Was the Annals of Internal Medicine recently acting as a mouthpiece for meat-industry propaganda? Five papers underpinned recommendations on meat consumption; their central deceit was to review only randomized controlled trials and cohort studies, which, in research on the associations between common foods and disease outcomes, are nearer to the bottom than the top of the evidence hierarchy. Despite concluding that their own recommendations were "weak and based on low certainty evidence", the authors were happy to recommend that there is "No need to reduce red or processed meat consumption for

According to the 2030 Agenda of the United Nations, one of the sustainable development goals is to ensure sustainable consumption and production patterns. The need to ensure food safety includes, other than microbiological hazards, concerns with antimicrobial-resistant (AMR) bacteria. The emergence of resistant bacteria in the food industry is essentially due to the abusive, and sometimes incorrect, administration of antimicrobials. Although not allowed in Europe, antimicrobials are often administered to promote animal growth. Each time antimicrobials are used, a selective pressure is applied

The consumption of ovine and caprine meat is considered one of the major transmission routes for Toxoplasma gondii infection in humans. The present study aimed at obtaining epidemiological and molecular data on T. gondii infection in small ruminants slaughtered or commercialized in Italy. Meat juices from 227 sheep and 51 goats were analyzed with a commercial ELISA and antibodies were detected in 28.6% sheep and 27.5% goats. A significant difference was highlighted between adult sheep and the other considered categories (young sheep, young and adult goats) concerning the detection of antibodie

The Regulation (EC) No. 854/2004 refers in particularly to a broad spectrum of official supervision of products of animal origin. The supervision should be based on the most current relevant information which is available. The proposal presented includes forms for implementation of Food Chain Information (FCI) as laid down in the Regulation (EC) No. 853/2004 as well as suggestions for the implementation of the visual inspection and criteria for a practical approach to assist the competent authority and the business operator. These suggestions are summarised in two forms including the FCI and p

The bacterial communities that are established during natural meat fermentation depend on the processing conditions and the type of meat substrate used. Six pork samples of variable quality (reflected in pH values) and six less conventional meats (beef, horse, hare, wild deer, wild duck, and wild boar) were naturally fermented under controlled conditions in model systems. The development of lactic acid bacteria (LAB), coagulase-negative staphylococci (CNS), and enterobacteria was followed using culture-dependent techniques and (GTG)5-PCR fingerprinting of genomic DNA from the isolates obtained

A review of the published quantitative risk assessment (QRA) models of L. monocytogenes in meat and meat products was performed, with the objective of appraising the intervention strategies deemed suitable for implementation along the food chain as well as their relative effectiveness. A systematic review retrieved 23 QRA models; most of them (87%) focused on ready-to-eat meat products and the majority (78%) also covered short supply chains (end processing/retail to consumption, or consumption only). The processing-to-table scope was the choice of models for processed meats such as chorizo, bu

Our investigation focused on foodborne outbreaks related to meat and meat products, published in peer-reviewed journals in the period 1980-2015. Most of the outbreaks, investigated in this study, were caused by Escherichia coli and Salmonella, causing 33 and 21 outbreaks, respectively, mostly in Europe and the United States. In the E. coli outbreaks, the total number of reported cases was 1966, of which 1543 were laboratory confirmed. The number of cases requiring hospitalization was 476, of whom 233 cases had a hemolytic-uremic syndrome (HUS), and the reported deaths were 32. All of the E. co

BACKGROUND: Although meat constitutes an important part of many consumers' diet, its consumption has become a quiet controversial issue. Several factors are effective on tendency to red meat consumption. The 2007's report of the world Cancer Research Fund makes the recommendation to limit the consumption of red meat to less than 500 g per week. The aim of this study is to determine meat and meat products consumption and causes of tendency to red meat among people of Khorramabad city, Iran.
METHODS: This cross- sectional study was carried out on 300 adults (178 women and 122 men; aged 19-70 ye

Based on the need for a scientific basis for existing requirements in EU legislation on freezing of meat or for its possible amendment, the opinion compares microbial growth of relevant pathogenic, spoilage and indicator microorganisms within five scenarios of chilling, storage and defrosting of bovine, ovine and porcine meat, using predictive microbiology models that considered various conditions of temperature and, where possible, pH and aw. Results obtained were compared to a reference scenario: storing meat at 7°C, aerobically, until 15 days post-slaughter. Storage of meat for 6 weeks, vac

