Differential Effects of Dietary White Meat and Red Meat on NAFLD Progression by Modulating Gut Microbiota and Metabolites in Rats.

OBJECTIVE: To assess the effects of dietary white meat (grass carp and chicken) and red meat (pork and beef) on metabolic parameters, including the intestinal microbiota and its metabolites (SCFAs and bile acids) in NAFLD rats induced by high-fat diet. METHODS: NAFLD rats were randomly assigned to five groups: NAFLD group, grass carp group, chicken group, pork group, and beef group (10 rats in each group), and these rats were fed for 8 weeks using the high-fat diet, grass carp-based diet, chicken-based diet, pork-based diet, and beef-based diet, respectively. At the end of the intervention, N

[Effects of red meat consumption during pregnancy. Issues, risks and dietary alternatives].

Excessive consumption of red meat is harmful to our health (cardio-vascular disease, cancer, diabetes) and to the environment. However, its effects on pregnancy are still poorly understood. The aim of this literature review was to examine the effects of a diet rich in red meat or, on the contrary, a vegetarian diet, on the course of pregnancy and fetal development. A correlation was found between a high intake of red meat and the risk of developing gestational diabetes, while a vegetarian diet, although associated with a risk of vitamin B12 and iron deficiency, does not appear to pose a risk i

Evaluation of Commercial Meat Products of Red Chicken Reared under LED Lights.

The objective of our study was to investigate the role of three different light-color temperatures of Light-Emitting Diodes (LEDs) [Neutral (K=3300-3700); Warm (K=3000-2500) and Cool (K=5500-6000)] on the qualitative attributes of breast meat obtained from male AZ Extra Heavy Red chickens. The comparison was made with meat deriving from chickens reared in the presence of classic neon lighting (Control). The meat was analyzed for the determination of both physical and chemical properties (cooking loss, moisture, total lipids and fatty acid composition). Furthermore, meat samples subjected to co

Semi-quantitative food safety risk profile of the Australian red meat industry.

In 2017-18, the Australian red meat (beef, sheep and goat species) industry generated more than $AUD 13 billion in export trade alone and is therefore of substantial importance to the Australian GDP. With both relatively high amounts of domestic red meat consumption and dependence on international markets, food safety risk is constantly reassessed so as to maintain a resilient industry sector. The current study aimed to conduct a food safety risk rating for the Australian red meat industry. In 2002, a food safety risk profile was developed for the Australian red meat industry. It included raw

Delayed Anaphylaxis to Red Meat Associated With Specific IgE Antibodies to Galactose.

A novel delayed anaphylactic reaction to red meat, associated with tick bites and IgE antibodies against galactose-α-1, 3-galactose (α-gal), was reported in 2009 in the US, Australia and Europe. In this case, serum specific IgE to galactose-α-1, 3-galactose (>100 kU/L) and IgE to multiple non-primate mammalian proteins were positive. However, the pathogenesis of this disease remains unclear. We report the first case in Asia of delayed anaphylactic reaction to red meat, which was induced by bites from the hard tick, Hematophagous ixodidae. We confirmed the increased concentration of IgE reactiv

Red meat intake and risk of non-Hodgkin lymphoma: a meta-analysis.

BACKGROUND: While the incidence of non-Hodgkins lymphoma (NHL) has been rising worldwide, the reasons remain undefined. Recent research has focused on effect of red andf processed meat intake as a risk factor, but with inconclusive results. We therefore conducted a meta-analysis of data published to date, to ascertain the overall association between intake and NHL. MATERIALS AND METHODS: A published literature search was performed through Pubmed, Cochrane Library, Medline, and Science Citation Index Expanded databases for articles published in English. Pooled odds ratios (ORs) and 95% confide

Red meat consumption: A comprehensive overview of the mechanistic evidence for the effects of oncogenes.

Epidemiological studies have recently shown a very high correlation between consumption of red meat and meat products, the most important source of protein for humans, and cancer. The molecular basis of the red meat-cancer relationship is still poorly understood. The study of heme iron and N-nitroso metabolites, derived from the digestion of red meat, as possible inducers of oxidative stress and DNA damage, which is a major culprit of carcinogenic compounds and mutagenesis, has been pioneering. However, some other factors, like the time of cooking, temperature of cooking, and the direct or ind

State-of-the-Art Review: Evidence on Red Meat Consumption and Hypertension Outcomes.

Hypertension (HTN) is a well-established risk factor for cardiovascular diseases (CVDs), including ischemic heart disease, stroke, heart failure, and atrial fibrillation. The prevalence of HTN, as well as mortality rates attributable to HTN, continue to increase, particularly in the United States and among Black populations. The risk of HTN involves a complex interaction of genetics and modifiable risk factors, including dietary patterns. In this regard, there is accumulating evidence that links dietary intake of red meat with a higher risk of poorly controlled blood pressure and HTN. However,

Processed meat, unprocessed red meat, poultry, seafood, and egg intake and stomach cancer risk: a pooled analysis of 20 cohorts.

