Discoloration of dental pellicle by tannic acid.

The ability of tannic acid to discolor pellicle was studied in vitro and in vivo. Freshly extracted teeth were submerget in solutions of tannic acid, and in the clinical study individuals rinsed three times daily with 0.1% or 0.2% tannic acid. It was fount that 0.2% tannic acid caused brownish discolorations within 10-12 days both in vitro and in vivo. Discolored pellicle material collected from the in vivo test group was shown to contain furaldehyde after hydrolysis. The origin of the furaldehyde is not ascertained, but could be due to the presence of dietary deposits, transformation of pelli

Light-Struck Taste in White Wine: Protective Role of Glutathione, Sulfur Dioxide and Hydrolysable Tannins.

Light exposure of white wine can cause a light-struck taste (LST), a fault induced by riboflavin (RF) and methionine (Met) leading to the formation of volatile sulfur compounds (VSCs), including methanethiol (MeSH) and dimethyl disulfide (DMDS). The study aimed to investigate the impact of different antioxidants, i.e., sulfur dioxide (SO2), glutathione (GSH) and chestnut tannins (CT), on preventing LST in model wine (MW) and white wine (WW), both containing RF and Met. Both MW and WW samples were added with the antioxidants, either individually or in different combinations, prior to 2-h light

Ellagic acid and intestinal microflora metabolite urolithin A: A review on its sources, metabolic distribution, health benefits, and biotransformation.

Foods rich in ellagic tannins are first hydrolyzed into ellagic acid in the stomach and small intestine, and then converted into urolithins with high bioavailability by the intestinal flora. Urolithin has beneficially biological effects, it can induce adipocyte browning, improve cholesterol metabolism, inhibit graft tumor growth, relieve inflammation, and downregulate neuronal amyloid protein formation via the β3-AR/PKA/p38MAPK, ERK/AMPKα/SREBP1, PI3K/AKT/mTOR signaling pathways, and TLR4, AHR receptors. But differences have been reported in urolithin production capacity among different indivi

Interference of dietary polyphenols with potentially toxic amino acid metabolites derived from the colonic microbiota.

Each day, varying amounts of undigested or partially digested proteins reach the colon where they are metabolized by the microbiota, resulting in the formation of compounds such as ammonia, p-cresol, skatole, phenol, indole, and hydrogen sulfide (H2S). In farm animals, the excessive production of these metabolites can affect the quality of meat and milk and is a source of contaminating emissions from animal manure. In humans, their accumulation is potentially harmful, and it has been proposed that they could be involved in the development of pathologies such as colorectal cancer and ulcerative

The swarming motility of Pseudomonas aeruginosa is blocked by cranberry proanthocyanidins and other tannin-containing materials.

Bacterial motility plays a key role in the colonization of surfaces by bacteria and the subsequent formation of resistant communities of bacteria called biofilms. Derivatives of cranberry fruit, predominantly condensed tannins called proanthocyanidins (PACs) have been reported to interfere with bacterial adhesion, but the effects of PACs and other tannins on bacterial motilities remain largely unknown. In this study, we investigated whether cranberry PAC (CPAC) and the hydrolyzable tannin in pomegranate (PG; punicalagin) affected the levels of motilities exhibited by the bacterium Pseudomonas

'Neurosecretion' by synaptic terminals and glandular discharge in the endocrine pancreas. Application of tannic acid to the teleost Xiphophorus helleri.

Nerve fibers within the large pancreatic islet of Xiphophorus helleri are apparently of a single type and form typical, well-differentiated synapses with the endocrine gland cells. A histochemical test for cholinesterases generates reaction product in association with the outer surfaces of the neuronal membranes. Two categories of presumptive secretory inclusions are present in the fiber terminals: secretory granules usually 80-120 nm in diameter have a wide distribution within the fibers, whereas electron-lucent synaptic vesicles 30-60 nm across often cluster adjacent to membrane thickenings

Tannic acid and chromic chloride-induced binding of protein to red cells: a preliminary study of possible binding sites and reaction mechanisms.

The binding mechanisms and binding sites involved in the tannic acid and chromic chloride-induced binding of protein to red cells were investigated using the binding of IgA paraprotein to red cells as model systems. Inhibition studies of these model systems using amino acid homopolymers and compounds (common as red cell membrane constituents) suggest that the mechanisms involved are similar to those proposed for the conversion of hide or skin collagen to leather, as in commercial tanning. These studies also suggest that tannic acid-induced binding of IgA paraprotein to red cells involves the a

Chemical interactions between thiamin and tannic acid. I. Kinetics, oxygen dependence and inhibition by ascorbic acid.

