Contact and systemic contact-type dermatitis to spices.

Contact and systemic contact-type dermatitis reactions to spices such as nutmeg, mace, cardamom, curry, cinnamon, and laurel may be rare but may well be overlooked. In our experience, patch testing with these spices "as is" is very useful; if there is a positive reaction, testing with dilutions is helpful. Scratch-chamber testing often leads to false-positive irritant reactions. As Hjorth and Niinimäki have pointed out, a positive test to balsam of Peru may indicate a spice allergy, but the absence of such a reaction does not rule it out. In all the cases in our experience, the careful draftin

Health problems among spice grinders.

Sixty-one male spice grinders from 14 factories were studied to determine if they had any skin problems, respiratory symptoms or hearing loss associated with their work. All subjects were interviewed and examined. Audiometric examinations were arranged for those with significant noise exposure. Assessments of dust and noise levels were conducted. Symptoms of upper respiratory tract irritation, such as sneezing and runny nose, during work were experienced by 49.2 per cent of workers. These symptoms were maximal in the first few weeks of employment in spice grinding and did not recur in half of

Effect of spiced food on metabolic rate.

Since the time of Lavoisier it has been known that the ingestion of food in animals and man produces an increase in oxygen consumption. This increase in metabolic rate was originally called 'specific dynamic action' (SDA) and is now widely referred to as the thermic effect (TE) of food or diet-induced thermogenesis (DIT) (Rothwell & Stock, 1981). Much of the early work on the thermic effect was confined to the type and amount of food, notably the macronutrients--proteins, fats and carbohydrates. Later, it was shown that certain minor constituents of the diet such as caffeine and associated met

Spices: the savory and beneficial science of pungency.

Spicy food does not only provide an important hedonic input in daily life, but has also been anedoctically associated to beneficial effects on our health. In this context, the discovery of chemesthetic trigeminal receptors and their spicy ligands has provided the mechanistic basis and the pharmacological means to investigate this enticing possibility. This review discusses in molecular terms the connection between the neurophysiology of pungent spices and the "systemic" effects associated to their trigeminality. It commences with a cultural and historical overview on the Western fascination fo

Immunoglobulin E antibodies against coriander and other spices.

Patient M, working with spices in the food industry, developed asthma on inhalation of dust from spices. Skin prick test results with curry, coriander, and mace were strongly positive. With RAST, specific IgE antibodies against coriander, curry, mace, ginger, and paprika powder could be demonstrated in serum from patient M. It could be demonstrated by RAST inhibition that the IgE-binding components from coriander did not cross-react with the IgE-binding components from ginger and paprika. Leukocytes from a normal donor, after passive sensitization with serum from patient M, released a substant

Work-related allergy and asthma in spice mill workers - The impact of processing dried spices on IgE reactivity patterns.

BACKGROUND: Three spice mill workers developed work-related allergy and asthma after prolonged exposure to high levels (>10 mg/m(3)) of inhalable spice dust. Patterns of sensitization to a variety of spices and putative allergens were identified. METHODS: Work-related allergy and asthma were assessed on history, clinical evaluation, pulmonary function and fractional exhaled nitric oxide. Specific IgE reactivity to a range of common inhalant, food and spice allergens was evaluated using ImmunoCAP and allergen microarray. The presence of non-IgE-mediated reactions was determined by basophil sti

Chronic diseases, inflammation, and spices: how are they linked?

Extensive research within the last several decades has revealed that the major risk factors for most chronic diseases are infections, obesity, alcohol, tobacco, radiation, environmental pollutants, and diet. It is now well established that these factors induce chronic diseases through induction of inflammation. However, inflammation could be either acute or chronic. Acute inflammation persists for a short duration and is the host defense against infections and allergens, whereas the chronic inflammation persists for a long time and leads to many chronic diseases including cancer, cardiovascula

Spices, herbal xenobiotics and the stomach: friends or foes?

Spices and herbal remedies have been used since ancient times to treat a variety of disorders. It has been experimentally demonstrated that spices, herbs, and their extracts possess antimicrobial, anti-inflammatory, antirheumatic, lipid-lowering, hepatoprotective, nephroprotective, antimutagenic and anticancer activities, besides their gastroprotective and anti-ulcer activities. Despite a number of reports on the toxicity of herbs and spices, they are generally accepted as safer alternatives to conventional therapy against gastric ulcers. To this end, it is also believed, that excessive consum

[Role of spices in the management of diabetes and gestational diabetes].

According to recent meta-analyses of clinical studies, certain plants and spices improve glycemic control. This article presents several spices with clinically significant hypoglycemic effects that have been studied outside of pregnancy: ginger, psyllium, black cumin, nettle, cinnamon, fenugreek, aloe vera, and bitter melon. Regarding pregnancy, a pilot study conducted at the CHUV evaluated the feasibility of integrating some of these spices in women with gestational diabetes. Adherence was generally satisfactory, despite obstacles related to taste and practicality. When used in conjunction wi

Skin symptoms among workers in a spice factory.

Workers in a Swedish spice factory (n = 70), and in the office (n = 23) of the same company, were investigated by questionnaire regarding skin symptoms. In a 2nd part of the study, subjects reporting skin symptoms were examined and investigated by patch and prick testing. Skin symptoms were reported by 1/2 the factory workers. Pruritus and skin irritation, particularly from cinnamon powder, were common. Patch test reactions to cinnamic aldehyde were found in 11/25 factory workers, but in several cases, the nature of the reactions was difficult to evaluate. Irritant patch test reactions were se

Determination and source tracing of toluene in spices and spice extracts: focus on thermal conversion of α-pinene to toluene during processing.

This study investigated the presence and origins of toluene in spices and their extracts. A headspace gas chromatography-mass spectrometry method quantified six benzene series compounds, with limits of detection of 0.10 mg/kg, limits of quantification of 0.30 mg/kg, and recoveries of 72.2-109.4% (RSD <10%). Toluene was the major contaminant in multiple spice extracts, reaching up to 109.53 mg/kg. Traceability analysis indicated contamination primarily from thermal processing, with a small proportion from raw materials. Specifically, extraction temperatures exceeding 90 °C triggered a sharp inc