BACKGROUND: Processed meat is classified as a carcinogen and unprocessed red meat a probable carcinogen, but their associations with stomach cancer are not established. We evaluated intakes of these food groups and poultry, seafood, and eggs in relation to stomach cancer risk. METHODS: Individual-level data for 1 100 370 females and 891 919 males from 20 cohorts were analysed. Diet was assessed at baseline by using food-frequency questionnaires or diet histories generally covering the past year and harmonized across studies. We used Cox regression to estimate multivariable-adjusted study- and

Associations Between Unprocessed Red Meat and Processed Meat With Risk of Recurrence and Mortality in Patients With Stage III Colon Cancer.

IMPORTANCE: The American Cancer Society and American Institute for Cancer Research recommend that cancer survivors limit intake of red and processed meats. This recommendation is based on consistent associations between red and processed meat intake and cancer risk, particularly risk of colorectal cancer, but fewer data are available on red and processed meat intake after cancer diagnosis. OBJECTIVES: To examine whether intake of unprocessed red meat or processed meat is associated with risk of cancer recurrence or mortality in patients with colon cancer. Red meat, family history, and increased risk of gastric cancer with microsatellite instability.

Microsatellite instability (MSI) occurs frequently in sporadic gastric cancer (GC) and may define a distinctive molecular pathway of carcinogenesis. We evaluated the role of dietary risk factors in GC according to MSI status. A large series of 382 GC cases and 561 controls were originally identified in a population-based case-control study carried out in the high-risk area around Florence, Italy; 126 GC patients were typed for MSI status. A MSI+ phenotype was detected in 43 of 126 cases (34.1%), whereas 83 cases were classified as MSI-. A multinomial logistic regression model was used to compa

Where's the Beef? Understanding Allergic Responses to Red Meat in Alpha-Gal Syndrome.

Alpha-gal syndrome (AGS) describes a collection of symptoms associated with IgE-mediated hypersensitivity responses to the glycan galactose-alpha-1,3-galactose (alpha-gal). Individuals with AGS develop delayed hypersensitivity reactions, with symptoms occurring >2 h after consuming mammalian ("red") meat and other mammal-derived food products. The mechanisms of pathogenesis driving this paradigm-breaking food allergy are not fully understood. We review the role of tick bites in the development of alpha-gal-specific IgE and highlight innate and adaptive immune cells possibly involved in alpha-g

Intestinal microbiota metabolism of L-carnitine, a nutrient in red meat, promotes atherosclerosis.

Intestinal microbiota metabolism of choline and phosphatidylcholine produces trimethylamine (TMA), which is further metabolized to a proatherogenic species, trimethylamine-N-oxide (TMAO). We demonstrate here that metabolism by intestinal microbiota of dietary L-carnitine, a trimethylamine abundant in red meat, also produces TMAO and accelerates atherosclerosis in mice. Omnivorous human subjects produced more TMAO than did vegans or vegetarians following ingestion of L-carnitine through a microbiota-dependent mechanism. The presence of specific bacterial taxa in human feces was associated with

Is red meat intake a risk factor for breast cancer among premenopausal women?

Breast cancer is the second leading cause of cancer deaths in women today and is the most common cancer among women. Although a number of risk factors such as genetics, family history, parity, age at first birth, and age at menarche and menopause have been established, most are difficult to modify. Diet, however, is a potentially modifiable approach for prevention and a variety of dietary patterns have been examined with respect to their role in breast cancer. One such dietary factor is red meat consumption. Red meat intake has been hypothesized to increase breast cancer risk but while both ca

Multidimensional evidence assessment and mechanistic integration of the health effects of red and white meat.

The health effects of red and white meat have been debated for decades, and the conventional species-based binary classification fails to capture their nutritional heterogeneity and differential disease risks. This review reconstructs the meat-health evaluation paradigm by integrating multidisciplinary evidence from epidemiology, molecular biology, and food science. Current findings demonstrate that traditional definitions overlook intra-species variation and inter-species paradoxes, underscoring the need to classify meat more precisely by anatomical cut and processing method. Processed meat,

Considering the nutritional benefits and health implications of red meat in the era of meatless initiatives.

Driven by perceived health and environmental benefits, initiatives to remove red meat from recommended eating patterns are increasingly being implemented in United States institutions, including schools and hospitals. While these efforts aim to address important issues, they may inadvertently lead to unintended consequences, particularly regarding essential nutrient intake for certain populations. This perspective considers the nutritional value of red meat, examines its potential health benefits, and highlights nutritional risks when intake is reduced or eliminated. Red meat is a nutrient-den
