were fabricated via ultrasonication. Spectroscopy and molecular docking confirmed hydrogen bonding drove the self-assembly of oat β-glucan and soybean protein into nanoparticles, possessing a mean particle size of 380.30 nm and zeta potential of -23.30 mV. Pickering emulsion with different oil phase fractions (30%-70%, v/v) were prepared using nanoparticles as the emulsifers, finding that nanoparticles effectively stabilized

Substitution of vegetable oil for a partially-hydrogenated fat favorably alters cardiovascular disease risk factors in moderately hypercholesterolemic postmenopausal women.

OBJECTIVE: Compared to vegetable oils in their unmodified state, partially-hydrogenated fat is associated with less favorable effects on cardiovascular disease (CVD) risk factors. Acceptable alternatives must be adjudicated. Our objective was to assess the effect of a recent commercial fat substitution, corn oil for partially-hydrogenated soybean oil. METHODS: Using a double-blind cross-over design, 30 postmenopausal women >or=50 years with LDL-cholesterol concentrations >or=120 mg/dL were randomly assigned to each of two 35-day phases; all food and beverage was provided to maintain body weig

Effects of substitution between fat and protein on feed intake and its regulatory mechanisms in broiler chickens: endocrine functioning and intermediary metabolism.

The aim of this study was to investigate the influence of dietary macronutrient ratio on postprandial (5 or 48 h after refeeding) endocrine functioning and metabolites of the intermediary metabolism and to relate these parameters with dietary-induced alterations in energy, protein, and lipid metabolism. Male broilers were reared from 1 to 7 wk of age on isoenergetic diets with substitutions between fat and protein but similar carbohydrate contents [low protein (LP): 126 vs. 242 g protein/ kg; low fat (LF): 43 vs. 106 g fat/kg]. The LP chickens had significantly increased postprandial plasma tr

Changes in bioactive compounds present in beef burgers formulated with walnut oil gelled emulsion as a fat substitute during in vitro gastrointestinal digestion.

BACKGROUND: The partial or total substitution of animal fat by a gelled emulsion elaborated with cocoa bean shell and walnut oil in beef burgers was assessed in terms of the stability of the bioactive compounds (polyphenolic and methylxanthines compounds, and fatty acid profile), bioaccessibility, colon-available indices (CAIs), and lipid oxidation after in vitro gastrointestinal digestion (GID). RESULTS: No free polyphenolic compounds were detected in the soluble fraction after the GID of reformulated beef burgers. Reductions were obtained in the bound fraction with respect to the undigested

Substitutions of saturated fat intakes with other macronutrients and foods and risk of NAFLD cirrhosis and all-cause hepatocellular carcinoma: a prospective cohort study.

BACKGROUND: Short-term trials have shown a reduction in liver fat when saturated fatty acids (SFAs) are substituted with polyunsaturated fatty acids (PUFA), or with low-glycemic carbohydrates. However, few cohort studies have been conducted to investigate the associations of replacing SFA and SFA-rich foods with different macronutrients and foods in more severe stages of liver disease; nonalcoholic fatty liver disease (NAFLD) cirrhosis and hepatocellular carcinoma (HCC). OBJECTIVES: To investigate associations between the substitution of SFA and SFA-rich foods with other macronutrients and fo

Effects of Edible Insect Tenebrio molitor Larva Fermentation Extract as a Substitute Protein on Hepatosteatogenesis and Proteomic Changes in Obese Mice Induced by High-Fat Diet.

Mealworms (Tenebrio molitor larva) are an edible insect and a protein-rich food; however, research on mealworms as a substitute protein is insufficient. In this study, mealworm fermentation extract (TMP) was assessed as a replacement for soy protein (SP) in a control diet (CON) or a high-fat diet (HFD) of mice for 12 weeks. TMP substitution reduced body weight, body weight gain, body fat mass (perirenal and mesenteric), fat size, glucose intolerance, and insulin resistance compared to the HFD-SP group. TMP alleviated hepatic steatosis (lipid contents and lipid droplets) in high-fat-fed mice an

A systematic review of high-oleic vegetable oil substitutions for other fats and oils on cardiovascular disease risk factors: implications for novel high-oleic soybean oils.

High-oleic acid soybean oil (H-OSBO) is a trait-enhanced vegetable oil containing >70% oleic acid. Developed as an alternative for trans-FA (TFA)-containing vegetable oils, H-OSBO is predicted to replace large amounts of soybean oil in the US diet. However, there is little evidence concerning the effects of H-OSBO on coronary heart disease (CHD)(6) risk factors and CHD risk. We examined and quantified the effects of substituting high-oleic acid (HO) oils for fats and oils rich in saturated FAs (SFAs), TFAs, or n-6 (ω-6) polyunsaturated FAs (PUFAs) on blood lipids in controlled clinical trials.

