Neptunea arthritica cumingii (Nac) is a marine snail with high nutritional and commercial value; however, little is known about its active peptides. In this study, two multi-functional peptides, YSQLENEFDR (Tyr-Ser-Gln-Leu-Glu-Asn-Glu-Phe-Asp-Arg) and YIAEDAER (Tyr-Ile-Ala-Glu-Asp-Ala-Glu-Arg), were isolated and purified from meat and visceral mass extracts of Nac using a multi-bioassay-guided method and were characterized by using liquid chromatography-tandem mass spectrometry. Both peptides showed high antioxidant, angiotensin-converting enzyme (ACE)-inhibitory, and anti-diabetic activities,

Coconut meat (solid endosperm) is a valuable oilseed product with significant nutritional and functional properties, yet the quality changes during maturation remain unclear. This study investigated the effects of maturity on nutrients, antioxidant and α-amylase inhibitory activities, and volatile organic compounds in coconut meat of the Wenye No. 3 variety at 8, 10, and 12 months after pollination (named CM-8, CM-10 and CM-12, respectively). Results showed that moisture content decreased from 81.15% to 61.73%, while fat (8.61% to 17.53%), protein (0.60% to 1.29%), and total soluble sugars (2.

BACKGROUND: Low Frequency Vibro-Percussion (LFVP) assists clearance of thrombi in catheter systems and when applied to the heart and timed to diastole is known to enhance coronary flow. However LFVP on a clotted coronary like vessel given engagement over a chest wall sized barrier (to resemble non-invasive heart attack therapy) requires study.
METHODS: One hour old clots (n=16) were dispensed within a flexible segment of Soft-Flo catheter (4 mm lumen), weighted, interfaced with Heparinized Saline (HS), secured atop a curved dampening base, and photographed. A ~4 cm meat slab was placed over t

This study aimed to evaluate the fermentation in the large intestine of indigestible dietary protein sources from animal, insect, and plant origin using an in vitro model of the pig's gastrointestinal tract. Protein sources were used raw and after a cooking treatment. Results showed that the category of the ingredient (meats, insects, or grain legumes) exerts a stronger impact on enzymatic digestibility, fermentation patterns, and bacterial metabolites such as short-chain fatty acids (SCFA) and hydrogen sulfide (H2S) than the cooking treatment. The digestibility and the fermentation characteri

Alternative sources of proteins, such as plant-based proteins, insect-based proteins, single-cell proteins, and cultivated meat, have emerged as efficient alternative foods to animal-derived proteins, contributing to a more sustainable, resilient, and ethical food systems. Plant-based proteins constitute the most commercially efficient and cost-effective alternatives with a well-established supply chain and consumer acceptance. Even though insect-based proteins and single-cell proteins are highly nutritive and resource efficient, challenges persist regarding cultural acceptance, regulatory iss

Cultivated meat (CM) has emerged as a promising solution to the environmental, ethical, and food security concerns associated with conventional meat production. However, realising its full potential depends on developing robust, scalable, and cost-effective bioprocessing strategies. This chapter explores the entire CM bioprocessing pipeline, from upstream challenges such as the development of robust cell lines, scaling up cell cultures, and evaluating different operating modes like batch, fed-batch, and perfusion to downstream processes such as biomass harvesting, purification, and product str

As global protein demand increases, cultured meat from alternative protein systems represents an innovative approach to addressing sustainability and food safety concerns. This chapter provides an overview of the chemistry and molecular basis underlying in vitro meat production, focusing on cellular sources, stem cell biology, cellular differentiation, and scaffold materials. The controlled proliferation and differentiation of muscle and adipose cells are governed by biochemical pathways that regulate lipid biosynthesis, oxidative balance, and structural organization. Current academic research and industrial processes for cultivated meat production primarily utilize cultures of single cell types (monocultures) that do not capture the complexity of the in vivo environment of muscle and fatty tissues in the body. These systems are simplified for operational practicalities and cost reduction rather than to improve product quality. Irrespective of the manufacturing process, a food product must be of high quality to survive in competitive markets. Co-culture of multiple cell types is a well-established practice that enhances tissue qualities by allowing the cell

Cultivated meat (CM) seeks to decouple meat production from animal agriculture, but producing structured products that consumers recognize as whole-cut meat remains both difficult and central to the field's ambitions. Scaffolds are key to this goal, providing architecture, cell-adhesion sites, and instructive cues required to organize cells into texturally mimetic tissue. To date, CM scaffold research has largely borrowed from tissue engineering, which optimizes for therapeutic function and does not account for the constraints that define a food product: edibility, low cost, and large scale. Creating perfusable channels within engineered tissues is crucial for the development of large-scale tissues. Unfortunately, existing technologies have not achieved uniformly distributed, perfusable networks on a large scale. To overcome this, we developed a method using a hollow fiber bioreactor (HFB) equipped with an array of closely packed semipermeable hollow fibers that function as artificial circulation systems, ensuring uniform nutrient and oxygen distribution throughout the tissue. Furthermore, the HFB includes microfabricated anchors for promoting cell alignment. When using active per

