Is the experimental evidence on ultra-processed food and obesity reliable?

Public health experts have issued widespread calls to target ultra-processed foods (UPF) in nutrition policy to prevent obesity and other diet-related chronic diseases. Several short-term crossover feeding studies have examined the effects of UPF consumption on energy intake and body weight, but their findings remain inconclusive, largely due to methodological limitations and imprecision in the Nova classification used to define UPF exposure. Long-term data demonstrating the effectiveness of reducing UPF intake are lacking. Consequently, the available evidence does not establish a causal role

Association of minimally processed and ultra-processed food daily consumption with obesity in overweight adults: a cross-sectional study.

Introduction: food type represents higher odds of having obesity (OB), especially in overweight (OW) subjects. Minimally and ultra-processed foods can be associated with the odds of having OB in OW subjects. Objective: to investigate the association of minimally and ultra-processed food consumption with OB in OW adults. Methods: we included 15,024 participants (9,618 OW [25.0-29.9 kg/m2], 5,406 OB [≥ 30 kg/m2]) with ages ranging from 18 to 59 years from the 2019 baseline survey of the Surveillance of Risk Factors and Protection for Chronic Diseases by Telephone Survey (VIGITEL, Brazil). Development of the Food Addiction Symptom Inventory: The first clinical interview to assess ultra-processed food addiction.

Prior research on ultra-processed food addiction (FA) has utilized the self-report Yale Food Addiction Scale (YFAS) measures to identify individuals who experience indicators of substance-use disorders with respect to their consumption of ultra-processed foods. Studies using the YFAS have provided insight into the clinical utility of FA as both a distinct construct and an indicator of more severe psychopathology among individuals with eating disorders. However, the absence of clinician-administered assessment tools for FA has been identified as a barrier to the evaluation of FA as a novel clin

Industrial Use of Phosphate Food Additives: A Mechanism Linking Ultra-Processed Food Intake to Cardiorenal Disease Risk?

The consumption of ultra-processed food (UPF) keeps rising, and at the same time, an increasing number of epidemiological studies are linking high rates of consumption of UPF with serious health outcomes, such as cardiovascular disease, in the general population. Many potential mechanisms, either in isolation or in combination, can explain the negative effects of UPF. In this review, we have addressed the potential role of inorganic phosphate additives, commonly added to a wide variety of foods, as factors contributing to the negative effects of UPF on cardiorenal disease. Inorganic phosphates

The association between ultra-processed food exposure and cognition in older adults.

With an ageing population comes a growing burden of age-related cognitive decline. While evidence supports a relationship between higher diet quality and better cognitive outcomes, the association between ultra-processed foods (UPFs) and cognitive function remains underexplored. We examined this association using prospective data from the ASPirin in Reducing Events in the Elderly (ASPREE) study, a cohort of Australian adults aged 70 years and older. Dietary intake was assessed via a mail-based diet screening questionnaire and categorised according to the Nova classification. Cognitive performa

Ultra-processed food consumption and multiple sclerosis incidence: A prospective cohort study.

BACKGROUND & AIMS: Emerging evidence suggests an association between ultra-processed food (UPF) consumption and neurodegenerative diseases, but there is limited evidence for multiple sclerosis (MS). Diets rich in UPFs promote inflammation and oxidative stress that both play an important role in modulating the immune system, and thereby, potentially the pathogenesis of MS. This study aimed to investigate the longitudinal association between UPF consumption and MS onset in middle-aged and older adults. METHODS: The study included 185,788 adults who completed at least one valid dietary assessmen

Food additives, emulsifiers, microplastics, and ultra-processed foods in rheumatic disease pathogenesis.

PURPOSE OF REVIEW: Dietary patterns have changed significantly over time, with ultra-processed foods now comprising a large proportion of daily energy intake in many countries. Ultra-processed foods (UPFs) contain numerous additives and may also increase exposure to processing- and packaging-related contaminants that could influence immune function. This review summarizes why UPFs have drawn growing attention and evaluates their potential relevance to autoimmune inflammation, with a focus on rheumatoid arthritis (RA) and related disorders. RECENT FINDINGS: Population studies suggest that high

Abstinence-based treatment of comorbid eating disorders and ultra-processed food addiction.

While not officially recognized as a clinical diagnosis, ultra-processed food addiction (UPFA) is an increasingly observed phenomenon that frequently co-occurs with eating disorders (EDs). Yet, treatment remains both understudied and controversial. Many challenges exist when treating patients with comorbid UPFA/ED, particularly in the context of the polarizing debate between abstinence-based and moderation-based approaches to nutrition intervention. We present three vignettes illustrating diverse trajectories of recovery when an abstinence-based approach is explored by a patient presenting wit

The Purpose of Food Processing and Ultra-Processed Food: the Potential, Pitfalls and Path Forward for Public Health.

PURPOSE OF REVIEW: The Nova classification considers the purpose and degree of food processing to capture how recent changes in the food system may link with health. Its value for understanding diet-disease relationships is debated. However, reviews typically focus only on its value, or its limitations. Furthermore, by discussing the degree of processing only and not the purpose, or discussing processing in general, reviews of limitations do not address pitfalls of the Nova classification. This conflict and confusion stalls progress to improve public health. Therefore, this review aims to prov

Nutritional consequences of food processing.

A variety of methods are used to process foods: if they are not edible, to render them so; to permit storage; to alter texture and flavor; to destroy microorganisms and other toxins. These methods include heating (baking, cooking, frying, microwaving), freezing, and high pH. It is a paradox of nature that the processing of foods can improve, nutrition, quality, and safety; yet, occasionally these processing alternatives can lead to the formation of anti-nutritional and toxic compounds. These multi-faceted consequences of food processing result from molecular interactions among nutrients and wi

Sustainable Processing in Food Manufacturing.

This review focuses on the technical side of sustainable food processing: the efficiency of the conversion of raw materials into foods that are offered to consumers. Both incremental and stepwise technological developments take place at the same time. Unit operations continue to gradually become more efficient, and system assessment tools such as pinch technology help to optimize processing systems. Use of nonthermal, electrically driven processes reduces degradation of food components and enables more complete use of raw materials. Mild processing methods such as dry fractionation and hybrid

Ultra-processed food exposure and health outcomes: Current evidence, controversies, and future perspectives.

Ultra-processed food (UPF) exposure has increased markedly worldwide and is now a major contributor to total energy intake in many countries. Evidence from large prospective cohort studies suggests that higher UPF exposure is associated with adverse health outcomes, including overweight and obesity, type 2 diabetes, cardiovascular disease, selected cancers, depression, and increased all-cause mortality. Short-term experimental studies further indicate that diets rich in UPFs can promote excess energy intake and weight gain, supporting biological plausibility. Several mechanisms have been propo