The aims of this study were to evaluate the occurrence of Clostridium difficile in commercial raw meat and meat products commercialized in Brazil, and to determine the pathogenic potential and antimicrobial susceptibility of the isolates. After selective enrichment, the isolation of C. difficile involved plating with and without an alcohol shock treatment onto C. difficile moxalactam agar (CDMNA). The toxigenic profile was determined through PCR for detection of tcdA, tcdB, cdtA and cdtB genes and an enzyme-linked immunosorbent assay for toxin A/B. C. difficile was isolated from 8.9% (17 out o

Meat and meat products have been described as a very good source of angiotensin I converting enzyme (ACEI)-inhibitory peptides. The generation of bioactive peptides can occur through the action of endogenous muscular enzymes during processing, gastrointestinal digestion, or by using commercial enzymes in laboratory or industry under controlled conditions. Studies of bioavailability are necessary in order to prove the positive health effect of bioactive peptides in the body as they should resist gastrointestinal digestion, cross the intestinal barrier, and reach blood stream and target organs.

The global poultry industry has experienced rapid growth, driven by consumer demand for affordable, high-quality protein. However, this progress has been accompanied by the emergence of growth-related myopathies, notably Spaghetti Meat (SM) and the more recently described Gaping, which compromise meat quality, yield, and marketability. SM, first reported in 2015, is characterized by the detachment and weakening of Pectoralis major fibers, resulting in a stringy, mushy texture of the meat. Gaping, affecting the Pectoralis minor, presents as separations between fiber bundles and tendon tears. In

The consequences of a change from a traditional meat inspection procedure, including manual handling, palpation and incision, to an entirely visual postmortem meat inspection procedure in Danish slaughter pigs were assessed by a comparative study of the two methods in 183,383 slaughter pigs. Out of 58 lesion codes (selected with a prevalence > or = 5.5 x 10(-5)), 26 (45 per cent) were assessed either as merely aesthetic or as the healed stage of an earlier lesion and nine (15 per cent) as active, but local processes, occurring only in non-edible tissue. Five lesion codes (9 per cent) were asse

Cultured meat is emerging as a sustainable and ethical alternative source of dietary protein. However, the commercial viability of cultured meat is fundamentally constrained by prolonged tissue maturation timelines and the high energy demands of conventional, motor-driven electronic bioreactors. To address these bottlenecks, this study introduces a novel, scalable, magnetic-valve controlled pneumatic compression bioreactor, which utilizes a mechanically tunable magnetic circuit to deliver precise cyclic compression without internal electronic sensors or digital feedback loops. We evaluated the

Meat is a food rich in protein, minerals such as iron and zinc as well as a variety of vitamins, in particular B vitamins. However, the content of cholesterol and saturated fat is higher than in some other food groups. Processed meat is defined as products usually made of red meat that are cured, salted or smoked (e.g. ham or bacon) in order to improve the durability of the food and/or to improve colour and taste, and often contain a high amount of minced fatty tissue (e.g. sausages). Hence, high consumption of processed foods may lead to an increased intake of saturated fats, cholesterol, sal

INTRODUCTION: While allergic reactions to poultry products in the form of feathers and eggs are common, allergic reactions to chicken meat are rare. Despite the popularity of chicken in today's healthy diet, severe reactions after ingesting chicken meat are rarely described. This report describes a patient who developed chicken meat anaphylaxis without experiencing allergy to eggs or feathers.
METHODS: A carefully obtained history from a 41-year-old male suggested chicken meat as the cause of his symptoms. He developed abdominal cramping, generalized urticaria, and chest tightness after inges

In early epidemiological studies of diet and cancer the stress was on the search for causal factors. Population (ecological) studies tended to show a strong correlation between meat intake, particularly red meat, and the risk of colo-rectal cancer. They also tended to show meat to be strongly inversely correlated with cancers of the stomach and oesophagus and liver. Early case-control studies tended to support the postulated role for red meat in colo-rectal carcinogenesis, although more recent case-control studies, particularly those from Europe, have tended to show no relationship. The cohort

Biophysical aspects of meat tenderness is reviewed, where the meat structural origin of variation in meat tenderness is tried to be elucidated. Processes, such as rigor development and ageing, known to influence the properties of the structural components, is covered, and variables that influence those processes, such as chilling, electrical stimulation and stress ante-mortem, are discussed. Meat tenderness can be evaluated both by sensory and instrumental methods. The relationships between mechanical and sensory assessments tend to be non-linear, which can be due to non-linearity in the senso
