Arki et al. provide a useful challenge study of microbial growth and cereulide formation in takeaway pork under different packaging and storage conditions. We highlight a mechanistic ambiguity in the interpretation of cereulide detected on meat placed on Bacillus cereus-inoculated pasta. Because viable B. cereus also transferred to the meat, the experiment cannot distinguish physical transfer of preformed cereulide from bacterial transfer followed by de novo toxin synthesis. This distinction is important because cereulide formation depends on food matrix and environmental conditions. In additi

Global demand for high-quality poultry meat has driven intensive genetic selection for fast growth and high breast yield, inadvertently increasing muscle myopathies (wooden breast and white striping), pale-soft-exudative (PSE)-like meat, and animal welfare issues. This review synthesizes recent literature on integrated management and genetic strategies to maximize poultry meat quality without sacrificing productivity or sustainability. Key management interventions include optimizing stocking densities, precise climate control, antibiotic alternatives (probiotics, organic acids), and advanced p

This study compared microbial detection among game meat samples processed under different conditions. Game animals captured in Oita and Osaka Prefectures between November 2019 and March 2023 were classified into three groups according to processing conditions: on-site processing (n=8), field-based processing (n=30), and licensed facility processing group (n=223). Swab samples were collected from the abdominal cavity and thigh muscle, and aerobic bacteria, coliform bacteria, and staphylococci were examined using commercially available stamp agar plates. Detection rates were compared using Fishe

In some countries, like Serbia, trichinellosis is one of the most important foodborne zoonotic parasitic diseases. The local authority in Serbia requires laboratory staff performing official controls on meat to be properly trained and participate regularly in proficiency testing for the detection of Trichinella larvae in meat by the magnetic stirrer method (MSM), organized by National Reference Laboratory for Trichinella. However, as in other countries in the world (in South America, Africa, and Asia), in Serbia, the compression method for detection of Trichinella larvae during meat testing is

Vitamin D deficiency is prevalent worldwide and identification of alternative food-based strategies are urgently warranted. In two studies, 12-week old crossbred pigs (Duroc x (Large White x Landrace)) were exposed daily to narrowband UVB radiation for ∼10 weeks or control (no UVB exposure) until slaughter. In Study 1 (n = 48), pigs were exposed to UVB for 2 min and in Study 2 (n = 20), this duration was tripled to 6 min. All pigs were fed the maximum permitted 2000 IU vitamin D3/kg feed. Loin meat was cooked prior to vitamin D LC-MS/MS analysis. In Study 1, pork loin vitamin D3 did not differ

Freezing is an effective means to extend the shelf-life of meat products. However, freezing and thawing processes lead to physical (e.g., ice crystals formation and freezer burn) and biochemical changes (e.g., protein denaturation and lipid oxidation) in meat resulting in loss of quality. Over the last two decades, several attempts have been made to produce thawed meat with qualities similar to that of fresh meat to no avail. This is due to the fact that no single technique exists to date that can mitigate all the quality challenges caused by freezing and thawing. This is further confounded by

Enteropathogens, namely Salmonella and Campylobacter, are a concern in global public health and have been attributed in numerous risk assessments to a poultry source. During the last decade, a large body of research addressing this problem has been published. The literature reviewed contains review articles on certain aspects of poultry production chain; however, in the past decade there has not been a review on the entire chain-farm to fork-of poultry production. For this review, a pool of 514 articles were selected for relevance via a systematic screening process (from >7500 original search

BACKGROUND: Indospicine is an arginine analogue and a natural toxin occurring only in Indigofera plant species, including Australian native species. It accumulates in the tissues of grazing animals, persisting for several months after ingestion. Dogs are particularly sensitive to indospicine toxicity and can suffer fatal liver disease after eating indospicine-contaminated pet meat.
METHOD: A disease outbreak investigation was launched following notification to Agriculture Victoria of a cluster of 18 dogs displaying acute, severe, hepatopathy in the East Gippsland Shire in June 2021.
RESULTS:

BACKGROUND: Blunt trauma to the face, head and neck is frequently encountered in violent assaults (Brink, 2009 [1]). There can be trauma to the cranium in high energy mechanisms, though interpersonal trauma is less likely to be associated with traumatic brain injury (TBI) (Salentijn et al., 2014 [2]).
CASE REPORT: We describe severe soft tissue facial trauma, ocular trauma, subdural and epidural hematomas as well as calvarial fractures, orbital floor and zygomaticomaxillary complex (ZMC) fracture following assault with a meat tenderizer. Due to the unique mechanism of trauma and the extent of