Consumption of food high in tannins can cause thiamin deficiency. The interactions between tannic acid and thiamin were studied by allowing them to react at pH 7.5, 60 C, and determining free remaining thiamin by the thiochrome method and by recording changes in ultraviolet absorption profiles at intervals. The reaction was biphasic, having a rapid initial phase which was oxygen-independent, followed by a slower phase which was oxygen concentration-dependent. Ascorbic acid completely inhibited the reaction if present at the beginning of the reaction and could partially reverse the reaction if

The role of bifunctional 3-dehydroquinate dehydratase / shikimate dehydrogenase and its paralog quinate dehydrogenase in tannins biosynthesis.

Tannins are complex polyphenolic compounds that protect plants from herbivores, pathogens, ultraviolet (UV) stress, etc. There are two main classes of tannins: hydrolyzable tannins (HTs) and condensed tannins (CTs). Tannin biosynthesis is closely linked to intermediates of the shikimate pathway and to the activity of the bifunctional enzyme dehydroquinate dehydratase/shikimate dehydrogenase (DQD/SDH). The biosynthesis of HTs is initiated by the formation of gallic acid catalyzed by SDH, which is subsequently converted into β-glucogallin, as well as tri-, tetra-, and pentagalloylglucoses. Furth

Mechanism of acorn ellagitannin regulating rodent population quantity.

Chemical defense mechanisms in certain plant seeds yield secondary metabolites that can adversely affect rodents. In forest ecosystems, acorns high in ellagitannins (ET) serve as a significant nutrient source for rodents; however, the long-term impacts of ingesting tannin-rich acorns on reproductive organs and overall reproduction remain unclear. In this study, four types of artificial seeds with different ET contents (0, 2, 7, and 12%) were fabricated to simulate various acorn types. We investigated the effects of ET on the survival and reproduction of Kunming mice (Mus musculus). Results rev

Atmospheric immersion and vacuum impregnation of gallotannins and hydrolysed gallotannins from tara pods (Caesalpinia spinosa) mitigate acrylamide and enhances the antioxidant power in potato chips.

This research aimed to evaluate atmospheric pressure immersion (API) and vacuum impregnation (VI) of non-hydrolyzed and hydrolyzed tara gallotannins (TE and THE) extracts and the purification process by leaching with ethyl acetate (TE-L and THE-L) and absorption chromatography on the acrylamide (AA) mitigation in potato chips. Better results were obtained with THE-L at hydrolysis degrees of 48.5 and 99.8 % and API with AA reduction of 57.9 and 61.7 %, respectively (p > 0.05), while with TE-L, AA reduction was 29.2 %. Instead, THE-L and TE-L with VI reduced AA by 70.3 and 66.4 %, respectively.

Total Content and Composition of Phenolic Compounds from Filipendula Genus Plants and Their Potential Health-Promoting Properties.

This current article was dedicated to the determination of the composition of phenolic compounds in extracts of four species of the genus Filipendula in order to establish a connection between the composition of polyphenols and biological effects. A chemical analysis revealed that the composition of the extracts studied depended both on the plant species and its part (leaf or flower) and on the extractant used. All four species of Filipendula were rich sources of phenolic compounds and contained hydrolyzable tannins, condensed tannins, phenolic acids and their derivatives, and flavonoids. The

Tannins in ruminant feeding: effects of tannin type and dosage on rumen fermentation, production performance, health, and sustainability.

Tannins are plant-derived polyphenolic compounds of variable molecular weights that have attracted considerable attention as natural feed additives in ruminant nutrition. Their ability to modulate rumen microbial ecology, improve nutrient utilization, mitigate enteric methane (CH4) emissions, and promote animal health has positioned them as potential tools for improved, sustainable ruminant production systems. This review critically evaluates and synthesizes published evidence on the effects of tannins on rumen fermentation dynamics, nutrient digestibility, hematological and biochemical parame

Impact of Tannin Supplementation on Proteolysis during Post-Ruminal Digestion in Wethers Using a Dynamic In Vitro System: A Plant (Medicago sativa) Digestomic Approach.

The aim of this study was to characterize the effects of tannins on plant protein during sheep digestion using a digestomic approach combining in vivo (rumen) conditions and an in vitro digestive system (abomasum and small intestine). Ruminal fluid from wethers infused with a tannin solution or water (control) was introduced into the digester, and protein degradation was followed by liquid chromatography-tandem mass spectrometry (LC-MS/MS). Tannin infusion in the rumen led to a clear decrease in protein degradation-related fermentation end-products, whereas ribulose-1,5-bisphosphate carboxylas
