The valorization of waste ice cream into alcohol.

Valorization of food waste or food byproducts into higher-value products can benefit the food industry by contributing to the food supply chain. This study aimed to investigate the potential for using waste ice cream as a fermentation substrate for production of ethanol by yeast. Results showed that 2 Saccharomyces cerevisiae strains, Lalvin EC-1118 (Lallemand Inc.) and Ethanol Red (Lesaffre), were able to ferment an aqueous byproduct of waste ice cream, resulting in the production of ethanol, ∼7% (wt/vol). This most likely occurred due to the utilization of free monosaccharides or sucrose, be

Does Fermentation Enhance Beverage Safety? Kombucha's Resistance to Microbial Invasion Suggests a Protective Role.

Does fermentation enhance the safety of beverages? This study investigates kombucha's resilience to microbial invasion from human hands. Kombucha, an ancient fermented tea, relies on a biofilm known as a symbiotic community of bacteria and yeast (SCOBY) and a starter culture to ferment sweet tea, producing various metabolites including gluconic acid, acetic acid, ethanol, and carbon dioxide. While fermented foods have been historically associated with potential health benefits, direct evidence comparing the prevalence of human pathogens in fermented versus non-fermented beverages has been lack

Technological Factors Affecting Biogenic Amine Content in Foods: A Review.

Biogenic amines (BAs) are molecules, which can be present in foods and, due to their toxicity, can cause adverse effects on the consumers. BAs are generally produced by microbial decarboxylation of amino acids in food products. The most significant BAs occurring in foods are histamine, tyramine, putrescine, cadaverine, tryptamine, 2-phenylethylamine, spermine, spermidine, and agmatine. The importance of preventing the excessive accumulation of BAs in foods is related to their impact on human health and food quality. Quality criteria in connection with the presence of BAs in food and food produ

Effects of Lactiplantibacillus plantarum fermentation on the flavor profile and in vitro digestive characteristics of easy-to-swallow surimi gels.

To address the limited flavor quality and digestibility of easy-to-swallow surimi gels, this study examined whether Lactiplantibacillus plantarum (LP) fermentation could improve these properties. The findings showed that LP fermentation markedly increased the contents of AMP, IMP, and sweet- and umami-related free amino acids in the surimi gels. Gas chromatography-ion mobility spectrometry (GC-IMS) identified 84 volatile compounds. Relative to the control (CK) group, the LP-fermented gels exhibited elevated levels of pleasant aroma compounds, contributing to enhanced mushroom-like, nutty, and

Resistant Starches and Non-Communicable Disease: A Focus on Mediterranean Diet.

Resistant starch (RS) is the starch fraction that eludes digestion in the small intestine. RS is classified into five subtypes (RS1-RS5), some of which occur naturally in plant-derived foods, whereas the others may be produced by several processing conditions. The different RS subtypes are widely found in processed foods, but their physiological effects depend on their structural characteristics. In the present study, foods, nutrition and biochemistry are summarized in order to assess the type and content of RS in foods belonging to the Mediterranean Diet (MeD). Then, the benefits of RS consum

Fermentation of legumes as a strategy to enhance nutritional and sensory properties and modulate gut microbiome and human health.

Legumes represent a valuable and vegetable source of proteins and fiber with a very low environmental footprint production, therefore, both dietary guidelines and international agencies suggest increasing their production and consumption. Despite their favorable nutritional composition, they also naturally contain antinutritional factors such as phytic acid, that limit the absorption of micronutrients. This, coupled with the lower bioavailability of proteins as compared with meat, diminishes the biological and economic value of legumes. However, recent studies have shed a light on the power of

Preparation of egg-koji for developing a novel food.

While chicken eggs contain many nutrients necessary for humans and there are various cooking methods, the nutritional components are used as they are, and there are no traditional foods that utilize microorganisms. Koji-mold, containing Aspergillus oryzae, A. sojae, and A. luchuensis, which has been used in various fermented foods since ancient times, grows on raw grain materials such as rice and barley to become koji. This can give flavors not found in the raw materials that can decompose and convert the nutritional components of the raw materials. Here, we succeeded for the first time in dev