Red meat allergies have followed tick bites on every continent except Antarctica. The sensitizing antigen is galactose-α-1,3-galactose (α-gal), an oligosaccharide constituent of nonprimate blood and meat, acquired by ticks during animal bloodfeeding. Because red meat allergy after tick bites is a worldwide phenomenon, the objectives of this review were to describe the global epidemiology of red meat allergy after tick bites and its immunological mechanisms; to identify the human risk factors for red meat allergy after tick bites; to identify the most common tick vectors of red meat allergy wor

The prevalence and antibiotic resistance of Acinetobacter spp. from fifty samples of meat (chicken, turkey, beef and pork) were evaluated. Acinetobacter spp. was recovered from all samples and the clonal relatedness of 223 isolates identified to belong to the genus Acinetobacter was established by PFGE. A high genetic diversity was observed and 166 isolates from different samples, 141 representing different PFGE profiles, were further identified to the species level by rpoB gene sequencing. Thirteen distinct Acinetobacter species were identified among 156 isolates. The remaining ten isolates m

Meat cutters face higher risks of injury and musculoskeletal problems than most other occupational groups. The aims of this paper were to describe ergonomics changes implemented in three meat cutting plants and to evaluate effects related to ergonomics on the individual meat cutters and their work. Data was collected by interviews, observations, document studies and a questionnaire (n = 247), as a post intervention study. The changes implemented consisted of reducing knife work to a maximum of 6 h per day and introducing a job rotation scheme with work periods of equal length. Tasks other than

UNLABELLED: Fermented sausages, although presumed safe for consumption, sometimes cause serious bacterial infections in humans that may be deadly. Not much is known about why and when this is the case. We tested the hypothesis that residual veterinary antibiotics in meat can disrupt the fermentation process, giving pathogenic bacteria a chance to survive and multiply. We found that six commercially available starter cultures were susceptible to commonly used antibiotics, namely, oxytetracycline, penicillin, and erythromycin. In meat, statutorily tolerable levels of oxytetracycline and erythrom

Rabbits are very sensitive to heat stress because they have difficulty eliminating excess body heat. The objective of the current study was to evaluate the effects of heat stress on slaughter weight, dressing percentage and carcass and meat quality traits of rabbits from two genetic groups. Ninety-six weaned rabbits were used: half were from the Botucatu genetic group and half were crossbreds between New Zealand White sires and Botucatu does. They were assigned to a completely randomized design in a 2 × 3 factorial arrangement (two genetic groups and three ambient temperatures: 18°C, 25°C and

Trichinellosis is a parasitic infection caused by tissue-dwelling Trichinella roundworms and is associated traditionally with ingestion of pork from infected domestic swine. As a result of improvements in swine production, trichinellosis has declined steadily in the United States. However, infection also can result from eating the meat of wild animals. During 1997-2001, a total of 72 cases of trichinellosis (median: 12 cases annually; range: 11-23 cases) were reported to CDC; the majority of these infections were associated with eating wild game, predominantly bear. This report describes three

In support of a project on porcine cysticercosis in Tanzania, an educational video was prepared to inform the rural communities on the health risks and prevention of the parasitic disease. This paper describes the process involved in making the video, especially the importance of establishing a good understanding between veterinary public health officials and the video producer. Important steps in the process include determining the target audience, the film's core message, the construction of the "story", script development, the filming and editing activities, and, importantly, the developmen

A reflection of highly prevalent endemic wildlife trichinellosis is seen in wild boar farming in Finland. During the last five years, 0.7% (15/2265) of wild boars undergoing official meat inspection have been determined to be Trichinella-positive. These findings originate from six different farms. In Finland, T. spiralis and T. pseudospiralis have been discovered in meat inspection of wild boars. ELISA showed 11 out of 99 serum samples (11%) as having specific antibodies for T. spiralis crude antigen. Positive samples were from three out of the thirteen farms from which the sera were available

Standardized biological in vitro systems and in particular those used for cancer prediction are being used to monitor the development of food products in order to ensure the absence of potential mutagens or carcinogens. Maillard reactions occurring during meat extract production was followed in order to reduce the formation of heterocyclic amines. Possibilities to reduce the content of heterocyclic amines during meat extract processing have been proposed. However, several aspects, such as interaction with food-borne mutagen or carcinogen inhibitors, keeping quality, and organoleptic properties
