From intervention priority to microbiological risk: interpreting Fuzzy-FMEA in household food safety.

Zhang et al. proposed an innovative Fuzzy Failure Mode and Effect Analysis framework to prioritize household food-handling practices in China by integrating national survey data with structured expert elicitation. Although this approach offers a pragmatic basis for targeting food-safety interventions, the interpretation of the resulting fuzzy risk priority numbers warrants caution. Occurrence estimates were derived from behavioral items with heterogeneous and sometimes conditional denominators, limiting direct comparability across failure modes. In addition, redefining detection as consumer ri

Fermentative Foods: Microbiology, Biochemistry, Potential Human Health Benefits and Public Health Issues.

Fermented foods identify cultures and civilizations. History, climate and the particulars of local production of raw materials have urged humanity to exploit various pathways of fermentation to produce a wide variety of traditional edible products which represent adaptations to specific conditions. Nowadays, industrial-scale production has flooded the markets with ferments. According to recent estimates, the current size of the global market of fermented foods is in the vicinity of USD 30 billion, with increasing trends. Modern challenges include tailor-made fermented foods for people with spe

Listeria monocytogenes and listeriosis: a review of hazard characterisation for use in microbiological risk assessment of foods.

Considerable effort has been put into the application of quantitative microbiological risk assessment for Listeria monocytogenes, and data are available for England and Wales (probably more so than most other countries) on the adverse health effects, together with incidence data on different age and risk groups for human L. monocytogenes infections. This paper reviews aspects of Listeria and human listeriosis, especially from a public health perspective and provide hazard characterisation data, i.e. the qualitative and/or quantitative evaluation of the adverse health effect associated with the

Microbiological criteria for Listeria monocytogenes in foods under special consideration of risk assessment approaches.

This paper shortly summarizes data related to risk assessment of Listeria monocytogenes. From available data on risk assessment, it is concluded that the levels of L. monocytogenes consumed is an important factor affecting the incidence of listeriosis. Foods that do not support the growth of L. monocytogenes are unlikely to be a source of listeriosis, whereas foods that support the growth to high levels, should be the target of risk management efforts. Based on current epidemiological information from several countries, a concentration of L. monocytogenes not exceeding 100/g of food at the tim

Microbiological profiling and knowledge of food preservation technology to support guidance on a neutropenic diet for immunocompromised patients.

The current society consists of an increasing number of people vulnerable to infections. For certain people with severe immunodeficiency, a neutropenic or low-microbial diet is being prescribed, which substitutes high-risk foods that are more likely to contain human (opportunistic) pathogens with lower-risk alternatives. These neutropenic dietary guidelines are typically set up from a clinical and nutritional perspective, rather than from a food processing and food preservation perspective. In this study, the current guidelines in use by the Ghent University Hospital were evaluated based on th

Longer-duration uses of tetracyclines and penicillins in U.S. food-producing animals: Indications and microbiologic effects.

We review and analyze regulatory categories for longer duration of use (defined as ≥ 7 day) tetracyclines (TCs) and penicillins (PNs) approved for U.S. livestock and poultry, together with scientific studies, surveillance programs and risk assessments pertaining to antimicrobial resistance. Indications listed on a government database were grouped into three broad categories according to the terminology used to describe their use: disease control (C), treatment (T) and growth improvement (G). Consistent with mostly therapeutic uses, the majority (86%) of listed indications had C and/or T terms.

Global research trends on bacterial contamination and microbiological quality of ready-to-eat foods: a bibliometric analysis.

BACKGROUND: Ready-to-eat (RTE) foods are increasingly consumed worldwide due to urbanization, dietary shifts, and globalization of food systems, yet they remain a significant vehicle for foodborne diseases. Despite the growing body of research, a systematic mapping of global scientific trends in this area has been lacking. METHODS: We conducted a bibliometric analysis of RTE food microbiology research indexed in Scopus from 1973 to 2025. Publication trends, citation patterns, leading authors, institutions, journals, and country-level contributions were assessed using Bibliometrix. Network ana

Physical-Chemical and Microbiological Characterisation of Blueberry By-Products (Vaccinium myrtillus L.) as Potential Food Ingredients.

The production of blueberry juice generates large quantities of waste products such as skins, pulp and seeds. These by-products contain high levels of bioactive compounds and are suitable for use as functional ingredients in food systems. In this study three powdered products obtained from blueberry pomace-with skins and seeds, seedless, and with seeds-have been physically-chemically and microbiologically characterised as being the individual anthocyanins and phenolic compounds identified by HPLC-QTOF. Furthermore, to ensure product safety, the effect of a heat treatment at 90 °C for 30, 60, 9

A hospital food-borne outbreak of diarrhea caused by Bacillus cereus: clinical, epidemiologic, and microbiologic studies.