Cultured meat, which involves growing meat in a laboratory rather than breeding animals, offers potential benefits in terms of sustainability, health, and animal welfare compared to conventional meat production. However, the cultured meat production process involves several stages, each with potential hazards requiring careful monitoring and control. Microbial contamination risks exist in the initial cell collection from source animals and the surrounding environment. During cell proliferation, hazards may include chemical residues from media components such as antibiotics and growth factors,

STUDY/PRINCIPLES: The aim of this study was to investigate the clinical characteristics of meat allergy, to validate the routine diagnostic tools and to compare our results with data from the literature.
METHODS: We recruited within the framework of the EU-project REDALL adult patients and children with a positive case history of meat allergy. Definitive inclusion criteria were either a history of an anaphylactic reaction to meat or a positive titrated double-blind placebo-controlled food challenge with the incriminated meat. Sensitisation to meat was assessed in all patients by skinprick-tes

Cellular agriculture combines cell culture and tissue engineering techniques to produce animal-derived food products. While cell culture is routinely reported in the medical literature to affect protein expression in primary mammalian cells, the impact of these changes has yet to be established in the context of food production and allergenicity. To address this, primary bovine myoblasts were cultured for short-, medium-, and long-durations and then compared to native tissue. Proteomic and immunoblotting analyses identified cumulative changes at increasing passage numbers, with significant dif

Meat provides high-quality protein and essential micronutrients such as vitamin B12, heme iron, zinc, and selenium, along with conditionally essential compounds including creatine, carnitine, and taurine. Growing concerns over environmental sustainability, animal welfare, and potential health risks associated with excessive meat consumption have spurred the development of plant-based and cultured alternatives intended to replicate the nutritional and sensory attributes of meat. This review critically examines the extent to which these emerging products achieve nutrient equivalence with convent

Muscle carnosine represents an important health advantage of meat. Ground pork samples with intrinsic or added carnosine; fat content; and cooked under low or high intensity as a 2 × 2 × 2 factorial were digested in-vitro. Changes in free carnosine and in markers of lipid (hexanal, 4-hydroxynonenal (4-HNE), malondialdehyde (MDA) and protein (protein-carbonyls, thiols) oxidation, and of advanced glycation end-products (AGEs) Nε -(carboxymethyl)lysine (CML) were determined in the saliva, gastric, and duodenal digests. During digestion, the different markers overall indicated increased oxidation

Cultivated meats are typically hybrids of animal cells and plant proteins, but their high production costs limit their scalability. This study explores a cost-effective alternative by hypothesizing that controlling the Maillard and lipid thermal degradation reactions in pure cells can create a meaty aroma that could be extracted from minimal cell quantities. Using spontaneously immortalized porcine myoblasts and fibroblasts adapted to suspension culture with a 1 % serum concentration, we developed a method to isolate flavor precursors via freeze-thawing. Thermal reaction conditions were optimi

Bioreactors encompass a wide spectrum of engineering concepts, yet for decades, industrial biotechnology has seen little fundamental innovation, with large-scale production mainly confined to stirred-tank and bubble-column reactors for microbial fermentations. In pharmaceutical biotechnology, various cultivation systems for eukaryotic cells are well established, including microcarrier processes, suspension in stirred vessels, and disposable bags or wave (rocking) bioreactors. However, these systems have typically been optimized to produce specific biomolecules, such as recombinant proteins, va

Growing interest in sustainable and clean-label foods has increased the need for meat products with reduced animal meat content. This study comparatively characterized three deli ham formulations: a conventional control, a hybrid formulation in which 50% of the pork meat mass was replaced with chickpea flour, red lentil flour and potato protein isolate, and a clean-label hybrid formulation with the same meat replacement. For physicochemical, nutritional, texture and rheological analyses, one production batch was prepared for each formulation. A second, independently produced batch of each form

Iron deficiency anemia (IDA) is a global health concern affecting one-third of the world's population, particularly those dominated by plant-based food. Fortifying staple foods with iron has been an effective strategy for preventing IDA. Pneumatophorus japonicus is an essential economic fish in China. Pneumatophorus japonicus dark meat is usually underutilized as a byproduct, though it contains bounteous nutrients, including heme iron (10.50 mg/100 g). This study aimed to investigate the iron bioavailability of P. japonicus dark meat and to evaluate its potential as an iron fortifier for whole