Association between intake of marine fat and adiposity development among children ages 2 to 6 y: Substitution analyses from the Healthy Start intervention study.

OBJECTIVES: A few previous studies have described a potential role of Ω-3 long-chain polyunsaturated fatty acids from marine animals in obesity in children, but the results are conflicting. The objectives of this study were to examine if intake of marine fat was related to less gain in body mass index (BMI) and body fat (BF) over a 15-mo period among Danish children age 2 to 6 y, and if potential associations depended on which types of fatty acids were replaced. METHODS: A total of 355 children age 2 to 6 y were included in the study. Weight, height, and BF percentage (BF%) assessed by bioimp

Substrate oxidation and control of food intake in men after a fat-substitute meal compared with meals supplemented with an isoenergetic load of carbohydrate, long-chain triacylglycerols, or medium-chain triacylglycerols.

BACKGROUND: It has been suggested that hunger may be delayed and food intake reduced under metabolic conditions that spare carbohydrate oxidation. OBJECTIVE: Our objective was to examine the role of glucose metabolism in the control of food intake in men by using medium-chain triacylglycerols (MCTs) to spare carbohydrate oxidation. DESIGN: In 10 male volunteers, isolated and deprived of any time cues, we studied the effects of 4 lunches on hunger ratings, the duration of satiety, the amount of food ingested at dinner, energy expenditure, substrate oxidation, and plasma variables until the ti

Fabrication of a high internal phase emulsion stabilized with Pleurotus eryngii protein modified by ultra-high pressure combined with glutamine transaminase treatment as a potential fat substitute in pork patty formulations.

Plant protein-stabilized high internal phase Pickering emulsions (HIPEs) represent a promising strategy to replace animal fat in meat products, yet their performance depends critically on protein modification. Pleurotus eryngii protein (PEP) was modified by ultra-high pressure-assisted transglutaminase (TG) crosslinking. This treatment significantly enhanced PEP's emulsifying activity, induced secondary structural rearrangement, increased surface hydrophobicity, and reduced its particle size. The modified PEP successfully stabilized a high internal phase Pickering emulsion (HIPE, 75% oil phase

A trans fatty acid substitute enhanced development of liver proliferative lesions induced in mice by feeding a choline-deficient, methionine-lowered, L-amino acid-defined, high-fat diet.

BACKGROUND: Nonalcoholic steatohepatitis (NASH) is a form of liver disease characterized by steatosis, necroinflammation, and fibrosis, resulting in cirrhosis and cancer. Efforts have focused on reducing the intake of trans fatty acids (TFAs) because of potential hazards to human health and the increased risk for NASH. However, the health benefits of reducing dietary TFAs have not been fully elucidated. Here, the effects of TFAs vs. a substitute on NASH induced in mice by feeding a choline-deficient, methionine-lowered, L-amino acid-defined, high-fat diet (CDAA-HF) were investigated. METHODS:

Low-fat ice cream model system: impact of incorporation of alcalase hydrolyzed zein.

Research on fat substitutes with low calories and good flavor is important to reduce the fat content in food. In this paper, the selection of fat substitutes and the preparation of low-fat ice cream were carried out through looking at the emulsion properties of the enzymatic hydrolysis of zein. The results showed that the emulsifying activity of zein after enzymatic hydrolysis for 10 min was 66.76 m2 g-1, and the emulsifying stability was 78.51 min, showing the best emulsifying properties. Enzymatic hydrolysis of zein can effectively reduce the degree of lipid oxidation. The protein digestibil

Research on the effects of different sugar substitutes-Mogroside V, Stevioside, Sucralose, and Erythritol-On glucose, lipid, and protein metabolism in type 2 diabetic mice.

Sugar substitutes that maintain the homeostasis of glucose, lipid, and protein metabolism are important for nutritional intervention in type 2 diabetes mellitus (T2DM). However, the specific metabolic effects remain unclear. The aim of this study was to systematically compare the effects of four common sugar substitutes on a high-fat diet (HFD) combined with a streptozotocin (STZ)-induced T2DM mouse model from the perspective of hepatic glucose, lipid, and protein metabolism. In this study, based on the establishment of a T2DM mouse model induced by an HFD combined with STZ and nontargeted met

Lipase-Catalyzed Synthesis of Nutritional Structured Lipids at Laboratory-Scale Using Crude or Refined Oils.

In this chapter, some examples of laboratory protocols to produce nutritional structured lipids, namely human milk fat substitutes, dietetic triacylglycerols, and interesterified fat blends with improved functional and rheological properties, catalyzed by either immobilized commercial or noncommercial lipase preparations, are presented. The use of crude oils instead of refined counterparts to reduce oil purification costs is also addressed. In addition to batch synthesis, the continuous production in packed- or fluidized-bed bioreactors is addressed, as well as the evaluation of operational st