An outbreak of diarrhea involving 28 patients occurred in two wards of a chronic disease hospital. The illness was characterized by abdominal cramps and watery diarrhea without vomiting or fever. An epidemiologic investigation suggested food-borne intoxication and incriminated turkey loaf served at the preceding evening meal as the source of the outbreak. Bacillus cereus was isolated both from the stool of all 14 symptomatic patients who were cultured and from turkey loaf. No other enteropathogens were found. The isolate of B. cereus was shown to elaborate an enterotoxin that caused fluid secr

Microbiological safety of dehydrated foods: risk analysis, technology evaluation, and synergistic strategies for next-generation processing.

Drawing on nearly two decades of systematic research in food dehydration and recent reports of microbial contamination in dehydrated food systems, this review highlights the urgent need for interdisciplinary collaboration to ensure microbiological safety in emerging dehydrated food matrices. We deconstruct the microbial hazards inherent to these products while challenging the long-held assumption of their intrinsic safety. The review proceeds through four key dimensions: (i) taxonomic profiling of pathogenic microorganisms associated with dehydrated foods, supported by outbreak reports and reg

Microbiological survey and genomic analysis of Cronobacter sakazakii strains isolated from US households and retail foods.

UNLABELLED: Cronobacter species are opportunistic pathogens that are capable of causing morbidity and mortality, particularly in infants. Although the transmission dynamics involved in Cronobacter infections remain largely unknown, contaminated powdered infant formula (PIF) has been linked to 30% of Cronobacter sakazakii cases involving invasive illness in infants. As several lines of evidence have implicated the domestic environment in PIF contamination, we undertook a microbiological survey of homes (N = 263) across the US. Cronobacter spp. and C. sakazakii were isolated from 36.1% and 24.7%

Quantitative microbiological risk assessment of traditional food of animal origin produced in short supply chains in Poland.

Polish raw-milk cheeses produced in short supply chains may pose a threat to consumer safety due to pathogen presence. Listeria monocytogenes is a bacterium of great importance for the food safety of refrigerated RTE foods due to its ability to grow at refrigeration temperatures. During the EU-FORA fellowship, a stochastic risk assessment was designed and executed to estimate the risk for consumers from L. monocytogenes in these products. The aim was to develop a probabilistic QMRA model that would incorporate the variability and uncertainty of the model's inputs such as prevalence, initial co

The zoonotic potential of Lactococcus garvieae: An overview on microbiology, epidemiology, virulence factors and relationship with its presence in foods.

Lactococcus garvieae is a relevant worldwide fish pathogen affecting various farmed and wild marine and freshwater species. It has also been isolated from other animals, such as ruminants with subclinical mastitis and pigs with pneumonia. From the early 90s, L. garvieae has been associated with different human infections, mainly endocarditis. During the last five years, human infections by this bacterium appear to be increasing, likely due to the improvement in microbiological methods for bacterial identification and the alertness of this bacterium by physicians. Human L. garvieae infections h

Volatile and phenolic profiles, instrumental color, and microbiological safety of selected foods from Tajikistan: A chemometric study.

Tajikistan has a rich tradition of dried fruits, nuts/seeds, and honey, yet their quality parameters have been scarcely investigated. Given that these products are increasingly exported and accessible on international markets, including the EU, ensuring and verifying their quality is essential for consumer safety and market competitiveness. This study comprehensively characterized selected foods from Tajikistan in terms of volatile organic compounds (VOCs), selected extractable polyphenols, instrumental color, and microbiological status. VOCs were profiled by HS-SPME-GC-MS, polyphenols by HPLC

Microbiological quality of gluten-free meals, naturally gluten free foods, and gluten free-labelled products.

BACKGROUND: The rising prevalence of gluten-related disorders such as celiac disease explains the increased consumption of gluten-free foods (GFF). However, these foods must be safe in terms of both gluten content and contamination by pathogenic microorganisms in order to avoid food poisoning. OBJECTIVE: The objective of this study was to assess the microbiological quality of gluten-free meals, naturally gluten free foods, and gluten free-labelled products. MATERIAL AND METHODS: We collected 62 GFF samples including 20 meals (M-GF), 22 naturally gluten free (N-GFF) and 20 labelled (L-GFF) pr
