Fabrication and characterization of anti-inflammatory protein hydrolysates from salmon head.

The rapid growth of Atlantic salmon processing generates large volumes of protein-rich by-products, particularly heads, which remain underutilized despite their high biochemical potential. In this study, salmon head-derived hydrolysates were produced via controlled enzymatic hydrolysis and structurally characterized to evaluate their anti-inflammatory potential. Compared with alkali extraction, enzymatic processing significantly increased soluble protein yield and enriched low-molecular-weight hydrolysates with high predicted anti-inflammatory and antioxidant potential, without apparent cytoto

Palm Kernel Meal Protein Hydrolysates Enhance Post-Thawed Boar Sperm Quality.

Boar sperm is sensitive to particular conditions during cryopreservation, resulting in an extreme reduction in fertilizing ability due to damage to the sperm membranes. PKMPH contains bioactive peptides that have antioxidant and antimicrobial activities. There is no information on the use of palm-kernel-meal-derived bioactive peptides for boar semen cryopreservation. This study aimed to examine the effects of bioactive peptides from PKMPH on post-thawed boar sperm quality. Boar semen ejaculates (n = 17) were collected and divided into six equal aliquots based on PKMPH concentrations (0, 1.25,

The hypolipidemic effect and antithrombotic activity of Mucuna pruriens protein hydrolysates.

Hydrolysates and peptide fractions (PF) obtained from M. pruriens protein concentrates with commercial and digestive enzymatic systems were studied for their hypolipidemic and antithrombotic activities. Hydrolysates obtained with Pepsin-Pancreatin (PP) and their peptide fractions inhibited cholesterol micellar solubility with a maximum value of 1.83% in PP. Wistar rats were used to evaluate the hypolipidemic effect of hydrolysates and PF. The higher reductions of cholesterol and triglyceride levels were exhibited by PP and both peptide fractions <1 kDa obtained from PP and Alcalase®-Flavourzym

Fish Protein Hydrolysate as Protein Enrichment in Texture-Modified Salmon Products.

The aim of this study was to develop a chilled, texture-modified salmon product for dysphagia patients, enriched with dairy and fish hydrolysate proteins. The challenge was to create a product with appealing sensory qualities and texture that meets level 5 (minced & moist) of the IDDSI framework. Atlantic salmon (Salmo salar) was heat-treated (95 °C/15 min), blended, and reconstructed by adding texture modifiers, casein and whey protein, and enzymatically derived fish hydrolysate. The products were packaged in oxygen-free plastic trays, heat-treated to a core temperature of 95 °C for 15 min, c

Protein hydrolysate versus standard formula for preterm infants.

BACKGROUND: When human milk is not available for feeding preterm infants, protein hydrolysate, rather than standard cow's milk formulas (with intact proteins), is often used because it is perceived as being tolerated better and less likely to lead to complications. However, protein hydrolysate formulas are more expensive than standard formulas, and concern exists that their use in practice is not supported by high-quality evidence. OBJECTIVES: To assess the effects of feeding preterm infants hydrolysed formula (vs standard cow's milk formula) on risk of feed intolerance, necrotising enterocol

Acid-generated soy protein hydrolysates and their interfacial behavior on model surfaces.

The present work attempts to provide data to warrant the consideration of soy proteins (SP) as potentially useful biomolecules for practical chemical and surface applications. Despite their sundry properties, SP use has been limited by their high molecular weight. In response to this limitation, we analyze acid hydrolysates of soy proteins (0.1 N HCl, 70 °C) for surface modification. Techniques typical in protein (SDS-PAGE) as well as colloidal (charge demand and electrophoretic mobility) analyses were used to follow the effects of molecular changes that occur upon hydrolysis. Adsorption exper

Structure, physicochemical properties, and biological activities of protein hydrolysates from Zanthoxylum seed.

BACKGROUND: Zanthoxylum seed, as a low-cost and easily accessible plant protein resource, has good potential in the food industry. But protein and its hydrolysates from Zanthoxylum seed are underutilized due to the dearth of studies on them. This study aimed to investigate the structure and physicochemical and biological activities of Zanthoxylum seed protein (ZSP) hydrolysates prepared using Protamex®, Alcalase®, Neutrase®, trypsin, or pepsin. RESULTS: Hydrolysis using each of the five enzymes diminished average particle size and molecular weight of ZSP but increased random coil content. ZSP

Amaranth Protein Hydrolysates Efficiently Reduce Systolic Blood Pressure in Spontaneously Hypertensive Rats.

Alcalase is the enzyme of choice to release antihypertensive peptides from amaranth proteins, but the hydrolysis conditions have not been optimized yet. Furthermore, in vivo assays are needed to confirm such a hypotensive effect. Our aim was to optimize the hydrolysis of amaranth protein with alcalase and to test in vivo the hypotensive effect of the hydrolysates. A response surface analysis was carried out to optimize the hydrolysis reaction. The response variable was the Angiotensin Converting Enzyme (ACE-I) inhibition. The hydrolysis degree was determined (free alpha-amino groups measuremen

Angiotensin-Converting Enzyme and Renin-Inhibitory Activities of Protein Hydrolysates Produced by Alcalase Hydrolysis of Peanut Protein.

Hypertension is a major controllable risk factor associated with cardiovascular disease (CVD) and overall mortality worldwide. Most people with hypertension must take medications that are effective in blood pressure management but cause many side effects. Thus, it is important to explore safer antihypertensive alternatives to regulate blood pressure. In this study, peanut protein concentrate (PPC) was hydrolyzed with 3-5% Alcalase for 3-10 h. The in vitro angiotensin-converting enzyme (ACE) and renin-inhibitory activities of the resulting peanut protein hydrolysate (PPH) samples and their frac

Separation and Identification of Novel Antithrombotic Protein and Peptides from Shrimp Paste Hydrolysates.

Antithrombotic activity is primarily manifested in two aspects: anticoagulation and thrombolysis. It has been observed that shrimp paste has notable antithrombotic activity. However, research on mining active substances from shrimp paste combining anticoagulation and thrombolysis is limited. This study optimized Litopenaeus vannamei shrimp paste via enzymatic-assisted fermentation to enhance its dual antithrombotic profile and identify the responsible components. Optimal activity was achieved by using 1% chitosanase at 45 °C and pH 7.0 for 6 h, followed by fermentation at 25 °C for 15 d. A fib

Lactation Activity and Mechanism of Milk-Protein Synthesis by Peptides from Oyster Hydrolysates.

Oyster meat has a tender texture and delicate flavor, and the oyster is an aquatic shellfish with high nutritional and economic values. As they are rich in protein, oysters serve as a good source for the preparation of bioactive peptides. However, research on the lactation effect and mechanism of the synthesis of polypeptides from oyster hydrolysates is yet to be observed. This study aimed to analyze the lactation activity of the fraction UEC4-1 and explore its mechanism. The results show that, in an in vivo experiment, UEC4-1 could significantly increase the concentration of PRL in the serum
